Preserve roasted beetroot in a sweet and spiced vinegar to make this punchy, classic accompaniment to cold meats and cheeses

Yield Makes 4-5 x 450ml jars

Number Of Ingredients 12

1kg beetroot
vegetable oil
4-5 tsp coarse crystal sea salt
1 tbsp black peppercorns
1 tbsp coriander seeds
1 tbsp yellow mustard seeds
10 cloves
few pieces of mace blades
pinch of dried chilli flakes (optional)
2 bay leaves
700ml white wine vinegar, plus 3½ tbsp
100g light brown soft sugar

Steps:

  • Wash and trim the beetroot, rub each with 1 tbsp vegetable oil, then wrap individually in foil. Roast on a tray at 200C/180C fan/gas 6 for 1 hr or until tender. Cool, peel, then cut into wedges.
  • To make the pickling vinegar, put the whole spices in a medium saucepan. Toast over a low heat until they begin to smell aromatic. Add the dried chilli flakes last, as these can easily catch. Add the bay, pour in all of the vinegar and sugar, let it dissolve, and bring to a simmer.
  • Pack the beets into sterilised jars (see tip below), add 1 tsp coarse crystal sea salt to each, then pour over the hot vinegar and seal. Ready to eat in 2 weeks, or longer, if you like.

Want to know how to pickle beetroot? This soft and delicate beetroot pickled in a sweet yet punchy vinegar is my Gran's trusty recipe that's been developed over many years!

Large Lidded Saucepan
500ml Preserve Jar
Small Saucepan
Sharp Knife
550g (19.4 oz) of Raw Whole Beetroot
270ml (1 + 1/8 Cup) Malt Vinegar
3 - 4 tbsp Soft Light Brown Sugar

Steps:

  • Trim the beetroot stems to 1" and wash them well.
  • Place in a large saucepan and cover with water. Bring to the boil.
  • Reduce to a simmer and put a lid on. Simmer for 1 hour.
  • Meanwhile, sterilise your jar (see below).
  • Pour the vinegar in a small saucepan and bring to the boil. Add the sugar to taste and keep hot (but not boiling) until your beetroot is ready.
  • When the beetroot is cooked, drain the water and peel the skins off.
  • Thinly slice it with a sharp knife then fill your hot jar to the top with beetroot.
  • Pour over the hot vinegar (as close to the top as you can) and seal.
  • Preheat your oven to 190°C/Fan 180°C/374°F and make sure your jar is clean. (Washed in hot soapy water.) Place your jar on a baking tray, with seals removed, and bake for 20 minutes.
  • Seal while your jar is still hot for best results.

6 -8 beets
1/3 cup vinegar
1/4 cup sugar
1/4 cup water
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon ground cloves

Steps:

  • Boil beets for approx.
  • 15-20 minutes.
  • Drain and pour cold water over them.
  • Peel skin off and cut roots& tops off.
  • In a sauce pan add remaining ingredients, stir.
  • and add beets, bring to a boil.
  • Simmer for 5 minutes.
  • Chill.
  • Good for 1 month in refridgerator.

Roasted Beets, recipe follows
1 large red onion, frenched
1 cup tarragon wine vinegar
1 1/2 teaspoons Kosher salt
1/2 cup sugar
1 cup water
6 medium beets, cleaned with 1-inch stem remaining
2 large shallots, peeled
2 sprigs rosemary
2 teaspoons olive oil

Steps:

  • Remove the skin from the Roasted Beets and slice thinly. Arrange in 1-quart jars alternating layers with the onion. In a small pot boil the rest of the ingredients and pour over the beets. Tightly lid the jars and place in the refrigerator for 3 to 7 days before serving.
  • Preheat oven to 400 degrees F.
  • In a large bowl toss all of the ingredients. Place into a foil pouch and roast in the oven for 40 minutes.

SPICED SWEET & SOUR PICKLED BEETROOT

1kg small-medium sized raw beetroot
200g caster sugar
300ml white wine vinegar
2 star anise
3 cloves
2 allspice berries
2 bay leaves
2 tbsp balsamic vinegar (optional)
1 tbsp olive oil

Steps:

  • Heat oven to 180C/160C fan/gas 4. Trim the leaves and most of stalks off the beetroot, leaving a stump of stalk on each. Wrap the beetroots individually in pieces of foil and place on a baking tray. Roast for 1 hr 15 ins or until the point of a sharp knife can be easily inserted then leave to cool.
  • Unwrap, peel and trim the stalks away from the beetroot. Leave the small ones whole and cut larger ones in half and pack them into a large sterilised kilner jar.
  • Tip the sugar, white wine vinegar, 200ml cold water the spices and bay leaves into a sauce pan and bring to the boil. Turn down to a simmer and bubble gently, stirring, for 2 mins until all the sugar has dissolved. Turn off the heat and add the balsamic if using.
  • Carefully pour the hot vinegar, spices and bay over the beetroot (you might not need it all) and leave to cool uncovered. Once cool pour the olive oil over, seal the jar and keep in the fridge for up to a month.

16 cups beets, small
3 cups vinegar
2 cups water
2 1/2 cups sugar
2 teaspoons whole allspice
2 inches piece cinnamon sticks
1/2 teaspoon whole cloves
1 teaspoon salt

Steps:

  • Cook the beets until just tender.
  • Slip off skins.
  • Combine vinegar, water, sugar, spices and salt.
  • Bring to a boil and simmer 15 minutes.
  • Add the beets and simmer 5 minutes longer.
  • Pack the beets into hot sterilized jars.
  • Bring the syrup to a boil, then pour over beets.
  • If not enough to cover add hot vinegar.
  • Seal immediately.
  • Allow to *pickle for 3 weeks before testing*.
