BASIC PAPRIKA PORK CHOPS
Steps:
- Pat the pork chops thoroughly dry with paper towels.
- In a small bowl combine the paprika, salt, and pepper.
- Sprinkle both sides of all the pork chops evenly with the spice mixture. Set aside the chops while you prepare the pan.
- Heat a large frying pan over medium-high heat. Once the surface of the pan is hot, add the oil and heat until the oil shimmers. Add the pork chops-they should make a bright sizzling sound immediately upon touching the pan; if they don't, take them out and let the pan and oil get a bit hotter. Reduce the heat to medium and cook the chops, undisturbed, until they're well browned and they release from the pan of their own accord, about 4 minutes. Turn and repeat on the other side.
- Remove the chops from pan and let sit, covered loosely with foil, for about 10 minutes. Serve hot.

- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- In a bowl, mix together the seasoned salt, black pepper, garlic powder, onion powder, paprika, Worcestershire sauce, and smoke flavoring until thoroughly combined. Rinse pork chops, and sprinkle the wet chops on both sides with the spice mixture. With your hands, massage the spice rub into the meat; allow to stand for 10 minutes.
- Grill the chops over indirect heat until no longer pink inside, about 12 minutes per side. An instant-read thermometer should read at least 145 degrees F (63 degrees C). Allow chops to stand for 10 more minutes before serving.

- Prepare and preheat your lump charcoal grill to create two heat zones: high and low.
- In a small bowl, combine the salt, coriander, chipotle powder, cumin, paprika and mustard powder. Pat the chops dry with paper towels and season both sides with the spice mixture. Rub the exterior of the seasoned chops with the olive oil.
- Sear the chops over the hot side of the grill until the exterior forms a nice crust, about 4 minutes per side. Move the pork to the low side of the grill, cover the grill and cook until the pork reaches an internal temperature of 140 degrees F, 10 to 12 minutes. Transfer the pork to a cutting board, let it rest for 5 to 10 minutes and then serve.
SPICE-RUBBED GRILLED PORK CHOPS
Dry rubs are also a terrific way to season pork chops. Select chops of close to an inch in thickness - nothing flimsy - then grill them over steady medium heat. We opt for rib chops over the center-cut variety when cooking outdoors because their greater fat content helps keep them moist, and we always prefer bone-in chops for their juiciness. You might add a barbecue sauce on the side with these, but we relish their crispy surface unvarnished.

- At least 1 and up to 8 hours before you plan to grill the pork chops, prepare the dry rub, combining the ingredients in a small bowl. Coat the chops with the spice mixture, place them in a large plastic bag, seal, and refrigerate.
- Fire up the grill, bringing the heat to medium (4 to 5 seconds with the hand test).
- Remove the chops from the refrigerator and let them sit covered at room temperature for about 20 minutes.
- Spray the chops with oil and transfer them to the grill. Grill for 18 to 20 minutes total. Turn onto each side twice, rotating the chops a half turn each time to get criss-cross grill marks. The chops are done when just a hint of pink remains at the center. Serve hot.
GRILLED PORK CHOPS WITH HERB RUB
Brining pork chops is undoubtedly the best way to prepare them. After I did it once, I will no longer prepare them any other way. They are juicy and delicious and far better than any I've ever had before.

- To brine the chops: Heat the water, salt, sugar and molasses in a pan, stirring occasionally, until the sugar and salt dissolve.
- Pour into a large zip-lock bag or a tupperware container and let cool down slightly, then add the ice cubes.
- When the brine is cold, add the chops.
- Refrigerate for at least 4 hours, but no more than 6.
- Remove the chops from the brine, dry completely with paper towels.
- Discard the brine.
- In a small bowl, combine the rub ingredients and mix well.
- Lightly rub the mixture into both sides of each pork chop.
- If using a gas grill, set one side on low, the other medium high.
- If using a charcoal grill, arrange the coals so that there are thicker and thinner layers of coals for varying degrees of heat.
- When the thicker layers of coals are hot, set the chops directly over them, or over the hottest part of the gas grill.
- Sear the chops over the hot area for about 1 1/2 minute.
- per side, then move them to the less hot areas.
- Cover the grill and continue to cook until the chops reach an internal temperature of 145 degrees F.
- (about 3 minutes more per side).
- Transfer to a platter and let rest, uncovered for about 5 minutes before serving.
- NOTE: You could cook this chops inside in a frying pan.
- Just cook the 1 1/2 minutes per side over medium high heat, then put the pan in the oven at 375 degrees and let the chops finish cooking.

These pork chops are one of my favorites. I don't generally like pork chops, but when they are made with the right seasoning they can be very nice. There is just a hint of spice to them which gives them a new and interesting flavor.

- Heat oven to 400 degrees Farenheit.
- Mix paprika, white pepper, and salt together.
- Coat chops lightly with olive oil.
- Rub paprika and white pepper mix all over chops with fingers. Maker sure that there is an even coat over both chops.

- Cook fo 15-25 minutes, or until juices run clear. Serve immediatly.

- Stir the brine ingredients until the salt and sugar dissolve, then pour over the ribeye pork chops. Refrigerate the chops for one to four hours.
- Prepare the grill for two-zone high heat (450°F): Prepare the grill for cooking with two zones – one on high heat, the other with no heat, then clean with a grill brush. For my Weber summit, I preheat the grill with all burners on high for 15 minutes, then turn half the burners off and brush the grill grate clean.
- While the grill is heating, mix the spice rub ingredients in a small bowl. Remove the ribeye pork chops from the brine and pat dry with paper towels, then sprinkle the chops with a heavy coating of spice rub.
- Put the pork chops on the grill over direct high heat. Cook until the chops are starting to brown on the bottom, about 2 minutes, then flip the chops, and cook until brown on the other side, about 2 more minutes. Flip the chops again and rotate 90 degrees to get a crosshatch of grill marks, another 2 minutes. Flip and get a crosshatch of grill marks on the other side, 2 more minutes. Move the chops to the indirect heat side of the grill with the bones facing the fire, and cook with the lid closed until the chops reach 145°F in their thickest part, about 4 more minutes.
