Steps:
- Add the shrimp, zucchini, red onion, red bell pepper, and lemon to a medium sized bowl.
- Prepare the shrimp marinade and add to the bowl of shrimp and veggies. Let marinate 30 minutes or over night.
- Thread skewers with the shrimp and veggies.
- Preheat grill to medium high heat. Thread the shrimp on the skewers. Place on the grill. Grill on each side for about two minutes or until no longer pink.

- In a large bowl, whisk the first seven ingredients until blended. Reserve 1/4 cup marinade for basting. Add shrimp to remaining marinade; toss to coat. Refrigerate, covered, 30 minutes., On each of 10 metal or soaked wooden appetizer skewers, alternately thread one shrimp, one pineapple chunk and an onion chunk. - In a large saucepan, combine the first 10 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes., Drain pineapple, reserving 2 tablespoons juice (save remaining juice for another use); set pineapple aside. Stir reserved juice into sauce. Pour half into a small bowl for basting; cover and refrigerate. Pour remaining sauce into a large resealable plastic bag; add shrimp. Seal bag and turn to coat; refrigerate for 2-3 hours., Drain and discard marinade. Alternately thread the shrimp, pineapple, green pepper and onion on eight metal or soaked wooden skewers., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill kabobs, covered, over medium heat or broil 4 in. from the heat for 5 minutes on each side or until shrimp turn pink, basting occasionally with reserved sauce. Serve with rice.

GARLIC SHRIMP KABOBS
Steps:
- Rinse and dry shrimp.
- Whisk olive oil, garlic, lemon juice, pepper, and parsley together in a bowl and pour into a large resealable plastic bag. Add shrimp, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 hours.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Lightly coat metal skewers with cooking spray.
- Remove shrimp from the marinade and shake off excess. Discard the remaining marinade. Place about 5 shrimp on each skewer.
- Cook on the preheated grill until shrimp are bright pink on the outside and the meat is opaque, about 5 minutes; do not overcook.

GRILLED SHRIMP SKEWERS
Steps:
- Put the olive oil, garlic and chile flakes in a small skillet. Turn the heat to low and let the mixture heat for about 10 minutes; the oil should just barely simmer around the garlic in the last few minutes. Remove from the heat and cool slightly. Transfer to a blender, add the 1 tablespoon oregano and some salt and pepper, and blend until the garlic and oregano are finely chopped. Set aside half of the chile-garlic oil for serving.
- Heat the grill to high. Thread the shrimp onto skewers, about 4 or 5 shrimp per skewer, threading so that the skewers goes through the tail and thick end of each shrimp. Brush the shrimp with some of the chile-garlic oil and season with salt and pepper. Grill until lightly golden brown on both sides and opaque, 1 to 1 1/2 minutes per side. Transfer the skewers to a platter and immediately drizzle with some of the reserved chile-garlic oil (not the oil you used for brushing the raw shrimp). Garnish with oregano, and serve with more of the reserved oil.
GRILLED SEAFOOD KABOBS
Steps:
- Mix lemon juice, olive oil, mustard, Italian seasoning, hot sauce, salt, and pepper together in a large bowl. Add swordfish, shrimp, and scallops and toss.
- Preheat an outdoor grill for low heat and lightly oil the grate.
- Drain skewers and thread swordfish, shrimp, scallops, bell pepper, onion, squash, mushroom, and pepperoncini in an alternating fashion onto the skewers. Place a lemon piece on the end of each skewer. Brush skewers with any remaining oil mixture.
- Cook skewers on the grill, turning every 5 minutes, until seafood is cooked through, 15 to 20 minutes total.

Steps:
- Cut up the onion and peppers in large chunks approximately 1 inch squares or a little larger.
- Cut the bacon slices into thirds and slightly cook the bacon until it is softened but not crispy.
- (this could be done in the microwave) Wrap the shrimp in the bacon slices and assemble the Kabobs on the metal skewers starting with bacon wrapped shrimp, a chunk of red pepper, onion, mushroom cap, and green pepper then another bacon wrapped shrimp.
- fill the skewer.
- Place the Skewers on a preheated grill with slightly greased foil.
- As you are cooking the skewers, baste with the BBQ sauce on each side for approximately 7 to 10 minutes (depending on the temperature of your grill.) Enjoy!

Steps:
- Place skewers in water and let them soak at least 20 minutes or until you are ready to use them.
- Rinse and dry shrimp.
- Put both oils in resealable plastic bag; add shrimp and toss to coat them with oil.
- Add bread crumbs, garlic, parsley, basil, salt and pepper.
- Toss shrimp to give them a coating of dry mixture.
- (You're wondering how the breading is going to stay adhered to the shrimp, right? Fear not- that's what the next step accomplishes).
- Seal bag and refrigerate for 1 hour.
- (Do not skip this step).
- Thread shrimp on wet skewers.
- Grill on HOT grill for 2 minutes per side or until golden.

- Mix all ingredients except shrimp in shallow glass dish; stir in shrimp. Cover and refrigerate for about 1 hour. Remove shrimp from marinade and reserve it.
- Thread 4 shrimp on each of six metal skewers. (*If using bamboo skewers, remember to soak them in hot water for about 30 minutes, so won't burn.)
- Grill over medium coals, turning once, until pink for about 2 to 3 mts. on each side. Do not overcooked.
- Heat reserved marinade to boiling in a non-aluminium saucepan; reduce heat to low. Simmer uncovered until bell pepper is tender, about 5 minutes. Serve with shrimp.
- NOTE: to broil the kabobs in the oven: set oven control to boil.

GRILLED SHRIMP KABOBS
These are very easy to make and great as an appetizer or served with salad or a rice dish for a backyard BBQ! I like to add Essence or Creole Seasoning and Poblano or Jalapeno Pepper to the skewers to give them a little extra Zing!

- You can use tomato, onion or other vegetables also.
- Mix the marinade in a ziploc bag, add shrimp, shake to coat.
- Place in refrigerator for 1 hour.
- Soak the skewers in salt water to soften so they will not burn.
- Cut up the vegetables into large enough pieces to place on skewers.
- Remove shrimp from bag.
- Place left over marinade into a bowl for brushing on kabobs as they grill.
- Alternate adding vegetables and shrimp to skewers.
- Place kabobs on cooking sheet.
- Sprinkle with Essence or a dash of cayenne pepper or creole spices to add zing.
- Place Kabobs on the grill away from fire (we use mesquite to add smokie flavor).
- Brush Shrimp and Vegies with leftover Marinade as they cook.
- Cook until vegies are tender, approximately 3-5 minutes per side.
- Serve immediately!
- Great with salad or rice dishes.
