GRILLED TEQUILA LIME PINEAPPLE CHUNKS
Steps:
- Soak 1 dozen small bamboo skewers in cold water. Cut off top and bottom poles of pineapple. Stand it upright on the cutting board and cut off rind, using a sharp knife and smooth downward motions. Remove any remaining eyes with the tip of a paring knife. Cut in quarters lengthwise and cut out and discard woody core. Cut flesh into 1 or 1 1/2-inch chunks.
- In a medium bowl, combine tequila, lime juice and sugar. Add pineapple chunks and toss to coat. Let marinate 30 minutes at room temperature. Preheat grill to medium high. Drain pineapple chunks and divide among skewers. Brush grill well, wipe with oiled paper towel and place skewers on grill at an angle. Cook a total of 68 minutes, turning frequently, until outside is lightly caramelized. Remove from grill, let cool slightly and serve 2 skewers in each bowl of Watermelon Granita.
TEQUILA LIME SAUCE
Steps:
- Combine the tequila, lime juice, shallots, garlic, cilantro, salt and pepper in a saute pan over high heat and bring to a boil. Reduce by half. Stir in the cream and simmer for 3 minutes. Whisk in the butter and remove from the heat. Continue whisking until all of the butter is incorporated. Serve immediately.
- Remove the rellenos from the oven. Spoon 1/4 cup of the sauce on each plate and place the rellenos directly on top. Garnish with the tortilla strips and the cilantro sprigs. Sprinkle Essence on the rim.
- Combine all ingredients thoroughly.
CHILI LIME SAUCE
Steps:
- Whisk together lime juice, fish sauce, sugar, vinegar, chile paste and green onions in a bowl.
GRILLED PINEAPPLE WITH TEQUILA-BROWN SUGAR GLAZE
I have used dark rum instead of the Tequila with equally good results. I also microwave the pineapple for 2 minutes, then marinade it in the glaze. This is great with vanilla ice cream over the top! Prep time includes marinating. Adapted from Bon Appetit magazine, July 1997.

- Prepare barbecue (medium heat). Grill pineapple until brown, basting with tequila mixture and turning occasionally, about 10 minutes total. Remove pineapple from skewers; serve hot or warm.

- Mix tequila, marmalade, sugar, butter, vanilla, cinnamon and mint together heat till sugar is dissolved.
- Preheat Grill.
- Place pineapple on grill.
- Baste with tequila mixture while grilling.
- Turn occasionally.
- Grill about 10 to 15 minutes.
- Serve hot with a scoop of your favorite ice cream.

- Peel and core the pineapple; cut vertically into 8 wedges. Cut each wedge horizontally into 2 spears. In a bowl or shallow dish, combine the brown sugar, honey and lime juice; add pineapple and turn to coat. Cover and refrigerate for 1 hour., In a small bowl, beat cream cheese until smooth. Beat in the yogurt, honey, brown sugar, lime juice and zest. Cover and refrigerate until serving. , Coat grill rack with cooking spray before starting the grill. Drain pineapple, discarding marinade. Grill pineapple spears, covered, over medium heat for 3-4 minutes on each side or until grill marks are golden brown. Serve with lime dip.

GRILLED PINEAPPLE WITH SWEET LIME- BLACK PEPPER SAUCE
Grilling does wonderful things to fresh pineapple, so if you have never tried it, you must! I love the flavor contrasts in this recipe, which was adapted from License to Grill. The original recipe called for 'a small handful of black peppercorns (about 20)', which I find inconsistent. I have always just 'eyeballed' it and the measure given is just a guess, so please adjust according to your own tolerance for black pepper. Don't be afraid of using it with the pineapple, though, because it does compliment it nicely. This dish holds up well, so it's easy to serve to a crowd.

- In a small saucepan, combine pepper, corn syrup, lime juice, and dried mint; cook over medium heat, stirring occasionally, about 5 minutes or until just warm.
- Remove from heat and let cool to room temperature.
- Meanwhile, place the pineapple slices on the grill over a medium fire and cook until lightly charred, about 4 minutes per side; brush with the lime-pepper sauce during the last 30 seconds of cooking, then remove from grill.
- Stir the fresh mint into the remaining sauce and serve 2 slices of pineapple per person, topped with several tablespoons of the sauce.
