SMOKED TUNA DIP

1 5-ounce can albacore tuna, drained well
1 8-ounce package of cream cheese, softened
1 1/2 teaspoons liquid smoke
1 teaspoon Worcestershire sauce
scant 1/2 teaspoon garlic powder
scant 1/2 teaspoon kosher salt
dash or two of pepper sauce (like Tabasco)
paprika or smoked paprika for optional garnish

Steps:

  • Blend all ingredients together using a stand mixer or hand mixer.
  • Taste, and adjust seasonings to your liking. Be careful adding more liquid smoke, a little goes a long way!
  • Serve immediately or refrigerate until ready to serve.
  • When ready to serve, try adding a light sprinkling of paprika over the top for decoration. Serve with crackers or pita chips.

1-2 Tablespoons cream or fat-free half & half
1 Tablespoon onion (grated)
1 Tablespoon jalapeno (minced)
2 teaspoons horseradish
1 teaspoon minced garlic
1/2 teaspoon Old Bay seasoning
1 cup gruyere cheese (shredded)
7-8 oz canned tuna fish
Squeeze of lemon
Garnish: Smoked paprika, jalapeno slices, parsley, lemon slices

Steps:

  • Preheat oven to 350 degrees. Spray a small baking dish with nonstick spray.
  • In a medium bowl, mix the cream cheese and cream until smooth.
  • Add all spices, onions, jalapeno and cheese and stir well.
  • Squeeze a little lemon on the tuna then fold into mixture.
  • Spoon into prepared baking dish.
  • Bake for 15-20 minutes or until bubbling hot.

Sometimes I just don't care about overpowering the natural flavors, and this grilled yellowfin tuna with freshly grated horseradish sauce recipe is one of those times.

2 (8 ounce) fresh tuna steaks
1 teaspoon vegetable oil
2 tablespoons soy sauce
2 tablespoons seasoned rice vinegar
1 tablespoon finely grated raw horseradish root, or more to taste
4 cherry tomatoes, sliced
½ teaspoon hot chile paste (such as sambal oelek)
1 tablespoon minced green onion

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil the grate. Lightly oil steaks with vegetable oil.
  • Stir soy sauce, rice vinegar, horseradish, cherry tomatoes, and hot chile paste in a bowl until well combined. Let sit for 20 minutes.

2 scallions, finely chopped
2 tablespoons finely chopped fresh parsley
2 teaspoons apple cider vinegar

1 tablespoon whole-grain mustard
1 tablespoon prepared horseradish
4 large slices rye bread, lightly toasted
8 thin slices Havarti cheese
2 tomatoes, cut into 8 slices
Dill pickles, for serving (optional)

Steps:

  • Position a rack in the upper third of the oven and preheat to 475 degrees F. Combine 4 tablespoons mayonnaise, the tuna, celery, scallions, parsley and vinegar in a large bowl and mix well. Season with salt and pepper.
  • Combine the remaining 2 tablespoons mayonnaise with the mustard and horseradish in a small bowl; spread on the bread slices and arrange on a baking sheet. Mound the tuna mixture on top and pat it into an even layer. Top each with 1 cheese slice, tearing it as needed to cover the tuna mixture.
  • Season the tomato slices with salt; place 2 slices on top of each sandwich, then top each with another cheese slice. Bake until the cheese melts, 5 to 7 minutes. Serve with dill pickles if using.

A wonderful change from regular tuna salad sandwich. This is the only way we do it in our house! Note: I didn't notice until March 2010 (took me 8 years) that the ingredient horseradish had somehow defaulted to horseradish sauce. There are many great reviews here from people who used horseradish sauce, so don't be afraid to try it. I have corrected the recipe as it really does call for prepared horseradish, which is much hotter.
