COLORFUL BROCCOLI SALAD
If you like broccoli and bacon, this is something you have to try. My family loves this recipe. They make it whenever there are going to be guests. It tastes great and happens to be rather colorful.

Steps:
- Whisk mayonnaise, sugar, and vinegar together in a bowl.
- Place bacon in a large skillet; cook and stir over medium-high heat until evenly browned, about 10 minutes. Drain bacon on paper towels.
- Mix broccoli, bacon, onion, and Cheddar cheese in a large bowl. Pour dressing over broccoli mixture; toss to coat.

BROCCOLI-CHEDDAR CASSEROLE
This takes minutes to throw together and everything is mixed in one bowl, sharp cheddar cheese is recommended to use for this, you may also sprinkle grated cheddar on top the last few minutes of baking --- to serve a crowd double the recipe and bake in a 13 x 9-inch baking dish, I also add in some Tabasco sauce.

Steps:
- Set oven to 350 degrees F (set oven rack to second-lowest position).
- Butter a 9 x 9 or a 11 x 7-inch baking dish.
- In a medium bowl combine undiluted soup with mayonnaise, sour cream, beaten egg, garlic powder, chopped onion, seasoned salt and black pepper; whisk until well combined.
- Mix in the grated cheese and chopped broccoli.
- Spread into baking dish.
- Sprinkle the parmesan cheese on top.
- Bake uncovered for about 45 minutes or until hot and bubbly.

BROCCOLI CHEDDAR CASSEROLE
Steps:
- Thaw the frozen broccoli, then chop it into smaller pieces. Add the chopped broccoli to a large bowl along with the cooked rice and about 1.5 cups of the shredded cheese (save the last ½ cup for topping the casserole).
- Begin to preheat the oven to 350ºF. Finely dice the onion and mince the garlic.
- Add the butter, onion, and garlic to a small saucepot and cook over medium heat until the onions are soft and translucent (2-3 minutes). Add the flour and stir until a paste forms. Continue to stir and cook the paste for about two minutes, or just until it turns a light golden brown.
- Whisk the milk into the butter and flour mixture. Continue to whisk the mixture as it heats, allowing it to reach a simmer, at which point it will thicken to the consistency of heavy cream. Remove the sauce from the heat.
- Season the sauce with the salt, smoked paprika, cayenne, and pepper. Taste the sauce and add more seasoning if desired. The sauce should be heavily seasoned because it will be spread out over the broccoli and rice, which contain no seasoning of their own.
- Pour the sauce over the rice, broccoli, and cheese, and stir until everything is evenly coated in sauce. Spread the casserole mixture evenly into a 9x9 inch casserole dish. Top with the remaining shredded cheddar.
- Bake the casserole for about 35 minutes, or until the cheese on top is melted and is slightly browned around the edges. Divide into six portions and serve.

- In large skillet, melt butter over medium heat.
- Saute broccoli and onion for 5 minutes, or until crisp tender.
- In a bowl, add eggs, cream, and 1 3/4 cups of the cheddar cheese, and mix well.
- Add broccoli, salt, and pepper to the egg mixture.
- Pour into a greased 3 quart casserole dish; set casserole inside of a larger dish, and pour 1 inch of water into the larger dish to make a water bath.
- Bake at 350 degrees for 45 to 50 minutes or until a knife inserted in the center comes out clean.
- Sprinkle with remaining cheese, and allow casserole to sit for 10 minutes before serving.

- In a large skillet, heat oil over medium-high heat. Add green onions; cook and stir until tender. Add broccoli, red pepper and garlic; cook and stir 4-5 minutes or until tender. Transfer to a large bowl; season with pepper., Place English muffins in a greased 13x9-in. baking dish, cut sides up. Top muffins with vegetable mixture and sprinkle with 1 cup shredded cheese., In a large bowl, whisk eggs, milk, mustard and, if desired, hot sauce. Pour over top. Refrigerate, covered, overnight., Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, covered, 30 minutes. Sprinkle with remaining cheese. Bake, uncovered, 20-30 minutes longer or until egg mixture is set. Let stand 5 minutes before cutting.
