I created these after a trip up north to Traverse City, Michigan's Cherry Festival. Wonderful with their dried cherries! A big hit wherever I take them!

2 ¼ cups unbleached all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened
½ cup butter flavored shortening (such as Crisco®)
½ cup white sugar
¾ cup brown sugar
2 eggs
1 ½ teaspoons vanilla extract
1 ½ teaspoons almond extract
1 cup dried tart cherries
¾ cup chopped walnuts
½ cup chopped pecans
1 (12 ounce) bag semi-sweet chocolate chunks (such as SACO®)

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease baking sheets. Whisk together the flour, baking soda, and salt; set aside.
  • Beat the unsalted butter, butter flavored shortening, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time; beat in the vanilla extract and almond extract with the last egg. Mix in the flour mixture until just incorporated. Fold in the cherries, walnuts, pecans, and chocolate chunks, mixing just enough to evenly combine. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake in the preheated oven until browned around the edges, 11 to 13 minutes. Cool on cookie sheet for 2 minutes; remove cookies to a wire rack to cool completely.

1 cup dried cherries, chopped
1/3 cup hot water
6 tablespoons shortening
6 tablespoons butter, softened
1-1/2 cups packed brown sugar
1/2 cup sugar
2 large eggs
3 teaspoons grated orange zest
1-1/2 teaspoons vanilla extract
3 cups quick-cooking oats
1-3/4 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup semisweet chocolate chips

Steps:

  • In a small bowl, soak cherries in hot water for at least 10 minutes., Meanwhile, in a large bowl, cream the shortening, butter and sugars until light and fluffy. Beat in the eggs, orange zest and vanilla. Combine the oats, flour, baking soda, cinnamon and salt; gradually add to creamed mixture and mix well. Stir in the chocolate chips and cherries with liquid., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until edges are lightly browned. Cool for 1 minute before removing from pans to wire racks.

200g unsalted butter , at room temperature
85g light muscovado sugar
85g golden caster sugar
1 egg
225g self-raising flour
50g plain chocolate , 50-70% cocoa, roughly chopped
50g white chocolate , roughly chopped
85g natural colour glacé cherry , roughly chopped

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Beat the butter, sugars and egg until smooth, then mix in the flour, chocolates and cherry pieces and ½ tsp salt. Spoon onto non-stick baking sheets in large rough blobs - you'll get 20 out of this mix. Make sure they are well spaced as the cookies grow substantially as they bake. The raw dough can be frozen.
  • Bake for 12-14 mins until just golden, but still quite pale and soft in the middle. If baking from frozen, give them a few mins more. Cool on the sheets for 5 mins, then lift onto racks with a fish slice and leave to cool completely.

1/2 stick unsalted butter, softened (1/4 cup )
3/4 cup brown sugar
1 large egg
1 tsp vanilla extract
1/8 tsp almond extract
Small amount of pink gel food coloring
1 1/2 cups all purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup drained & finely chopped maraschino cherries (plus extra for garnish)
3/4 cup semi-sweet chocolate chips (plus extra for garnish)

Steps:

  • Preheat the oven to 350º F.
  • In a mixing bowl beat the butter and brown sugar with an electric mixer for 1 minute, or until combined. Add in the egg and extracts, beat again.
  • Add in a small amount of pink gel food coloring and mix.
  • In separate small bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to wet ingredients, mixing by hand with a spatula.
  • Add in the finely chopped maraschino cherries and chocolate chips, mix by hand until combined. The batter will be thick.
  • Use a cookie scoop to drop dough balls onto a silicone lined baking sheet. Press additional cherries and chocolate chips into the outside of the dough balls.
  • Bake for 14-16 minutes - be sure not to over bake or the cookies will loose their pink color and turn brown.
  • Allow the cookies to cool to the touch on the baking sheet (about 15 minutes) then move them to a cooling rack.

  • Line 2 baking sheets with parchment paper.

2 cups (175g) uncooked quick cook oats

  • Combine the flour, baking soda, cinnamon and salt in a medium sized bowl and set aside.
  • 2. Cream the butter and sugars together in a large mixer bowl on medium speed until light in color and fluffy. You should be able to see the change in color and texture happen and know it's ready.

1 vanilla bean
1 cup (6 ounces) dried cherries
8 tablespoons (1 stick) unsalted butter, room temperature
1/2 cup sugar
1/2 cup packed light brown sugar
1 large egg
1/2 cup (3 ounces) white chocolate chips
1/2 cup (3 ounces) semisweet chocolate chips
1/2 cup (2 1/2 ounces) chopped blanched hazelnuts or walnuts

2 large baking sheets; 2 nonstick baking mats such as Silpats or parchment paper

Steps:

  • Position a rack in the upper third of the oven and a second rack in the lower third then preheat to 350°F. Line 2 large baking sheets with nonstick baking mats or parchment paper.
  • In a large bowl, sift together the flour, baking soda, and salt.
  • Using a small knife split the vanilla bean lengthwise then scrape the seeds from the pod into a small bowl and reserve both.
  • In a small bowl, combine the scraped vanilla bean pod (not the seeds), the dried cherries, and about 1 cup boiling water. Let stand 5 minutes then drain, reserving the cherries and discarding the vanilla bean pod.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the butter, sugar, and brown sugar and beat on medium speed, scraping the bowl occasionally, until light and fluffy, about 2 minutes. Add the egg and the vanilla bean seeds and beat on medium until combined, about 1 minute. With the mixer on low, add the flour mixture in 3 batches, stirring until just combined. Add the cherries, white and semisweet chocolate chips, and the hazelnuts or walnuts and stir until just incorporated.
  • Drop the dough by heaping tablespoons onto the prepared baking sheets, leaving about 2 inches between cookies.
