Simple boysenberry crisp. Use either fresh or frozen boysenberries.

6 cups boysenberries
1 cup all-purpose flour
1 egg
1 teaspoon baking powder
¾ teaspoon salt
⅓ cup butter, melted
½ cup white sugar, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread boysenberries in a 7x11-inch baking pan.
  • Mix flour, egg, baking powder, and salt together with a fork to make a crumble. Scatter over berries. Pour melted butter over crumble. Sprinkle sugar on top.
  • Bake crisp until top is browned, 40 to 50 minutes.

My grandparents had what seemed like a mile of boysenberries vines, and I never minded the scratches from picking them 'cause they were so good. One of my favorite memories is the summer my granddaddy wrote Girls'nBerries on each jar we canned. This isn't my grandmother's special recipe I learned as a child, but it's nice since it uses canned berries...fresh boysenberries are so hard to come by anymore. Adapted from a recipe I saw on Mom's Cooking. By the way, I have halved the recipe in a smaller pan and it worked out fine.

1 cup flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
1 cup milk
1/2 cup butter
2 (15 ounce) cans boysenberries

Steps:

  • Preheat oven to 425 degrees.
  • Whisk together dry ingredients, then add milk and whisk until there are no lumps.
  • Melt butter in a large cast iron skillet over medium high heat. Pour batter into pan but don't stir it.
  • Add all the juice from the 2 cans of boysenberries and 1 1/2 cans of the berries. Don't stir, but do move the berries slightly out from the center with a spoon.
  • Cook for 40 minutes or until done.
  • Use remaining berries as a garnish.

Filling:
6 cups blueberries
1/2 cup granulated sugar
3 tablespoons all-purpose flour
2 tablespoons fresh lemon juice
Pinch kosher salt
Topping:
3/4 cup packed light brown sugar
3/4 cup all-purpose flour
1/2 cup old-fashioned rolled oats
1/2 cup almonds or hazelnuts, chopped
1/2 teaspoon grated lemon zest
1/4 teaspoon ground cinnamon
1/2 teaspoon kosher salt
6 tablespoons cold unsalted butter, cut into 2-inch pieces

Steps:

  • Preheat the oven to 375 degrees F and butter a 2-quart baking dish.
  • Make the filling: Toss the blueberries, granulated sugar, flour, lemon juice and salt in a medium bowl. Transfer to the prepared baking dish.
  • Make the topping: Combine the brown sugar, flour, oats, nuts, lemon zest, cinnamon and salt in a separate bowl. Using your fingers or a pastry blender, work the butter into the flour mixture until coarse crumbs form. Scatter the topping over the blueberry mixture.
  • Set the dish on a baking sheet and bake until the topping is golden brown and the filling is bubbling, 45 to 50 minutes. Let cool slightly before serving.

2 tablespoons sugar
1 teaspoon cornstarch
1-1/2 teaspoons water
1/2 teaspoon lemon juice
1/2 cup quick-cooking oats
1/4 cup all-purpose flour
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 cup cold butter
Vanilla ice cream

Steps:

  • Place blackberries in a greased 1-qt. baking dish. In a small bowl, combine the sugar, cornstarch, water and lemon juice until smooth. Pour over berries. Combine the oats, flour, brown sugar and cinnamon; cut in butter until crumbly. Sprinkle over berries., Bake, uncovered, at 375° until filling is bubbly, 20-25 minutes. Serve warm with ice cream.

1 large egg
2 large egg yolks
1 tablespoon cornstarch
2 teaspoons fresh lemon juice
1 1/2-pint basket fresh boysenberries or 1 1/3 cup frozen unsweetened boysenberries, thawed
1/2 cup sugar
1/4 cup (1/2 stick) unsalted butter
Crust
1 1/4 cups unbleached all purpose flour
1/4 cup sugar
Pinch of salt
7 tablespoons cold unsalted butter, cut into small pieces
1 teaspoon grated lemon peel (yellow part only)
3 tablespoons fresh lemon juice
1 1-pint basket strawberries, stemmed, halved
1 1/2-pint basket fresh raspberries
1 1/2-pint basket fresh boysenberries or blackberries
1 large peach, cut into 1/2-inch-wide slices
5 tablespoons currant jelly

Steps:

  • For filling:
  • Beat egg and yolks in small bowl to blend. Dissolve cornstarch in lemon juice in small bowl. Mix into eggs. Puree berries and sugar in blender. Strain puree through a fine sieve into medium saucepan. Add butter and bring to simmer over medium-high heat. Slowly whisk hot berry mixture into egg mixture. Return mixture to same saucepan and cook until filling is very thick and boils, whisking constantly, about 3 minutes. Transfer filling to small bowl. Press plastic wrap directly onto surface to prevent skin from forming; refrigerate at least 6 hours. (Can be prepared 1 day ahead.)
  • For crust:
  • Blend flour, sugar and salt in processor. Add butter and lemon peel and process using on/off turns until coarse meal forms. Add lemon juice and process until moist clumps form. Gather into ball; flatten into disk. Wrap dough in plastic and refrigerate 45 minutes. (Can be prepared 1 day ahead. Let soften slightly at room temperature before continuing.)
  • Position rack in center of oven and preheat to 350°F. Roll dough out on lightly floured surface to 1/8-inch-thick round. Fold dough over rolling pin and transfer to 9x1-inch tart pan with removable bottom. Gently press dough into pan. Trim and finish edges. Chill 15 minutes. Line dough with foil and fill with dry beans or pie weights. Bake 15 minutes. Remove beans and foil and bake until crust is golden, about 20 minutes longer. Transfer crust to rack and cool.
  • Spread filling evenly in crust. Arrange strawberries, cut side down, in irregular pattern on filling. Fill in with raspberries and boysenberries. Tuck peach slices between berries. Stir currant jelly in heavy small saucepan over low heat until melted. Brush jelly over fruit to glaze. (Can be prepared 3 hours ahead. Refrigerate.)

3/4 cup craig's boysenberry jam
1 cup flour
1/2 cup brown sugar
1 cup rolled oats
1 -2 teaspoon ground cinnamon or 1 -2 teaspoon cardamom
70 g slivered almonds (optional)
150 g butter, melted
3 tablespoons craig's boysenberry jam
1 cup tararua natural unsweetened plain yogurt

Steps:

  • Mix Sliced Apple and Craig's Boysenberry Jam together and turn into a deep ovenproof dish.
  • In a bowl, combine flour, brown sugar, rolled oats, ground cinnamon and almonds, stir in the melted butter until well combined.
  • Spoon over boysenberry apple mixture.
  • Cook at 180°C for 35-40 minutes or until crisp and golden.
  • Swirl Craig's Boysenberry Jam into Tararua Natural Unsweetened Yoghurt.
  • Serve warm with boysenberry yoghurt.

2 cups blackberries
2 cups raspberries
1/4 cup sugar

1/4 teaspoon cinnamon
Crisp topping:
1 cup rolled oats
1/2 cup all-purpose flour
1/2 cup brown sugar
1/2 cup sugar
Pinch of salt
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
Whipped cream or vanilla ice cream, for serving

Steps:

  • 1. Preheat the oven to 350°F. Butter a 9-inch Pyrex pie plate.
  • 2. Gently combine the berries with the sugar, flour and cinnamon; place in the prepared pie plate.
  • 3. Prepare the topping: Combine the oats, flour, both sugars and salt in a bowl. Use a pastry blender or 2 knives to work in the butter until topping resembles coarse meal. Sprinkle evenly over the berries.
  • 4. Place the pie plate on a baking sheet. Bake in the center of the oven until the fruit is bubbling and the topping is golden brown, about 1 hour. Remove the crisp to a rack to cool slightly. Serve in dessert bowls with whipped cream or ice cream.
