PINTXOS (BASQUE STYLE TAPAS)



Pintxos (Basque Style Tapas) image

We like to aim for 3-4 pinxtos per person when we serve these as an appetizer.Yield: 27 pinxtos

2 French baguettes, (approximately 2" in diameter, sliced 1" thick)
27 small wooden skewers or toothpicks
1 (4 oz) package Lox-style smoked salmon ((Usually found in the frozen specially seafood section of grocery stores.))
3 hard boiled eggs, (sliced)
8 oz tuna, (solid packed in water)
2 red peppers, (cut into thirds and seeded)
9 Spanish olives
3 oz Manchego cheese, (sliced)
9 cherry tomatoes
1 tsp olive oil
1/8 tsp salt

Steps:

  • Preheat your oven to 400F. To roast the red peppers and cherry tomatoes, toss the pepper halves and tomatoes with 1 tsp olive oil and 1/8 tsp salt. Place the veggies on a aluminum foil lined baking sheet and roast for 15 minutes, or until soft and slightly charred. Remove from the oven and let cool.
  • While the veggies are roasting, prepare your other ingredients and start assembling the salmon pinxtos by placing a hard boiled egg slice on top of a slice of baguette and topping the egg with a roll of lox. Use a wooden skewer to hold the ingredients in place.
  • When the peppers have cooled slightly, cut the pieces so they will fit nicely on top of a baguette slice. Place a bit of tuna over the roasted pepper and top it off with an olive. These really need the skewer to make sure everything stays put!
  • Once the tomatoes have cooled place a tomato on top of a slice of Manchego cheese on a baguette slice. Secure the tomatoes in place with a skewer.
  • Serve the pinxtos immediately with glasses of South France wine!

From The Tapas Cookbook. Serves 4-6 as part of a tapas meal. Tip: to peel a tomato, bring a small saucepan filled with water to a lively simmer; using a fork, spear the top of the tomato where the stem used to be and dunk into the simmering water to a count of 10 seconds; remove tomato and being careful not to burn yourself, peel the tomato with a paring knife.

4 tablespoons Spanish olive oil, divided
1 large onion, finely chopped
1 large red bell pepper, cored, seeded, and chopped
1 large green bell pepper, cored, seeded, and chopped
2 large tomatoes, peeled, seeded, and chopped
2 ounces chorizo sausage, thinly sliced, casings removed, if preferred (55 g)
3 tablespoons butter
10 large eggs, lightly beaten
salt
pepper
4 -6 thick slices country bread, toasted, to serve

Steps:

  • Preheat an oven on low or warm setting.
  • Heat 2 tablespoons of the oil over medium-high heat in a large, heavy-bottom skillet.
  • Add the onion and bell peppers and sauté for about minutes, or until the vegetables are softened, but not browned. Toss in the tomatoes and heat through. Remove to a plate and place in oven to keep warm.
  • Add another tablespoon of oil to the skillet. Add the chorizo and cook for 30 seconds, enough to warm through and flavor the oil. Remove the sausage to the plate of warmed vegetables.
  • Add enough oil to the pan to make up 2 tablespoons. Add butter and let melt. Season the eggs with salt and pepper, then add them to the skillet. Scramble the eggs until they are cooked to the desired degree of firmness. Add extra seasoning to taste. Return the vegetables to the skillet and stir through.
  • Serve immediately over the hot toast.
