Grilled Pork Shoulder Recipe image

Tender, golden and juicy, this simple grilled pork shoulder recipe makes a quick and tasty weeknight meal idea the whole family will love.

Provided by Jane and Sonja

Categories     Main Course

Number Of Ingredients 4

Pork Shoulder Roast (boneless)
Salt and Pepper (or Grill Mates Pork Rub)
Italian seasoning
Vegetable Oil

Steps:

  • Cut pork shoulder roast into 1" thick steaks.
  • Season with salt and pepper and Italian seasoning spice on all sides. If using Grill Mates Pork Rub instead, there is no need to season with salt and pepper.
  • Mariante the seasoned pork for 1 hour at room temperature.
  • Use an aluminum foil tray for grilling on the barbeque. This will ensure the meat stays juicy and tender. Sprinkle tray with vegetable oil. Place the aluminum tray on the BBQ at medium-low temperature to heat up.
  • Place seasoned pork shoulder roast steaks on to the tray when hot.
  • Grill the pork shoulder strips, flipping over several times until tender.

GRILLED PORK SHOULDER WITH BUTTER VINEGAR SAUCE

Grilled Pork Shoulder With Butter Vinegar Sauce image

Cooking lower and slower means a big hunk of meat will cook through to ideal internal temperature without getting blackened on the outside

Provided by Carla Lalli Music

Categories     Bon Appétit     Dinner     Meat     Pork     Grill     Grill/Barbecue     Oregano     Vinegar     Butter     Chile Pepper     Summer     Wheat/Gluten-Free     Peanut Free     Soy Free     Tree Nut Free

Yield 4-6 servings

Number Of Ingredients 10

1 Tbsp. fennel seeds
2 Tbsp. dried oregano
2-2½-lb. boneless pork shoulder (Boston butt)
Grapeseed or other neutral oil (for pork)
1 Tbsp. kosher salt, plus more
3 chiles de árbol, torn in half, seeds removed if desired
½ cup apple cider vinegar
½ cup (1 stick) unsalted butter
2 Tbsp. sugar
Special Equipment: A spice mill or mortar and pestle

Steps:

  • Toast fennel seeds in a dry small skillet over medium heat, tossing often, until golden brown and starting to pop, about 3 minutes. Transfer to a spice mill or mortar and pestle and let cool; coarsely grind. Transfer to a small bowl and mix in oregano. Place pork on a wire rack set inside a rimmed baking sheet and rub with oil. Season all over with 1 Tbsp. salt, then rub with spice mixture, packing it on. Let sit at room temperature 2 hours or chill, uncovered, up to 2 days.
  • Bring chiles, vinegar, butter, and sugar to a simmer in a small saucepan over medium-high heat; cook, stirring occasionally, until sugar is dissolved and sauce is reduced by about a third, about 5 minutes. Season with salt; cover and keep warm over low heat until ready to use.
  • Prepare a grill for medium heat. Drizzle pork all over with oil, then grill, turning every 5 minutes or so, until extremely, gorgeously browned and crisp and an instant-read thermometer inserted into thickest part registers 120°F, 35-45 minutes. Continue to grill, brushing with sauce and turning not quite every minute (you're going to see flare-ups, but don't worry), until pork is glazed and shiny and temperature on thermometer has risen to 130°F, 5-10 minutes more. Transfer pork to a platter and let rest 30 minutes; reserve remaining sauce.
  • Transfer pork to a cutting board and pour any accumulated juices on platter into reserved sauce. Return sauce to a simmer. Slice pork against the grain ¼" thick. Arrange on platter, spoon some sauce over, and season with salt. Serve remaining sauce alongside.
  • Cooks' Note
  • If using a charcoal grill, a bed of medium-hot coals will gradually lose heat. Get a chimney started when the meat first hits the grill. About halfway through, throw some new glowing coals on the pile to keep things going.

PELLET GRILL SMOKED PORK SHOULDER AL PASTOR

Pellet Grill Smoked Pork Shoulder al Pastor image

We love an authentic spit-fired al pastor recipe but sometimes you want the payoff without all the work. Using our favorite pellet grill, we created this easy take that's just as flavorful and possibly even more juicy from the low and slow cooking time. If you like your pastor extra crispy, crank up the grill at the end and throw some of the slices on before cutting them into strips.

Categories     main-dish

Time 8h40m

Yield 12 to 15 servings

Number Of Ingredients 15

2 dried ancho chiles, stemmed and seeded
2 dried chiles de arbol, stemmed and seeded
1 pineapple, peeled
2 tablespoons canola oil
8 cloves garlic, finely chopped
1 red onion, finely diced
1/2 cup distilled white vinegar
1/3 cup plus 1 tablespoon Kosher Salt (see Cook's Note)
1/4 cup packed dark brown sugar
2 tablespoons achiote paste (see Cook's Note)
One 6- to 7-pound boneless pork shoulder (or pork butt)
1/2 cup lightly packed fresh cilantro leaves, chopped
Juice of 1 lime
1/2 fresh habanero chile, finely diced (seeds removed for less heat)
Warm tortillas, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the dried chiles on a baking sheet. Bake until slightly puffed, about 5 minutes. Meanwhile, cut the pineapple lengthwise into four pieces, then remove the core from each piece. Cut one quarter into chunks and set the rest aside.
  • Heat the oil in a medium saucepan over medium heat until shimmering. Add the garlic and half the onion and cook, stirring often, until the onion is soft and translucent, about 10 minutes. Stir in the dried chiles, pineapple chunks, vinegar, salt, brown sugar, achiote paste and 1 cup water and bring to a boil. Reduce the heat and let simmer until the chiles have softened, about 10 minutes. Let cool for 10 minutes before transferring to a blender, filling only halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth. Reserve 1 cup for later and let the rest cool completely.
  • Put the pork in a large enough container to hold it comfortably and coat completely with the chile-pineapple marinade. Cover with plastic wrap and refrigerate at least 24 hours and up to 48 hours. Remove from the refrigerator 1 hour before you are ready to cook it.
  • Light a pellet grill according to manufacturer's directions and set to 250 degrees F. Once lit, cover and let preheat for 15 minutes.
  • Put the pork directly on the grill grate and cook until the internal temperature reaches 160 degrees F on an instant-read thermometer, about 5 hours. Remove the pork from the grill and wrap it tightly in several sheets of aluminum foil so that it is completely sealed. Increase the temperature of the grill to 275 degrees F and return the pork to the grill, putting it on a rimmed baking sheet to catch any juices that escape. Put the reserved pineapple directly on the grill grates and cook until pineapple is golden and caramelized, about 1 hour 30 minutes; remove from grill. Continue to cook the pork until the internal temperature reaches 195 degrees F on an instant-read thermometer, about 3 hours more. Remove from the grill and allow to rest 20 to 30 minutes.
  • Meanwhile, once the pineapple has cooled, dice it and add it along with any juices to a medium bowl. Stir in the remaining onion along with the cilantro, lime juice and habanero chile. Season to taste with salt. Slice the pork 1/2 inch thick and cut each slice into 1/2-inch-thick strips. Serve with the salsa, reserved marinade and warm tortillas.

STICKY-SWEET GRILLED PORK SHOULDER WITH HOISIN AND MOLASSES

Sticky-Sweet Grilled Pork Shoulder with Hoisin and Molasses image

Inspired by the classic Cantonese barbecued pork dish known as char siu and gloriously shellacked with a molasses glaze, the pork in this recipe should be fridge-cold when you roast it, so take it straight from the refrigerator to the grill. Time and temperature matter for this recipe, which is why a Big Green Egg is such an awesome cooking tool. But we also give you instructions on how to make this with an oven + conventional grill if you don't own a BGE.

Yield 8 servings

Number Of Ingredients 16

Pork:
2 heads of garlic, cloves separated, peeled
1 (wide, 6") piece ginger, peeled, chopped
1 cup hoisin sauce
3/4 cup fish sauce
2/3 cup honey
2/3 cup Shaoxing (Chinese rice) wine
1/2 cup chili oil
1/3 cup oyster sauce
1/3 cup toasted sesame oil
1 (4-5-lb.) skinless boneless pork shoulder (Boston butt)
Kosher salt
Glaze and assembly:
3/4 cup (packed) dark brown sugar
1 Tbsp. mild-flavored (light)molasses
Bread-and-butter pickles, white bread, cilantro, and rinsed thinly sliced white onion (for serving)

Steps:

  • Pork:
  • Purée garlic, ginger, hoisin sauce, fish sauce, honey, wine, chili oil, oyster sauce, and sesame oil in a blender until very smooth. Place 1 1/2 cups in a small bowl for glaze; cover and chill until ready to use. Pour remaining marinade into a 2-gal. resealable plastic bag.
  • Place pork shoulder, fat side down, on a cutting board with a short end facing you. Holding a long sharp knife about 1"-1 1/2" above cutting board, make a shallow cut along the entire length of a long side of shoulder. Continue cutting deeper into meat, lifting and unfurling with your free hand, until it lies flat (it's better to end up with 2-3 even pieces than 1 uneven piece). Add to bag with marinade and seal, pressing out air. Work pork around inside bag to coat with marinade. Chill at least 8 hours and up to 1 day.
  • Prepare a Big Green Egg for medium heat (with cover closed, thermometer should register 350°F). Remove pork from marinade, letting excess drip off. Lightly season all over with salt. Fit grill with convection plate and set pork on top. (If you don't have a convection plate, bank coals on one side and set pork over cooler area to avoid flare-ups.) Cover and roast pork until an instant-read thermometer inserted into the thickest part registers 140°F-145°F. (You can also do initial cooking in a 350°F oven.) Transfer to a cutting board and let rest at least 20 minutes.
  • Glaze and assembly:
  • Bring brown sugar, molasses, and reserved marinade to a simmer in a large saucepan; cook until reduced by one-third, 6-8 minutes (you should have about 1 1/3 cups). Keep warm.
  • Prepare a Big Green Egg for medium-high heat (or use a conventional grill). Grill pork, basting and turning with 2 pairs of tongs every minute or so, until thickly coated with glaze, lightly charred in spots, and warmed through (an instant-read thermometer inserted into the thickest part should register 130°F-145°F; be careful not to overcook), 6-8 minutes. Transfer to a cutting board; slice against the grain ¼" thick. Serve with pickles, bread, cilantro, and onion.
  • Do Ahead
  • Pork can be roasted 2 days ahead. Let cool; cover and chill.

BARBECUED PORK SHOULDER (BOSTON BUTT)

Barbecued Pork Shoulder (Boston Butt) image

I love to grill on my charcoal grill. This is one of those recipes that makes the neighbors wander over to ask what I'm cooking....it smells so good and the smell drifts for several hours! This is a recipe for a day you'll be spending at home. But don't worry, you can do other things while its cooking, or just sit around watching a movie or a ball game! Fun times! Hickory chip soaking time is not included in the prep and cook time.

Categories     Pork

Time 4h15m

Yield 10 serving(s)

Number Of Ingredients 15

6 1/2 lbs pork roast, shoulder (Boston Butt)
1 medium onion, chopped finely
2 garlic cloves, minced
1/2 cup butter, melted
1 cup brown sugar, firmly packed
1 cup ketchup
1/2 cup vinegar
1/2 cup water
2 tablespoons Worcestershire sauce
1 1/2 teaspoons lemon rind, grated
1 tablespoon lemon juice
1 1/2 teaspoons lemon juice
1 teaspoon hot sauce
1/2 teaspoon chili powder
hickory chips

Steps:

  • Soak your hickory chips for at least 8 hours.
  • Place the charcoal on one side of the grill, place a pan of water on the other side (under the grilling rack). Fire up the coals, and spread them out once they are white and ashy (about 20 minutes). Place your grilling rack on the grill, and let it sit for about 5 minutes covered.
  • While the charcoal is getting hot, saute the onion and garlic in butter in a medium saucepan until tender. Stir in the brown sugar, ketchup, vinegar, water, Worcestershire sauce, lemon rind, lemon juice, hot sauce and chili powder. Bring to a boil. Reduce heat and simmer, uncovered for 5 minutes, stirring occasionally. Remove sauce from heat.
  • Insert the meat thermometer into the thickest part of the roast, making sure it doesn't touch bone or fat. I usually just insert the thermometer after it has cooked a while to check for doneness. Place the meat (fat side up) on the grill over the pan of water (this will keep your meat moist). Toss some hickory chips over the charcoal to create some great smoke. Cover with the lid, and make sure the vents are open over the meat to draw the heat and smoke towards the meat. Cook over low coals for 3 hours, turning the roast halfway through the cooking time. You will need to add charcoal and hickory chips about every 30-40 minutes to keep the fire and smoke going. I slip them in the side and flick them over to the active charcoal with a tong! After cooking for 3 hours, baste the roast with the sauce. Cover and cook an additional hour or until the thermometer registers 160 degrees. Baste frequently with the sauce.
  • Let stand 10 to 15 minutes before slicing.
  • Serve sliced with potato salad or cole slaw, or you can put it on sandwiches.
