GRILLED TUNA WITH GARLIC FRIES

2 tablespoons unsalted butter, melted
2 cloves garlic, minced
Kosher salt
1 pound frozen shoestring French fries (about 6 cups)
1 cup fresh parsley
1/2 cup fresh oregano
1/4 cup extra-virgin olive oil, plus more for brushing
2 tablespoons white wine vinegar
Pinch of red pepper flakes
4 plum tomatoes, cored and halved lengthwise
Freshly ground pepper
4 1-inch-thick tuna steaks (6 ounces each)

Steps:

  • Put a baking sheet in the middle of the oven; preheat to 450 degrees F. Preheat a grill to high. Mix the melted butter with half of the garlic and 1/4 teaspoon salt in a large bowl; set aside. Spread the fries in a single layer on the hot baking sheet and bake until crisp and golden, about 25 minutes.
  • Meanwhile, puree the remaining garlic, the parsley, oregano, olive oil, vinegar, 3/4 teaspoon salt, the red pepper flakes and 2 tablespoons water in a blender or food processor to make a sauce; set aside.
  • Brush the cut sides of the tomatoes with olive oil; season with salt and pepper. Brush the tuna steaks all over with about 2 tablespoons of the herb sauce; season with salt and pepper. Oil the grill grates. Grill the tuna until marked, 2 to 4 minutes per side for medium. Grill the tomatoes cut-side down until marked, about 3 minutes.
  • Add the fries to the bowl with the garlic butter and toss. Season the tomatoes with salt and pepper. Serve the tuna with the tomatoes and fries; drizzle the remaining herb sauce over the tuna and tomatoes.

1 tablespoon olive oil
2 garlic cloves, minced
2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
4 tuna steaks (6 ounces each)
1/4 teaspoon salt

Steps:

  • In a large resealable plastic bag, combine the lemon juice, oil, garlic and thyme. Add the tuna; seal bag and turn to coat. Steps:

  • To grill the tuna, get a charcoal or stove-top cast-iron grill very hot. Brush the fish with olive oil, and sprinkle with salt and pepper. Grill each side for only 2 to 2 1/2 minutes. The center should be raw, like sushi, or the tuna will be tough and dry. Allow to rest for 5 to 10 minutes and serve.

Steps:

  • In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper. Place the tuna steaks in the marinade and turn to coat. Cover, and refrigerate for at least 30 minutes.
  • Preheat grill for high heat.

1/3 cup olive oil
1 teaspoon salt
2 teaspoons cayenne pepper
1/3 cup lemon juice
3 large cloves garlic, minced
3 large shallots, minced
2 teaspoons ground cumin
1 bunch cilantro, leaves only, finely chopped
6 (6 ounce) pieces of tuna fillet
Vegetable oil, for greasing the grill
Lemon wedges, for garnish

Steps:

  • In a small mixing bowl, combine the olive oil, salt, cayenne pepper, lemon juice, garlic, shallots, cumin, and about 3/4 of the cilantro (reserve the remaining cilantro for garnish).
  • Place the tuna fillet in a large glass or ceramic dish. Rub your fingers over the fish to check for and remove any remaining bones, and pour the marinade over the tuna. Make sure the fish are evenly coated on both sides and marinate for 1 hour in the refrigerator, turning once.
  • Brush a grill or broiler pan with vegetable oil and heat it to high heat. Grill the fillets for 4 to 5 minutes on each side, until done to your liking. Garnish with the remaining cilantro and the lemon wedges.

2 medium garlic cloves
1 1-pound tuna steak, rinsed and patted dry
Olive oil spray
1 medium lemon, cut into 4 wedges (optional)

Steps:

  • Preheat the grill on medium high.
  • Cut each garlic clove lengthwise into 5 or 6 slices.
  • Put the fish on a flat surface. With the tip of a sharp knife, make one short, 1/4-inch-deep cut in the fish for each slice of garlic. With your thumb, insert a garlic slice into each cut.
  • Lightly spray both sides of the fish with olive oil spray. Place on the grill. Don't pat or move the fish until it's ready to turn, 3 minutes for medium rare to 10 minutes for well done. Turn over. Cook for about 2 minutes for medium rare to about 5 minutes for well done. Serve with the lemon wedges.

  • Vary the flavor of this dish by sprinkling a fresh herb, such as rosemary or dillweed, or some coarsely ground pepper over the tuna before grilling it.

3 tablespoons brown sugar
3 tablespoons olive oil
2 tablespoons white wine vinegar
2 tablespoons sherry

4 tuna steaks (6 ounces each)

Steps:

  • In a small bowl, combine the first eight ingredients. Remove 1/3 cup to a small bowl for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add tuna. 3 tomatoes, peeled, seeded and chopped (1 1/2 lbs)
1/2 cup extra virgin olive oil
3 tablespoons lemon juice
3 garlic cloves, minced
3/4 teaspoon salt
1/2 cup mixed fresh herbs, finely chopped (chervil, chives, tarragon and parsley)
2 (1 lb) tuna steaks, cut 1/14-inch thick

Steps:

  • In a medium bowl, stir together the tomatoes, olive oil, lemon juice, garlic and salt. Set aside for about 2 hours to allow the flavors to blend.
  • Light a grill or preheat the broiler. Stir the fresh herbs into the tomato sauce.
  • Grill or broil the tuna about 4" from the heat, turning once, until charred outside and still pink in the center, 3 to 4 minutes per side.

2 Tbs. olive oil
2 garlic cloves, minced
1 medium onion, sliced
2 tbs. capers
1/4 cup pitted and coarsely chopped black olives
1 (14-oz. can) whole plum tomatoes with their juice, crushed by hand
2 Tbs. chopped fresh parsley
salt and pepper to taste

Steps:

  • Preheat grill. Brush both sides of each tuna steak with 2 teaspoons olive oil and season with salt and pepper. Place on the hot grill and cook for 2 minutes per side for rare. Saute onions and garlic in 2 tablespoon olive oil until soft and fragrant. Add tomatoes, olives, parsley and capers and simmer until tomato juice evaporates. Season to taste. Spoon sauce over tuna steaks.
