GARLIC MASHED POTATOES

Garlic Mashed Potatoes image

This mash owes its luxurious texture to the natural creaminess of Yukon gold potatoes and a touch of olive oil. At first glance 4 cloves of garlic may seem like a lot, but the garlic mellows as it steams with the potatoes so when they are mashed together you get just the right garlic infusion.

Provided by Ellie Krieger

Categories     side-dish

Time 25m

Yield 4 servings, serving size: 3/4 cup

Number Of Ingredients 6

1 1/4 pounds Yukon gold potatoes, unpeeled and cut into 1-inch pieces

Number Of Ingredients 6

3 heads garlic, split in 1/2
3 tablespoon olive oil
2 pounds potatoes, peeled and diced
1 stick butter, cubed
1/2 to 3/4 cup heavy cream
Salt and white pepper

Remove from the oven and cool. Squeeze or remove the garlic cloves from the head and place in a small bowl. Using a fork, mash the garlic until smooth. Place the potatoes in a pot of salted water and bring to a boil. Reduce the heat to a simmer and cook the potatoes until fork tender, about 12 to 15 minutes.
  • Remove the pan from the heat and drain. Place the potatoes back in the pot and return to the heat. Stir the potatoes, constantly, for 2 to 3 minutes to dehydrate the potatoes. Remove the potatoes from the heat. Add the garlic and butter. Using a hand-held masher, mash the butter and garlic into the potatoes. Add enough cream until desired texture is achieved. The potatoes should still be sort of lumpy. Season the potatoes with salt and pepper.

BASIL, GARLIC PLUS MASHED POTATOES

Basil, Garlic Plus Mashed Potatoes image

These potatoes have wonderful flavor from the added ingredients that they are cooked and mashed with. A bonus for any dinner. For a low fat version substitute lowfat sour cream instead of the cottage cheese & Buttermilk. I use 2 cubes of frozen fresh basil.instead of fresh chopped. I had some left over potatoes so I mixed some bread crumbs and Parmesan cheese, made pattie from the potato, coated the patties with the cheese crumbs, fried with light spray of Olive oil MMMM very good
