CHEESY POLENTA FRITTERS

Cheesy polenta fritters image

There are so few ingredients in these little cheesy morsels and yet they're so tasty. Serve them as a canapé or snack before a dinner party.

Provided by Dan Doherty

Time 45m

Yield Makes about 20

Number Of Ingredients 7

400ml whole milk
100g quick-cook polenta
150g parmesan cheese (or vegetarian alternative), finely grated
50g plain flour
1 medium free-range egg, beaten
50g panko breadcrumbs
Vegetable oil for deep-frying

Steps:

  • Heat the milk in a saucepan over a medium heat to just about boiling point, then add the polenta and cook according to the packet instructions. Season generously with salt and pepper, then add half the cheese (see tip). Cover the polenta with baking paper to stop a crust forming; leave until cool enough to handle.
  • Stir in the rest of the cheese, then roll the polenta mixture into about 20 x 2.5cm balls and chill for around an hour to firm up.
  • Put the flour, beaten egg and panko breadcrumbs in 3 separate bowls. Coat each chilled polenta ball in the flour, then the egg, then the crumbs.
  • Pour oil into a small pan to come 5cm up the sides (see delicious. Kitchen), then heat to 170°C - if you don't have a digital thermometer, test if the oil is hot enough by dropping a cube of bread into it. If it sizzles immediately, it's ready.
  • Carefully fry the fritters, in batches, for about 4 minutes until golden. Remove with a slotted spoon onto kitchen paper to drain. Keep warm while you cook the remaining balls. Season with salt and serve hot.

PARMESAN-RICOTTA POLENTA

Parmesan-Ricotta Polenta image

Two cheeses-ricotta and Parmesan-give this polenta recipe complexity and creaminess. It's a classic side dish that is great with roast chicken.

Provided by Jessica Harlan

Categories     Dinner     Lunch     Side Dish

Time 30m

Yield 4

Number Of Ingredients 7

1 cup water (or more as needed)
1 cup low-fat milk
1/2 cup polenta
Kosher salt
1/2 cup low-fat ricotta cheese divided
2 tablespoons grated parmesan cheese
2 tablespoons whole basil leaves

Steps:

  • Gather the ingredients.
  • In a saucier or saucepan , combine water and milk. Bring to a simmer over medium-low heat. When it simmers, sprinkle the polenta gradually into the pot, stirring briskly with a whisk to prevent lumps from forming. Add a pinch of salt, and continue simmering over medium-low heat, stirring frequently with a whisk.
  • Cook for about 20 minutes, until polenta does not have a gritty mouthfeel when tasted. Stir in 1/4 cup ricotta cheese and Parmesan cheese, and stir with a whisk or wooden spoon until cheese is melted.
  • While polenta is cooking, chiffonade basil leaves : stack leaves and roll tightly into a cigar shape. Use a knife to cut through roll crosswise to make thin shreds of basil. Set aside.
  • To serve, spoon a portion of polenta (about 1/2 cup) onto each plate. Top with a dollop of about 1 tablespoon ricotta cheese and sprinkle with some of the basil chiffonade. Serve immediately.

  • Pour 1 cup of water in a saucepan and add salt. Bring it to a boil. When you see the water boiling, in a bowl or jug mix together the remaining water with cornmeal and pour it into the boiling water, stirring at all times (Don’t let the cornmeal mixture sit at a counter before you add it to the boiling water as it will thicken – you don’t want this!).
  • Continue stirring until you see, polenta starts “spitting”. Then, reduce the heat and stir for 10 minutes. Pour the ready polenta into an 8-inch (20-centimetres) square pan lined with aluminum foil and let it cool down. Transfer to the fridge and chill from 1+ hour up to overnight (when making this in stages).
  • Take the chilled polenta out from the pan and cut it into half and each half into 1-inch (2.5-centimetre) or thinner sticks.
  • You will need 3 bowls, preferably shallow. One for flour, one for egg and one for a mixture of breadcrumbs, parmesan, basil and black pepper.
