1/3 cup uncooked instant rice
2-1/2 cups chopped sweet onions
1 tablespoon butter
1/4 cup shredded Swiss cheese
1/4 cup half-and-half cream

Steps:

  • Cook rice according to package directions. Meanwhile, in a large skillet, saute onions in butter until tender. Stir in the cheese, cream and rice. , Transfer to a 2-cup baking dish coated with cooking spray. Bake, uncovered, at 325° for 45-55 minutes or until golden brown.

1 cup white rice (cook as directed with 1 tsp. salt)
7 cups vidalia onions, medium diced (Seems like a lot, but it cooks down)
4 tablespoons butter or 4 tablespoons margarine
1 1/2 cups half-and-half or 1 1/2 cups 2% low-fat milk
1 1/2 cups swiss cheese, grated (1/2 pound)

Steps:

  • Sauate onions in butter til soft.
  • Combine ingredients and place in 9 x 13 baking dish.
  • Bake at 350 degrees for 50 minutes.
  • Can be made a day ahead. Tastes even better the next day.
  • Makes great leftovers.

This wonderful combination of sweet onions, Swiss cheese, and rice is a tasty side dish for anything from grilled meats to roasted poultry. It is a favorite in our home, and you'll get rave reviews every time you serve it.

¾ cup uncooked basmati rice
5 cups water
¼ cup butter
3 pounds sweet onions, coarsely chopped
1 cup half-and-half cream
1 ½ teaspoons salt
2 cups shredded Swiss cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2-quart baking dish.
  • Bring water to a boil in a large saucepan, and sprinkle in the rice. Stir, reduce heat to low, and simmer the rice until it is half-cooked, about 5 minutes. Drain the rice, and set aside.
  • Melt the butter in a large skillet over medium heat, and cook and stir the onions until translucent but not browned, about 8 minutes. Mix the cooked onions and the butter from the skillet with the rice, and stir in the half-and-half, salt, and 1 3/4 cup of the Swiss cheese. Transfer the mixture to the prepared baking dish, and sprinkle the remaining 1/4 cup of Swiss cheese over the top.
  • Bake uncovered in the preheated oven until the rice is tender and the top is lightly browned, about 1 hour.

1/2 cup uncooked long grain rice
8 cups sliced sweet onions
2 tablespoons butter
1 cup shredded Swiss cheese
1/2 cup half-and-half cream
1/2 teaspoon salt
1/8 teaspoon ground nutmeg

Steps:

  • Cook rice according to package directions., In a large skillet, saute onions in butter until tender. Remove from the heat; stir in the cooked rice, cheese, cream, salt and nutmeg. Pour into a greased 8-in. square baking dish. , Bake, uncovered, at 325° for 1 to 1-1/4 hours or until golden brown. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 325°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

1 1/2 cups water
2 tablespoons canola oil
3 3/4 cups chopped sweet onions
1 tablespoon all-purpose flour
1/2 teaspoon kosher (coarse) salt
1 cup fat-free (skim) milk
3 oz Gruyère cheese, shredded (3/4 cup)
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Cook rice in water as directed on package.
  • Meanwhile, in 12-inch skillet, heat oil over medium-high heat. Cook onions in oil 6 minutes, stirring occasionally, until tender. Sprinkle flour and salt over onions; stir until blended. Cook 1 minute, stirring constantly.
  • Gradually add milk, stirring with whisk until blended. Cook 3 minutes, stirring frequently, until mixture is thickened. Add cooked rice and Gruyère cheese; stir until cheese is melted. Spoon mixture into baking dish. Sprinkle with Parmesan cheese.
  • Bake uncovered 35 minutes or until bubbly and golden brown. Sprinkle with parsley.

4 cup(s) chopped vidalia onions, or other sweet onion
1/2 cup(s) brown rice, cooked
1/3 cup(s) milk, 2%
1/2 cup(s) smoked swiss cheese, shredded, or any smoked cheese you like
1/4 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/8 teaspoon(s) allspice, ground
1/3 cup(s) parmesan cheese
2 tablespoon(s) fresh parsley

Steps:

  • Heat oven to 325 degrees. Spray an 8-inch square baking dish with cooking spray.
  • In a large skillet, heat olive oil. Saute onions 5 minutes, or until tender. Transfer onions to a bowl.
  • Stir brown rice, and next 5 ingredients into onions. Then spoon onion mixture into baking dish. Sprinkle parmesan cheese on top of onions.
  • Cover baking dish with foil and bake for 30 minutes. Uncover baking dish, and cook 5 minutes more. Sprinkle with parsley, and serve. Enjoy!!
