GUINNESS® BREAD
I developed this recipe after visiting my ancestral homeland of Ireland. It's a great way to get Guinness into your bread! Serve warm with butter and honey.

- Preheat oven to 425 degrees F (220 degrees C). Grease an 8x8 inch baking pan.
- Mix together the oats, flour, sugar, baking soda, baking powder, and salt in a bowl. In a separate large bowl, stir together the butter, vanilla, buttermilk, and Guinness® beer. Pour the flour mixture into the beer mixture, and gently stir until well blended. Pour batter into the prepared baking pan, and sprinkle with additional oats if desired.
- Bake in preheated oven for 30 minutes, then turn the temperature down to 400 degrees F (200 degrees C), and bake for an additional 30 minutes. Turn the oven off, open the door, and allow to cool for 30 minutes in the oven before turning out onto a wire rack.

OATMEAL WHOLE WHEAT QUICK BREAD
There's no yeast in this bread, so it's good for special diets. You may also use soy milk instead of regular milk if you wish. It's pretty dense, but great when fresh from the oven. Especially with butter and honey on cold mornings!

- Preheat oven to 450 degrees F (230 degrees C).
- Grind oatmeal in a food processor or blender. In a large bowl, combine oatmeal, flour, baking powder and salt. In a separate bowl, dissolve honey in vegetable oil then stir in the milk. Combine both mixtures and stir until a soft dough is formed. Form the dough into a ball and place on a lightly oiled baking sheet.
- Bake in preheated oven for about 20 minutes, or until bottom of loaf sounds hollow when tapped.

SLOW COOKER WHOLE WHEAT BREAD

Steps:
- Mix together milk, oil, honey salt, yeast, and half the flour in electric mixer bowl.
- Beat with mixer for 2 minutes.
- Add remaining flour.
- Mix well. Place dough in well greased bread or cake pan that will fit into your cooker.
- Cover with greased tin foil.
- Let stand for 5 minutes.
- Place in slow cooker Cover cooker and bake on High 2 1/2-3 hours.
- Remove pan and uncover.
- Let stand for 5 minutes.
- Serve warm.
SLOW-RISE, NO-KNEAD LIGHT WHEAT (OR WHITE) BREAD
This is an adaptation of the now-famous slow-rise No-Knead Bread; the difference is that this version makes a lightweight American-style loaf. I have not made this yet but will give it a shot this weekend. Note that you can also use all white flour instead of the white/wheat combination. UPDATE: I made the part-whole wheat version and it is quite nice, although I had to tent it with foil to prevent over-browning on top. It's a little crumbly, so maybe not ideal for sandwiches, but quite nice for toast! From The Washington Post, Nov. 28 2007.

Steps:
- For the first stage:.
- Thoroughly combine the flours, sugar, salt and yeast in a 3-quart or larger bowl; mix with a large spoon.
- Add the butter or oil and water, stirring vigorously until well combined; the dough may be stiff.
- Scrape down the sides of the bowl with a greased flexible spatula.
- Drizzle the dough top with about a teaspoon of melted butter or oil; use a pastry brush or your fingertips to spread it evenly over the dough.
- Cover the bowl tightly with plastic wrap and set aside at a room temperature of about 70 degrees or cooler for 12 to 18 hours.
- For the second stage:.
- Vigorously stir the dough until it deflates.
- Generously coat a 9-by-5-inch or similar large (1 3/4- to 2-quart) loaf pan with nonstick cooking oil spray.
- Turn out the dough into the pan.
- Drizzle the melted butter or vegetable oil over the loaf top, then spread it out with a pastry brush or your fingertips until the surface is evenly coated and looks smooth.
- Sift about 1/2 tablespoon flour evenly over the loaf top.
- Cover the pan tightly with plastic wrap.
- For a "regular" rise:.
- Let stand at room temperature for 45 to 75 minutes or until the dough nearly reaches the pan rim.
- (The time will vary considerably depending on the temperature of the room and the length of the first rise.).
- Gently remove the plastic.
- Let it stand until the dough top rises 1/4 inch above the rim.
- For a "quick" rise:.
- Place a microwave-safe cup containing 1 cup of water in a rear corner of the microwave oven.
- Microwave for 2 minutes, until the water almost boils.
- Put the loaf in the microwave oven as far from the water as possible.
- Let it rise 30 to 50 minutes, or until the dough nears the pan rim.
- Gently remove the plastic.
- Continue the rise until the dough top is 1/4 inch above the rim.
- For baking:.
- Position an oven rack in the middle third of the oven; preheat to 425 degrees.
- Gently transfer the pan to the oven; jarring can cause deflating.
- Bake for 25 to 35 minutes, until the loaf is well browned on top and sounds hollow when thumped with a finger.
- Transfer to a wire rack and let cool for several minutes, then run a knife around the loaf to loosen.
- Transfer the loaf to the rack and let it cool completely before cutting it or storing in an airtight container.

- Prepare the bread dough: In the bowl of a standing mixer fitted with the paddle attachment or a large mixing bowl, combine the flour and yeast. Add the milk, water, olive oil, honey, apple cider vinegar, and salt. Mix on low speed or by hand until the dough begins to leave the side of the bowl. If time allows, let the dough rest for 25 minutes to allow the liquid to absorb (this makes for the easiest kneading, as it gives the flour time to absorb the moisture from the liquid ingredients).
- If using a standing mixer, switch to the dough hook. If kneading by hand, transfer the dough to a lightly greased work surface. By hand (lightly oil your hands to prevent sticking) or on medium speed with the mixer, knead the dough for 6 to 8 minutes, or until it is smooth and supple. This dough should be soft, yet still firm enough to knead. If the dough is too sticky at any point, add flour 1 tablespoon at a time. If it is too dry, add water 1 tablespoon at a time. The amount of liquid or flour you need can vary based on the weather, humidity, and the flour’s mood that day.
- Place the dough in the center of your work surface (if you’ve been using a mixer, lightly oil the surface first) and shape it into a tight, round ball. Place the dough in the center of a large piece of parchment paper. Using the parchment like handles, transfer the dough to a slow cooker (you can use any size of slow cooker that comfortably holds the dough). Flatten the parchment paper as much as you can against the slow cooker’s bottom and sides.
- Cover the slow cooker and turn it to HIGH. Bake for 1 to 2 1/2 hours, until the loaf reaches an internal temperature of 190 to 200 degrees F when tested with an instant read thermometer. The top will feel soft but not spongy or squishy, the bottom will be hard and slightly golden, and the loaf will sound hollow when the bottom is tapped. The cook time will vary depending upon your slow cooker. If it is your first loaf, consider it a bit of a test. Once you know how long your slow cooker needs, every subsequent loaf will be similar.

- Pour warm water into a large bowl. Add honey and mix until dissolved. Add dry yeast and stir. Let sit for about 10 minutes until foamy. I always find it helps to sit it in a warm spot.
- Add flour and mix with hands until everything is combined. Knead the dough for 5 minutes and form into a round ball.
- Place dough in olive oil coated bowl and cover with plastic wrap. Sit in a warm spot for 30 minutes to rise, doubling in size.
