This is an easy and delicious grilled halibut recipe with honey and lemon will have you falling in love with fish all over again! Enjoy a healthy and delicious meal ready in just minutes whether you prepare it on an outdoor grill or on your stovetop.

Steps:
- In a small mixing bowl, combine the butter, honey, lemon juice, soy sauce, pepper, and garlic.
- Portion your halibut by cutting it with a sharp knife into 3 or 4 pieces. A serving size of fish is 3 to 6 oz so portion it depending on the particular size of your filet. Brush both sides of each with the liquid mixture.
- Heat pan until it is sizzling hot (a drop of water sizzles and immediately evaporates when it hits the pan. Sear the halibut for 90 seconds on each side. Reduce the heat to medium and cook each side for an additional 2-3 minutes, until the fish can be easily flaked with a fork.

GRILLED HALIBUT IN SOY-GINGER MARINADE
Halibut is a good, firm fish for grilling, but if you aren't ready to fire up the grill, it can also be cooked in the broiler (which is essentially an upside-down grill).

- To make the marinade, in a small bowl or measuring cup whisk together all the ingredients except the fish. Put the halibut in a small, flat dish with sides, just large enough to hold the fish.
- Pour the marinade over the fillets, and flip the fish several times to coat it. Cover the dish and refrigerate it for at least 30 minutes, and up to 12 hours.
- Preheat the grill (or broiler) to medium-high heat.
- Remove the fish from the marinade, reserving the marinade, and put the halibut on a fish or vegetable grilling tray, if you have one, or on a piece of heavy-duty aluminum foil on the grill.
- Close the grill and cook the fish for 5 - 7 minutes per side, until it flakes easily and is opaque. Baste the fish with the reserved marinade after you flip it, and discard any extra marinade. (Alternatively, cook the fish in a preheated broiler for 10 - 12 minutes, flipping and basting once.)
SOY-GINGER GRILLED SWORDFISH

- In small bowl, combine the orange juice, soy sauce, parsley, lemon juice, ketchup, ginger, oregano and pepper. Set aside 2 tablespoons mixture for basting., Stir oil and garlic into remaining mixture. Place in a large resealable plastic bag; add fish. Seal bag and turn to coat; refrigerate for 30 minutes., Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill fish, covered, over high heat or broil 4 in. from the heat for 3-5 minutes on each side or until fish just turns opaque, basting occasionally with reserved orange juice mixture.

LEMON ROSEMARY MARINATED GRILLED HALIBUT

- Whisk together the wine, lemon juice, olive oil and rosemary in a small shallow baking dish. Add the halibut and turn to coat. Marinate in the refrigerator for 1 hour, turning once. Preheat grill. - Heat one tbsp olive oil in heavy small saucepan over medium heat. Add garlic and chili; sauté until fragrant and lightly golden, about 3 minutes.
- Add soy sauce, brown sugar, vinegar, and 3 tbsp water and bring to a boil, stirring until sugar dissolves.
- Reduce heat to medium and simmer until reduced to 3/4 cup.
- Remove bbq sauce from heat, and whisk in sesame oil. Transfer 1/4 cup bbq sauce to small bowl and reserve for serving.
- Prepare bbq (or grill) to medium heat. Combine bok choy and eggplant in a large bowl. Drizzle with 2 tbsp olive oil and toss to coat. Sprinkle with salt and pepper.
- Drizzle remaining oil over fish and sprinkle with salt and pepper.
- Grill veggies and fish, turning occasionally and basting with the sauce until veggies are tender and slightly charred, and fish is just opaque in center (about 10 minutes for veggies, and 7 for fish).
- Transfer all to plates and sprinkle with green onions and drizzle with remaining bbq sauce.

- Brush lemon juice over halibut fillets. Sprinkle with minced ginger, 1/4 teaspoon salt and pepper., Place fish on an oiled grill rack, skin side down. Grill, covered, over medium heat (or broil 6 in. from heat) until fish just begins to flake easily with a fork, 6-8 minutes., In a large skillet, bring water to a boil over medium-high heat. - Begin by soaking the skewers in water for 20 minutes to prevent them from igniting when placed on the grill.
- With a boning knife, trim any visible fat on the skirt steak. Then, cutting on a bias, slice against the grain in 3-inch strips and set aside in a plastic storage container.
- For the marinade, combine in a large bowl 3/4 cup of the soy sauce, the juice of 2 limes, the pineapple juice, and the sliced onion. Mix well, season with salt and pepper, and pour over the beef. Allow this to marinate in the refrigerator for 1 hour. Remove the beef from the marinade, and skewer with the bamboo.
- For the dipping sauce, in a small bowl combine the remaining 1/4 cup soy sauce, the ginger, garlic, sugar, juice of the remaining 2 limes, the vinegar, and scallions. Check the seasoning, and transfer to a small serving bowl.
- Light the grill or preheat the oven to 375°F.
- To serve, grill or bake the skewers on a hot grill for about 1 minute on each side, and allow to cool. On a large platter, lay out the butter lettuce leaves, then on each leaf, place a few basil and cilantro leaves.
- Rest the skewers of beef on the leaves. Have each guest grab a leaf, remove the skewer, and enjoy with the dipping sauce.
