- Add the lime juice and alcoholic or non-alcoholic mixer (whiskey, gin, caper juice or simple syrup) to highball glass and stir.
- Fill with ice and top with sparkling water. Garnish with lime wedges.
CHERRY-LIME RICKEY

Steps:
- Combine the cherries, sugar and 1 cup water in a medium saucepan over high heat. Bring to a boil and reduce to a simmer. Carefully smash the cherries with a potato masher, then simmer the mixture until slightly reduced and dark red, about 10 minutes. Let cool for 10 minutes.
- Strain the mixture through a strainer into a heatproof container, pressing on the cherry solids to extract all the juice. There should be about 1 3/4 cups of syrup. Let cool for 30 minutes.
- Combine the cherry syrup with the limeade and lime juice in a pitcher and stir well. There will be about 3 cups total.
- To serve: Either stir in 3 cups water if you want a still drink, or mix equal parts of the drink mix with seltzer in a glass. Serve over ice with frozen cherries and lime wheels.

- Combine the lime juice and chamomile simple syrup in a large (16- to 18-ounce) tumbler and stir to combine. Taste and add more lime juice or syrup, if you'd like.
- Fill with ice, top off with the seltzer and gently mix to combine. Garnish with lime slices, or an organic edible flower, if you are feeling extra fancy.

- Fill 2 tall glasses three-fourths full with ice. Add half the simple syrup, lime juice, orange juice and bitters to each glass. Top each with 1/2 cup club soda; stir. Garnish as desired.

- Combine the lime juice and Grape Simple Syrup in a highball or wine glass. Top off with some ginger ale or sparking water. Add ice, then stir and serve immediately.
- Combine the jelly and 1/2 cup water in a medium saucepot. Bring to a simmer over medium-low heat and stir until the jelly is dissolved. Let simmer until syrupy, 3 to 4 minutes. Remove from the heat and cool completely.

This homemade Thai iced tea gets its complex flavor from black tea, rooibos tea, star anise and cloves, and its sweetness from condensed milk. Adapted from the cookbook "Bangkok" by Leela Punyaratabandhu, this version is hardly typical: Most Thai iced tea sold on the streets of Bangkok - or in Thai restaurants stateside - contains an immoderate amount of sweetened condensed milk and uses a store-bought mix, which contains food coloring. The tea blend used here is intense on its own, but mellowed by ice and milk. Chill the tea fully before pouring it over ice so its flavors don't get diluted.

- Add 4 cups water to a medium saucepan. Cover with a lid and bring to a boil. Remove from the heat. Add rooibos tea, black tea, sugar, star anise and cloves; cover and let steep, 10 minutes. Strain tea, pressing on tea leaves and spices to extract as much liquid as possible, then discarding solids. Refrigerate tea until chilled, at least 1 hour.
- In a measuring glass, stir together the half-and-half, condensed milk and vanilla extract.
- Fill a pint glass with ice. Add 3/4 cup tea mixture and top with about 2½ tablespoons condensed milk mixture. Serve immediately.
