These beans are tasty yet very simple to put together. I got this recipe from my Guatemalan boyfriend's aunt. Hope you enjoy.

1 lb dried black beans
6 -8 cups water (or enough to cover beans)
1 large onion
5 garlic cloves, whole
4 tablespoons chicken consomme (or bullion)
2 teaspoons salt

Steps:

  • Soak beans over night.
  • When ready place all ingredients in either a slow cooker, pressure cooker or stock pot on the stove and let simmer all day on low. Usually around 6 hours.
  • Serve with sour cream, sweet plantains, tortillas or fresh bread.

1 lb black beans
6 -8 garlic cloves
2 medium onions, chopped
salt

Steps:

  • In large kettle, cover beans with 2" water.
  • Add garlic.
  • Bring water to boil.
  • Turn fire down to soft boil and cover.
  • Cook 1 hour.
  • When beans are soft, add onions and salt and simmer 1/2 hour - 1 hour more.

REAL frijoles......beans.......frijoles en olla, or pot beans. No self respecting Hispanic, Mexican, or Indian home out here is without a pot of beans....all the time.

3 cups dried pinto beans
1 large onion, diced
2 cloves garlic, minced
1/2 teaspoon cumin or 1/2 teaspoon comino
1 piece bacon or 1 piece ham
1 teaspoon sugar
water

Steps:

  • The night before, put the beans in the pot you will use, and fill the pot to the top with water.
  • In the morning, drain the water.
  • Add fresh water, to a height of 4# over the beans.
  • Add the pork, onion, garlic, and seasonings.
  • Simmer on low on the stove all day, or in a crockpot.
  • You may need to add water.
  • The beans are done when they are soft if you smoosh one between you finger and thumb.
  • It won't hurt them to cook longer, because even if they get mooshy they have their uses!
  • If you should burn the beans, immediately drain them and switch to a new pot with new water.
  • Add one raw potato, cut in half, to the beans.
  • When the beans are done toss the potato, because the burnt taste will be in it.

Authentic and delicious. I learned this one from being married into a Hispanic family. Moms, Aunts, and Grandmothers had a few little twists upon it, but heres how it goes.

Number Of Ingredients 14

6 -8 cups water
1 lb pinto beans, soaked overnight
1 1/2 large white onions, chopped
4 garlic cloves, chopped
5 -8 slices bacon, chopped
1 tablespoon cumin
1 teaspoon oregano
1 teaspoon dried cilantro
3/4 teaspoon black pepper
1 lime, juice of
1/2 teaspoon dried poblano pepper (optional)
1 tablespoon bacon grease
1 tablespoon salt
1/2 cup cheese (mexican blend)

Steps:

  • Add beans to water and bring to a boil, then partially cover and bring to a simmer.
  • Chop the Onion, Garlic, and Bacon and add into the pot. Add the rest of the ingredients except Salt, Bacon grease and Cheese.
  • Simmer for 2 hours adding water if necessary to keep beans covered.
  • After the 2 hours add the Salt and Bacon grease. Correct seasoning with more cumin, oregano, and cilantro (don't add more salt yet). Simmer 30 more minutes.
  • Taste again and correct seasoning, this time you can add more salt, if desired.
  • Drain beans reserving 1 cup of cooking liquid. Put beans back into pot and mash with a potato masher or 'boat motor', adding the cooking liquid until you have desired consistency. Mix in the cheese and serve immediately.Garnish with more cheese and fresh cilantro if desired.

Drunk Beans" Frijoles Borrachos"- So my aunt gave me this "oh so easy" recipe. I made it this past July for my birthday and it was such a hit. You can use with beer or without beer. I made the recipe both ways and it came out GREAT!!!

4 la preferida pinto beans (don't drain juice)
8 hot dogs (cut in circles)
2 whole tomatoes (diced)
cilantro (Half bunch, cut leaf part only)
onion (half, diced)
6 jalapenos (Cut, seeded and diced)
bacon (optional, cut in to 1/2-inch or 1' strips)
1 beer, i made both recipes with and without beer and both came out great (optional also)

Steps:

  • First cut and dice everything.
  • Cut bacon and cook in a pan on medium heat for about 20 minutes, stirring a few times.
  • Fry hotdogs in oil on low heat
  • Throw tomatoes in hot dogs and simmer for about 10-15 minutes.
  • In a large pot empty cans of beans and put on medium-high heat.
  • Add the Onion, Cilantro, jalapenos, hotdogs, bacon, add your beer or not.
  • Let cook for about 20 minutes stirring the pot every couple of minutes.
  • Serve in bowls.
  • ENJOY!
