Here's what you need: sweet potatoes, olive oil, garlic, fresh thyme, pepper, salt, raw cashews, low sodium vegetable broth, garlic, unsweetened coconut milk, nutritional yeast, lemon juice, ground nutmeg, cayenne, kosher salt, oil

3 sweet potatoes, scrubbed
3 tablespoons olive oil
3 cloves garlic, minced
3 sprigs fresh thyme
1 ½ teaspoons pepper
1 ½ teaspoons salt
1 ½ cups raw cashews
1 ¾ cups low sodium vegetable broth, plus more for soaking cashews
3 cloves garlic
½ cup unsweetened coconut milk
⅓ cup nutritional yeast
1 tablespoon lemon juice
½ teaspoon ground nutmeg
½ teaspoon cayenne
1 teaspoon kosher salt
oil, for greasing

Steps:

  • Add the cashews to a medium bowl with enough vegetable broth to cover. Soak for at least 2 hours, or overnight. Drain and rinse.
  • Preheat the oven to 400˚F (200˚C).
  • Using a mandolin or a sharp knife, thinly slice the sweet potatoes into rounds.
  • Add the sweet potatoes to a large bowl and toss with the olive oil, garlic, thyme leaves, pepper, and salt.
  • Add the drained cashews to a blender or food processor, along with the garlic, coconut milk, nutritional yeast, lemon juice, vegetable broth, nutmeg, cayenne, and salt. Blend until smooth and creamy.
  • Grease a large cast-iron skillet or other ovenproof dish with oil.
  • Pour ⅓ of the cashew sauce into the skillet and tilt to evenly coat the bottom. Layer half of the sweet potato rounds over the sauce, overlapping slightly to completely cover the bottom of the pan. Repeat with another ⅓ of the sauce, the rest of the potatoes, and the rest of the sauce.
  • Bake for 1 hour, or until golden brown on top and the sweet potatoes are tender.
  • Let cool for 15 minutes before slicing and serving.

6 large potatoes, peeled and cubed
1 ¼ cups vegetable broth, divided
2 tablespoons all-purpose flour
1 teaspoon seasoning salt
½ teaspoon ground black pepper
¼ teaspoon dry mustard
⅛ teaspoon nutmeg
2 cups soy milk
1 ½ cups shredded Cheddar-flavored soy cheese, divided
1 cup soft bread crumbs
3 teaspoons paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and place in a 9 x 13 inch baking dish.
  • Meanwhile, in a small saucepan over high heat, boil 2 tablespoons of broth. Reduce heat to low. Stir in flour, seasoning salt, pepper, mustard and nutmeg. Gradually add soy milk, stirring constantly until thickened. Stir in half of the soy cheese. Stir constantly until cheese is melted. Pour over potatoes.
  • In a small bowl combine the remaining broth and the bread crumbs. Spoon evenly over potatoes. Top with remaining soy cheese. Sprinkle with paprika.
  • Bake in preheated oven for 20 minutes.

2 large uncooked sweet potatoes, peeled and sliced 1/4 in thick
1 egg
2 cups whipping cream
salt and pepper
1/8 teaspoon nutmeg
1/4 cup grated parmesan cheese

Steps:

  • Set oven to 375 degrees.
  • Butter a 8-in square baking dish.
  • Place potatoes in greased baking dish.
  • In a bowl, beat egg; add cream, salt, nutmeg and pepper; mix well.
  • Pour over potatoes, making sure all potatoes are covered with sauce.
  • Sprinkle with cheese.
  • Bake, uncovered for 40-45 mins, or until potatoes are tender.

3 lbs sweet potatoes, peeled and sliced thin with a mandoline (about 12 sweet potatoes, depending on size)
1 tablespoon chopped fresh parsley leaves
2 tablespoons butter, cut into chunks, plus more
butter, for baking dish (or use cooking spray for baking dish)
1/4 cup panko breadcrumbs
1/4 cup grated cheddar cheese

Steps:

  • In a large saucepan combine milk, cream, nutmeg, cinnamon, salt, and pepper. Gently fold in sweet potatoes. Bring to a simmer and allow sauce to thicken.Preheat oven to 350 degrees F.
  • Butter a 3-quart baking dish. Combine the bread crumbs, butter and Cheddar to make the gratin topping. Transfer the potato mixture to the baking dish and sprinkle with the gratin topping. Bake until the potatoes are cooked through, about 35 to 45 minutes.
