Provided by Betty Crocker Kitchens

Categories     Entree

Time 45m

Yield 4

Number Of Ingredients 7

4 boneless skinless chicken breasts (6 to 8 oz each)
1 teaspoon roasted garlic-herb blend
1/2 cup ranch dressing
2 cups quartered small red potatoes
1 cup ready-to-eat baby-cut carrots, cut in half lengthwise
1/4 lb fresh green beans, trimmed
1/3 cup finely shredded Parmesan cheese

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil; spray with cooking spray. Sprinkle chicken with garlic-herb blend; place 1 breast on each sheet of foil. Drizzle 1 tablespoon of the dressing over each breast.
  • In medium bowl, place remaining 1/4 cup dressing. Stir in potatoes, carrots and green beans. Divide vegetables among chicken breasts. Sprinkle with cheese.

  • To serve, cut large X across top of each pack; carefully fold back foil to allow steam to escape.
  • To make in oven, place packs on cookie sheet. Bake at 375°F 40 to 45 minutes or until potatoes are tender and juice of chicken is clear when center of thickest part is cut (at least 165°F).

GOOD FRICKIN' PAPRIKA CHICKEN

Good Frickin' Paprika Chicken image

While this is a pretty straightforward grilled chicken recipe, the vinaigrette at the end was a last minute touch that worked out nicely. I really like oil and vinegar-based sauces on grilled meats. They work beautifully with the smoky, caramelized exterior.

Categories     Meat and Poultry Recipes     Chicken     Whole Chicken Recipes

Time 3h20m

Yield 6

Number Of Ingredients 14

6 tablespoons plain yogurt
3 cloves garlic, crushed
3 tablespoons ground paprika
2 tablespoons olive oil
1 tablespoon hot chile paste (such as sambal oelek)

1 (5 pound) whole chicken, cut into 8 pieces
salt
¼ cup olive oil
2 tablespoons sherry vinegar
1 tablespoon ketchup
⅛ teaspoon hot chile paste (such as sambal oelek)
1 pinch paprika
salt and pepper to taste

Steps:

  • Whisk together yogurt, garlic, 3 tablespoons paprika, 2 tablespoons olive oil, 1 tablespoon hot chile paste, and cayenne pepper in a large bowl.
  • Mix in chicken pieces and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 3 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove chicken from the bag and transfer to a plate or baking sheet lined with paper towels. Pat chicken pieces dry with more paper towels. Season with salt.

SMOKE-ROASTED CHICKEN THIGHS WITH PAPRIKA

Smoke-Roasted Chicken Thighs With Paprika image

These chicken thighs are roasted in the heat of a covered grill, smoke commingling with the tint and flavor of paprika to create, thanks to caramelized honey, a sort of crust that makes it very difficult to stop eating. You start by making a paste of sweet and hot paprikas, honey, lemon juice, garlic and butter. Rub that all over the meat, then cook the chicken on a charcoal grill over indirect heat until done. If using a gas grill, make sure one side of the grill is unheated, and either swap out the paprika for the smoked version known as pimenton de la vera or wrap two small mounds of moistened wood chips in heavy aluminum foil and pierce the tops of the packets with the tines of a fork. Place those on the hotter side of the grill before roasting the chicken.

Provided by Sam Sifton

Categories     dinner, weekday, main course

Time 45m

Yield 4 servings

Number Of Ingredients 11

1 tablespoon sweet paprika
2 tablespoons hot paprika
2 tablespoons honey
1 tablespoon lemon juice
4 cloves garlic, peeled and minced
2 tablespoons softened butter
8 bone-in chicken thighs (about 3½ pounds)
Kosher salt
freshly ground black pepper to taste
Lemon wedges, for garnish
Mint leaves, for garnish

Steps:

  • Build a fire in a grill with a cover, leaving about 1/3 of the grill free of coals. If using a gas grill, make sure one side of the grill is unheated, and either swap out the paprika above for the smoked version known as pimenton de la vera or wrap two small mounds of moistened wood chips in heavy aluminum foil and pierce the tops of the packets with the tines of a fork.
  • In a bowl, combine the paprikas, honey, lemon juice, garlic and butter and stir to make a paste. Season the chicken with salt and pepper, then coat thoroughly by hand with the spice paste.
  • Place chicken on cooler side of grill and cover. If using wood chips, place the foil packets, pierced side up, on the hotter side of the grill and cover. Roast chicken for 15 minutes, turn, cook for 10 to 15 minutes more, or until cooked through.
  • Serve hot, warm or at room temperature, with lemon wedges, sprinkled with mint leaves.

FOIL-PACKET RICE WITH CHORIZO AND CHICKEN

Foil-Packet Rice with Chorizo and Chicken image

Frozen rice is a versatile shortcut ingredient and the key to these flavorful foil packs. The rice is layered in while still frozen to provide a buffer of time that keeps it from overcooking. As the rice thaws, the other ingredients start cooking and lightly char and then the rice can absorb all the bubbling liquids and rendering inside the pack.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 13

4 cups frozen cooked white rice
1 yellow or red bell pepper (or 1/2 of each), thinly sliced

  • Southwestern Chicken Packets. dessertnowdinnerlater. I was scrolling through Pinterest and there was one recipe that I just had to try right away. The Southwestern Chicken Packets had my name all over them, but I didn’t have plans to go camping anytime soon.
  • Sausage Pierogie Campfire Foil Packets. just2sisters. Camping is what my hubby and I do to relax. Even if we can sneak away to the woods for a day or two we are in our happy place.
  • Garlic Lemon And Chive Grilled Shrimp. todayscreativelife. One of the best parts of summer to me is definitely grilling. Now I’m not the grill master around my house (my hubby helps out in that department), but I absolutely adore the smell of food cooking out on the grill and like to eat it even more.
  • Grilled Herbed Chicken Potato Foil Packs. lecremedelacrumb. My husband and I went camping. And cabin-ing at my great uncle’s log cabin. Year after year we camped and cabined and I looked forward to those trips all through winter and spring.
  • Orange Thyme Grilled Shrimp In Foil Packets. yummyhealthyeasy. Our grill has been getting used like crazy this summer! I can’t stand the thought of turning on my oven every night for dinner.

  • Lemon Chicken And Potatoes In Foil. damndelicious. Foil pack dinners are the best. There’s minimum effort involved, and clean up is an absolute breeze. And you don’t even need serving plates here.

  • Italian chicken foil packs. We like our chicken dinners as juicy as we can get ’em. According to this mini-masterpiece, that’s very.
  • Pesto caprese chicken in foil. The right sauce can elevate any meal, and pesto is no stranger to taking meals to the next level.
  • Parmesan chicken foil packets. We see this dish as a healthier version of a traditional chicken Parmesan because it’s got all the cheese without the panko breading.
  • Chicken cordon bleu foil packets. This classic French pick doesn’t require much attention in foil. Now you can take your guests all the way to the “I’m full” tower and make it look easy.
  • Mediterranean chicken with artichoke hearts. We like to think of this recipe as a jazzed-up Hunter-style chicken.
  • Grilled honey barbecue chicken foil packets. Tuck into a piece of chicken slathered in a tangy honey-barbecue glaze.
  • Cilantro lime chicken fajitas in foil. Instead of greasing up the skillet, reaching for the foil is an easy way to make fajitas healthier.
  • Southwestern chicken foil packets. Mexican night can be so much more than tacos — and way lower in carbs too.
  • Grilled Hawaiian barbecue chicken in foil. When it comes to pineapple on pizza, the jury is still out. But even pizza purists can get behind the taste of the fruit grilled with smoky BBQ chicken.
  • Cajun chicken and vegetable foil packs. You may not be able to fly to New Orleans for a soul-satisfying dinner, but attempting Creole-style food in your own kitchen doesn’t have to be intimidating.
