HEALTHY RED, WHITE AND BLUE FROZEN POPS

Healthy Red, White and Blue Frozen Pops image

These healthy frozen pops are salute-worthy since they're packed with vitamin C and have even a little fiber (2 grams per pop) thanks to the fresh berries. And the best part is that you can get your red, white and blue fix without using artificial food coloring.

Categories     dessert

Time 8h50m

Yield 6 ice pops

Number Of Ingredients 6

2 cups strawberries, hulled and roughly chopped
3 tablespoons coconut cream
2 tablespoon honey
1/2 cup unsweetened coconut milk
2 tablespoons lime juice
2 cups blueberries

Steps:

  • Put six 3-to 4-ounce ice pop molds in the freezer for 30 minutes.
  • Combine the strawberries and 1 tablespoon each coconut cream and honey in a blender. Puree until smooth. Pour into a liquid measuring cup and set aside. Rinse out the blender.
  • Combine coconut milk, 1 tablespoon each coconut cream and lime juice in the blender. Puree until smooth.
  • Evenly divide strawberry puree between the frozen pop molds. Carefully layer the coconut milk over the strawberry puree. Freeze for 30 minutes. Rinse out the blender.
  • When you are ready to complete the frozen pops, combine the blueberries and the remaining 1 tablespoon each coconut cream, honey and lime juice in the blender. Puree until smooth (see Cook's Note).
  • Remove the frozen pop molds from the freezer and fill with the blueberry puree, and insert the frozen pop mold stick.
  • Freeze until set, at least 4 hours up to overnight. Let sit at room temperature for 5 minutes before unmolding and serving.

RED WHITE AND BLUE POPSICLES

Red White and Blue Popsicles image

This was found in Family Fun magazine July 2007 issue. I just used regular popsicle molds, but their suggestion for the cones would make them look like more authentic Bomb Pops.

Provided by Dine Dish

Categories     Frozen Desserts

Time 4h5m

Yield 6 serving(s)

Number Of Ingredients 7

3 cups vanilla yogurt
red food coloring
white food coloring
blue food coloring
wax paper
6 sugar ice cream cones
6 wooden popsicle sticks

Steps:

  • To make a half dozen pops, tint 1/2 cup of the yogurt with red food coloring and 1 1/2 cups with blue food coloring. Leave the rest plain.
  • Make waxed paper cone liners by folding six 12-inch square sheets into triangles, wrapping each around a sugar cone, and using tape to hold the shape. Then place the paper cones inside the sugar cones.
  • Fill each cone with 1 tablespoon red yogurt, followed by 2 tablespoons white yogurt, then 3 tablespoons blue yogurt. Insert a Popsicle stick and freeze the pops until firm, about 4 hours, using the cone box with six circles cut out to keep them upright.

RED, WHITE, AND BLUEBERRY POPS

Red, White, and Blueberry Pops image

Got 30 minutes? Then you can make these quick patrioticly-hued, red, white, and blue pops, which are a perfect dessert for the Fourth of July. You can also make these a non-holiday cool treat using other berries or fruit in other colors.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Time 30m

Yield Makes 6 to 8

Number Of Ingredients 6

2 cups halved hulled strawberries
6 tablespoons sugar, divided
5 tablespoons lime juice (from 3 limes), divided
1/2 cup full-fat plain yogurt
3 tablespoons heavy cream
2 cups blueberries

Steps:

  • In a blender, combine strawberries, 2 tablespoons sugar, and 1 1/2 tablespoons lime juice. Puree, scraping down sides as needed. Pour through a fine-mesh sieve into a bowl, pressing on solids; discard solids. Divide puree among six 4-ounce or eight 3-ounce ice-pop molds. Freeze until firm, about 30 minutes.
  • Combine yogurt, cream, and 2 tablespoons each sugar and lime juice. Remove molds from freezer and top with yogurt mixture; insert ice-pop sticks. Freeze until firm, about 30 minutes.
  • In clean blender, puree blueberries, remaining 2 tablespoons sugar, and remaining 1 1/2 tablespoons lime juice. Pour through clean sieve into a bowl, pressing on solids; discard solids. Remove molds from freezer and top with blueberry puree. Freeze until solid, 6 hours more (or up to 1 week). Just before serving, briefly run molds under hot water to release pops.

Pour about 2 tablespoons into each of 9 popsicle molds (it should fill each mold about 1/3 of the way; if you have extra, pour it into the 10th mold). Freeze this layer until solid, or nearly solid for a more “tie-dyed” look.

  • To a blender add 1yogurt, dates and vanilla. To make it blue add blue majik powder or blue butterfly pea powder. If you have trouble getting your blender going you may need to add a couple tablespoons of plant-based milk (I use almond milk and start with 1 tablespoon and increase to a maximum of 4 tablespoons). If you don’t have blue spirulina or blue butterfly pea powder on hand you can use blueberries but it will turn out more purple than blue. Pour the blue layer into the popsicle molds filling each 1/3 of the way up. Set in freezer a couple minutes before adding the next layer so the colors don’t bleed together.
  • Carefully spoon vanilla sweetened plant-based yogurt into the molds until they are 2/3 full. Place in freezer to set while you prepare the red layer. I love Culiina brand.
  • To the blender add yogurt, beet root powder, dates and vanilla extract. Blend everything together just like the blue layer adding almond milk to thin as needed. If you don’t have beet root powder you could blend in cherries but it might look slightly more pink than red unless you use a lot. Pour the red layer until the molds are full. Cover and insert wooden popsicle sticks. Place in freezer overnight ideally or at least a couple hours to fully freeze.
  • To release the pops simply run the body of the popsicle mold under hot water for a couple seconds. Here are the popsicle molds pictured (affiliate link).

  • Puree the blueberries in a blender and set aside. Stir 1 tbsp of the yoghurt into the blueberries and spoon equal amount into the bottom of your molds. I used 2 tbsp for each.Place the blueberry puree into the refrigerator to keep cold. Freeze until solid.
  • Spoon some yoghurt into the molds. My molds took about 1 1/2 tbsp. Freeze. Puree your strawberries with 1 tbsp yoghurt and spoon into the molds. Again mine took about 1 1/2 tbsp. Place molds in the freezer and the strawberry puree in the refrigerator to keep cool. Once frozen remove the mold from the freezer and spoon in another 1 1/2 tbsp of yoghurt. Continue the spooning/freezing process until your layers have reached the level that your popsicle stick will touch. Here is the somewhat tricky part. Freeze the first layer that the popsicle sticks will reach about 2/3 of the time as the other layers. Now jam the sticks into that layer so they stand up. Carefully put in the next layer of strawberry and place in the fridge. It might get a little messier at this point. I tried to have a prettier side and a messier side. Keep on layering and freezing until you have reached the top of the mold. You can see that I ended up with about four layers of white and three of red. Un-mold when ready t

  • To begin, make your white stars by making white, star-shaped "ice cubes" out of the greek yogurt. You can use coconut milk, coconut cream, or coconut yogurt instead to make these vegan and paleo. • place all ‘red’ layer ingredients in a blender and blend until smooth. Pour one tablespoon of this mixture into your pop molds and place molds into freezer. Pour the rest of the red mix into a separate cup and set aside.
  • Add all ingredients to a blender and mix until smooth. Remove 6 tablespoons of the white mixture, pour into a separate cup and set aside – this is the cup we will use for the blue layer. Now, using a tablespoon, pour one tablespoon of white mixture (from the blender) into the pop molds. Make sure you wait until the first red layer is frozen, usually takes about 15 to 20 minutes, if not your colors will mix, which is not a big deal and still looks pretty but just a tip. Pop back into the freezer to allow the white layer to freeze.
  • Continue alternating the colors – one tablespoon of red and one tablespoon of white, making sure to freeze the molds for about 15 minutes in between each color. If using the same size pops as I did – you’ll get around 5 to 6 layers. Once you have about 1 inch of space left up top, leave it empty for the blue layer.
  • There are two ways you can finish off your pops. Option A is using blue spirulina for a natural food coloring alternative (the brand that I use has absolutely no after taste), or you can use your own natural food coloring of your choosing. If opting for option A – go ahead and mix 1/8 teaspoon of blue spirulina (or your food coloring of choice) to 6 tablespoons of white coconut mix that we separated earlier. Using a tablespoon, pour the blue layer into the pop molds.
