I saw this on a cooking show on TV and it's now my favourite recipe for making noodles. The food processor does all the hard work of kneading the dough for you. I usually dry my strips from the pasta machine a little before cutting them into noodles. They seem to separate better that way. I then put meal size quantities in zip lock bags and freeze This saves hanging them up to dry.

2 cups general purpose white flour
2 eggs
1 tablespoon olive oil
4 tablespoons water

Steps:

  • Add all ingredients to a food processor.
  • Process until mixture starts to form a ball. You should knead the dough for at about ten minutes until it bouncers back when pressed down with your finger.
  • You may want to start with a little less water depending on the size of your eggs and moistness of your flour.
  • Wrap ball in plastic wrap and let rest for about an hour.
  • Then make your pasta using your pasta machine or rolling out. Enjoy -- .

This is a handy recipe for making rice sheets and noodles, especially the ones that are not readily available, such as the wide rice noodles. The recipe is easy, but I suggest that first you watch a video such as, www.ifoodtv/video/making rice noodles. One video is worth a thousand words. This recipe comes from one of my most treasured books: "Asian Pasta" by Linda Burum, 1985. Linda claims that she can make a batch of rice noodles in much less time than it takes to go to the store, and that the homemade noodles are far superior.

Number Of Ingredients 6

1 1/4 cups rice flour
6 tablespoons tapioca starch (available at Asian markets)
5 tablespoons wheat starch (not wheat flour, but available at Asian markets)
1 1/4 teaspoons salt
2 1/3 cups water
2 tablespoons vegetable oil (plus more oil for the pans)

Steps:

  • Combine the rice flour, tapioca starch, wheat starch, salt and water; stir until smooth; then strain the batter through a fine strainer and stir in the oil; let the batter sit for 30 minutes.
  • Have ready an oiled baking sheet; then oil two 8-inch square pans or two 9-inch square pans; then place an 8-inch round cake rack in a wok and add water to just below the rack; boil the water and have a kettle of hot water available to replenish the water in the wok.
  • Stir the batter very well and add 5 to 6 tablespoons to one pan, allowing the batter to cover the bottom of the pan; set the pan on the cake rack, cover the wok, and steam over high heat for 5 minutes; then remove the wok top without allowing condensed water to drip on the rice sheets; remove the baking pan and cool in a sink filled with 1/2 -inch cold water; meanwhile, fill and steam the other pan; loosen the cooled rice sheet and roll it out onto the oiled baking sheet; turn the rice sheet so both sides are lightly oiled, then transfer to a platter; repeat the cooking, cooling, and oiling with the remaining batter.
  • Cover the rice sheets with plastic wrap and refrigerate at least 2 hours before cutting the sheets into one-inch wide strips, or other shapes called for in the recipe.
  • Makes about 3 pounds of noodles.;.

This is often considered picnic food in Tamilian households all across India. These southeaster natives make fresh rice noodles (sevai) to take on picnics and long road trips. In a laboriously precise process, hand-cranked noodle machines yield strands that melt in your mouth. NOTE: Rice noodles are found in Asian grocery stores and some large supermarkets. If you cannot find fresh rice noodles for this recipe, the flavors and textures of dried cooked noodles are quite similar to the "real deal". Do not overcook rice noodles because they will become mushy. I did it the first time I made them. Not good! Immediately drain noodles in a colander, and run cold water through them to stop the cooking process. Per chef #672818's kind review, I double-checked my Betty Crocker's Indian Home Cooking cookbook where I got this and it's precisely how the recipe's written. I have paid close attention to the split pea cook time and resulting texture: First, keep in mind that chana dal (yellow split lentils) are much smaller than your standard green "split pea" and will therefore cook much faster. Even so, making the recipe as indicated yields crunchy, but perfectly edible lentils. If you want them softer, you can soak them for an hour or so first, then drain well. Also, heating the leftovers the next day will give you the same result as I found out. ;)

2 quarts water
1 lb fresh refrigerated rice noodles or 1 lb cooked dried rice noodles, cut into 3-inch pieces
2 tablespoons vegetable oil
1 teaspoon black mustard seeds or 1 teaspoon yellow mustard seeds
1/4 teaspoon asafoetida powder (hing or heeng) (optional)
1/4 cup dried yellow split peas (chana dal)
1/4 cup raw whole cashews (we like more!)
2 limes, juice of, medium
1 teaspoon salt
1/4 teaspoon ground turmeric
8 -10 fresh curry leaves or 2 tablespoons chopped fresh cilantro
2 -3 serrano chilies or 2 -3 cayenne chilies, cut lengthwise in half

Steps:

  • Heat water to boiling in 3-quart saucepan; remove from heat.
  • Add fresh noodles; soak 30 seconds (do not soak longer). Drain; rinse with cold water. If using dried noodles, cook according to package directions. Set aside.
  • Heat oil and mustard seeds in wok or 12-inch skillet over medium-high heat. Once seeds begin to pop, cover wok and wait until popping stops.
  • Add asafetida, if using, yellow split peas and cashews; stir-fry about 1 minute or until peas and cashews are golden brown.
  • Add remaining ingredients and cooked rice noodles; toss 1-2 minutes or until noodles are heated.

This recipe is very simple,very fast and very good. The fresh rice noodles, thick and white, can be found in the refrigerator cabinet of any good Asian grocery store. Don't use frozen marinara mix--the recipe deserves better. Any decent fishmonger will be happy to serve you with half a dozen prawns, a few scallops, some squid, a small fillet of fish, a handful of mussels or any other combination that appeals to you.

rice noodles (thick and white)
1/2 dozen prawns
scallops
squid
1 small fish fillet
mussels
basil leaves
3 birds eye chiles
2 tablespoons oil
2 tablespoons garlic, crushed
2 tablespoons light soya sauce
3 tablespoons fish sauce

Steps:

  • Cut 500g of mixed seafood into bite-size pieces, first removing any shells.
  • If you are using mussels, wash and scrape the shells and open them by putting them in a pot with a little boiling water.
  • Cover and boil for a few minutes, removing each mussel as it opens to prevent overcooking.
  • Chop a handful of basil leaves and seed and finely slice 3 bird's eye chillies.
  • In a frying pan or wok, heat 1 tablespoon of oil.
  • Brown 2 tablespoons of crushed garlic and saute the seafood for a couple of minutes.
  • Drain off the oil and set the garlic seafood mixture aside. Put another tablespoon of oil in the pan and increase the heat. Add 2 tablespoons of light soya sauce and the noodles and saute for 2-3 minutes.
  • Tip the seafood back into the pan and add 3 tablespoons of fish sauce. Stir well.
  • Add the basil leaves and chillies and cook for 1 minute more, stirring.

These are little parcels filled with a delicious vegetable mixture. Save some for me because I haven't tried them yet! ;o) I've translated the measurements from grams (mostly) to ounces, which makes it rather annoying, but that's all the zaar calculator would provide and I'm just not bright enough to know how many spring roll sheets make a pound. Sorry. Cilantro/Coriander leaves can be substituted for coriander roots. Lotus seeds can be found in any Asian market. Have you ever seen those plants? Fascinating! (google/image it!) 6 ounces potatoes, boiled and diced
2 ounces cabbage, finely chopped
3 1/2 ounces water chestnuts, diced
1 teaspoon coriander, roots minced
1 teaspoon garlic, minced
2 1/2 ounces small lotus seeds, cooked and coarsely chopped
oil (for frying)
1 teaspoon sugar
1/2 teaspoon salt
1 pinch white pepper
1 lb spring roll, sheets
3 1/2 ounces garlic chives
plum sauce (as required for dipping) (optional)

Steps:

  • Heat 2 tablespoons oil in a pan and add the minced coriander roots and garlic. Fry well. Add the potato, cabbage and water chestnuts. Stir until well mixed.
  • Season with salt, sugar and pepper. Add cooked lotus sees and set the filling aside to cool.
  • Cut the spring roll sheets into flat circles or as desired.
  • Put a little of the prepared filling at the center of each circle an draw the ends together.
  • Tie tightly with a garlic chive. (Soak the garlic chives in hot/boiling water to soften before using them to tie the packets.)
  • Deep-fry the packets in hot oil until golden and crisp. Serve with plum sauce.
