Tasty Chocolate Stuffed Strawberries make a special treat to give or a wonderfully elegant appetizer or dessert.

12 large strawberries
1/3 cup heavy whipping cream
3.5 ounce dark chocolate (I used Ghirardelli's Intense Dark 60% Cacao)

Steps:

  • Chop chocolate into small pieces and place in a bowl.
  • In a saucepan, heat the heavy cream until it just starts to simmer. Remove from heat, pour over the chocolate chips and let sit for a few minutes.
  • Slowly stir the cream and chocolate together until it's completely blended and glossy.
  • Place in the fridge, stirring every 5 minutes or so, until the ganache has thickened and cooled completely.
  • While the chocolate is cooling, cut the very tip off so that the strawberries will stand up. Then, hull the strawberries.
  • Add the chocolate to a piping bag or ziptop bag and pipe into the hulled strawberries. You can also use a teaspoon to dip and fill if you don't want to use a bag.
  • Store in the refrigerator if not serving immediately. You can store in the refrigerator up to 12 hours before serving.

  • Fill strawberry with melted chocolate.
  • Place strawberry top back on. Chill for 5 minutes.
  • Dip the strawberries in white chocolate.
  • Add sprinkles immediately.
  • Enjoy!

1 pint fresh strawberries
1 (8 ounce) package cream cheese, softened
½ cup confectioners' sugar, or to taste
2 tablespoons orange flavored liqueur, or to taste

Steps:

  • Cut the tops off of the strawberries and stand upright on the cut side. Make a cut 3/4 of the way down from the tip of the strawberry towards the bottom.
  • Beat together the cream cheese, sugar, and liqueur until smooth in a mixer or a food processor. Place into a piping bag with a star tip. Pipe into each strawberry and arrange on a serving platter.

15-20 strawberries (the larger the better)
1 bag of Milk Chocolate chips (I use the 11.5 oz Guittard milk chocolate chips)

Steps:

  • Directions 1. Cut the stems off your clean strawberries and carefully scoop out the top of the berry. The deeper you scoop the more chocolate it will hold. I used large strawberries so I scooped about an inch down. 2. Pour the entire bag of chocolate chips in a glass bowl and heat in the microwave for 30 second intervals. Make sure to take your bowl out every 30 seconds to stir the chips. Continue until all chips are melted. 3. Place your strawberries in an egg carton so they sit straight up. You could also use little Dixie cups. Now you can either spoon your melted chocolate into the berries or use a funnel or piping bag. I used a little baby spoon and it worked fine. Your choice. 4. Place in the refrigerator for about 10 minutes until they harden a bit. Enjoy! Note: As someone noted there is a small chance that salmonella could be found in an empty egg carton so if this concerns you it is safer to use an ice cube tray or mini muffin tin to hold the berries while the chocolate hardens. 2 tablespoons low-fat ricotta cheese
1 (1/16 ounce) packet artificial sweetener (like Splenda or Truvia)
1 drop vanilla extract
1 1/2 teaspoons semisweet mini chocolate chips

Steps:

  • Slice the stem ends off the strawberries, about 1/2 inch, revealing an opening in each berry. Use a narrow spoon to remove about half of the flesh inside each berry allowing room for filling.
  • In a small bowl mix ricotta, sweetener and vanilla extract until uniform.
  • Spoon ricotta mixture into a bottom corner of a plastic bag; snip off the tip of that corner to create a small hole and squeeze mixture into the strawberries. Top with chocolate chips and enjoy!

I used frozen strawberries(thawed and sliced), as it wasn't strawberry season and mini semi-sweet chocolate chips and it was wonderful!!! Could make it even lighter by using low or no-fat cream cheese, light bread and egg substitute.

3 eggs
1 1/4 cups nonfat milk
1/2 teaspoon vanilla extract
1/4 cup cream cheese, softened (or part-skim ricotta cheese)
8 slices sandwich bread, crusts removed
1 (8 ounce) container strawberries, hulled and sliced
4 teaspoons chocolate chips
cooking spray
2 teaspoons confectioners' sugar

Steps:

  • In a large bowl, whisk together the eggs, milk and vanilla. Set aside.
  • Place 1 tablespoon of cream cheese in the center of 4 of the pieces of bread and spread around slightly. Top with about 6 slices of strawberries and a teaspoon of chocolate chips. Cover each with another piece of bread to make a "sandwich".
  • Spray a large nonstick skillet or griddle with cooking spray and preheat. Carefully dip each of the "sandwiches" into the egg mixture until completely moistened. Then place on the skillet and cook over a medium heat for 3 to 4 minutes per side, until the outside is golden brown and the center is warm and chocolate is melted.
  • Transfer to serving places. Top with remaining strawberries and sprinkle with confectioners' sugar.
