From one simple bread recipe like this, there's a million things you can do - big ones, small ones, in a tin, on a tray, get creative. There are also loads of lovely flours you can experiment with - wholewheat, rye, spelt, using a blend of a couple of different ones. Plus, making bread is a great thing to do with the kids - they'll love it.

1 x 7 g sachet of dried yeast
1 kg strong bread flour, plus extra for dusting

Steps:

  • Pour 650ml of tepid water into a large bowl. Add the yeast and mix with a fork for a couple of minutes.
  • Pour in most of the flour and half a teaspoon of sea salt, then use a fork to mix together until you can't move it anymore.
  • Now get your clean hands in there and bring it together as a ball of dough, adding more flour as you need to stop your hands and the dough sticking.
  • Transfer the dough to a flour-dusted surface and keep it moving, kneading, pushing and stretching it for 5 minutes, or until you have a silky and elastic dough.
  • Use your floured hands to shape the dough into a rough ball, put it in a bowl, flour the top and cover with a clean, damp tea towel. Allow it to prove for about an hour or an hour and 30 minutes, or until doubled in size - ideally in a warm, draught-free place.
  • Once the dough has doubled in size, knock the air out by punching it with your fist, then kneading for 30 seconds.
  • You can now shape it or flavour it as required - folded, filled, traybaked, whatever - and leave it to prove for a second time, for 30 minutes to an hour, or until it has doubled in size once more.
  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Carefully transfer your bread dough to the oven and gently close the door. Bake for about 35 minutes, or until golden. You can tell if it's cooked by tapping its bottom - if it sounds hollow it's done; if it doesn't then pop it back in for a little longer.
  • Once cooked, place your loaf on a cooling rack and allow to cool.

3 cups (450g) flour (, bread or plain/all purpose (Note 1))
2 tsp instant or rapid rise yeast ((Note 2 for normal / active dry yeast))
2 tsp cooking / kosher salt (, NOT table salt (Note 3))
1 1/2 cups (375 ml) very warm tap water (, NOT boiling or super hot (ie up to 55°C/130°F) (Note 4))
1 1/2 tbsp flour (, for dusting)

Steps:

  • Mix Dough: Mix flour, yeast and salt in a large bowl. Add water, then use the handle of a wooden spoon to mix until all the flour is incorporated. Dough will be wet and sloppy - not kneadable, but not runny like cake batter. Adjust with more water or flour if needed for right consistency (see video at 17 sec, Note 5).
  • Rise: Cover with cling wrap or plate, leave on counter for 2 - 3 hours until it doubles in volume, it's wobbly like jelly and the top is bubbly (see video at 24 seconds). If after 1 hour it doesn't seem to be rising, move it somewhere warmer (Note 6).
  • Optional - refrigerate for flavour development (Note 9): At this stage, you can either bake immediately (move onto Step 5) or refrigerate for up to 3 days.
  • Take chill out of refrigerated dough - if you refrigerated dough per above, leave the bowl on the counter for 45 - 60 minutes while the oven is preheating. Cold dough does not rise as well.
  • Preheat oven (Note 7) - Put dutch oven in oven with lid on (26cm/10" or larger). Preheat to 230°C/450°F (220° fan) 30 minutes prior to baking. (Note 8 for no dutch oven)
  • Shape dough: Sprinkle work surface with 1 tbsp flour, scrape dough out of bowl. Sprinkle top with 1/2 tbsp flour.
  • Using a dough scraper or anything of similar shape (cake server, large knife, spatula), fold the sides inwards (about 6 folds) to roughly form a roundish shape. Don't be too meticulous here - you're about to deform it, it's more about deflating the bubbles in the dough and forming a shape you can move.
  • Transfer to paper: Slide a large piece of parchment/baking paper (not wax paper) next to the dough, then flip the dough upside down onto the paper (ie seam side down, smooth side up). Slide/push it towards the middle, then reshape it into a round(ish) shape. Don't get too hung up about shape. In fact, lopsided = more ridges = more crunchy bits!
  • Dough in pot: Remove piping hot dutch oven from oven. Use paper to place dough into pot, place lid on.
  • Bake 30 minutes covered, then 12 minutes uncovered or until deep golden and crispy.
  • Cool on rack for 10 minutes before slicing.

Need bread fast? This soft and fluffy bread only takes 60 minutes to make and is pretty much the most amazing bread I've ever had. No special pans or bread machines. You won't believe how easy it is to make your own homemade bread.

28 ounces bread flour (or all purpose (about 5 1/2 cups, spooned and leveled))
10 grams instant yeast (needs to be instant (about 3 teaspoons))
2 ounces sugar (4 Tablespoons)
16 ounces warm milk (110ºF) (or water (two cups))
1 1/2 tsp salt
2 ounces melted unsalted butter (1/4 cup)

Steps:

  • Heat milk to 110ºF-115ºF
  • Combine flour, instant yeast, sugar, and milk in the bowl of your stand mixer with the dough hook attached and mix for one minute
  • Add in salt and melted butter
  • Add in a 1/4 cup more flour if the dough is not sticking to the bowl because of the butter. If the dough is still not sticking to the bowl, add in 1-2 Tablespoons of water.
  • Mix for 5 minutes on speed 2
  • After 5 minutes, take a piece of dough and stretch it between your fingers. If you can make a very thin "window" that does not tear then you have developed enough gluten and you can shape your dough.
  • If the window tears, then mix for 2 more minutes.
  • Knead the dough on a lightly floured surface for 4-5 turns until you can form a smooth ball
  • Coat a large bowl in a little olive oil
  • Place the dough top side down into the bowl to get the top of the dough covered in oil then flip it over. Cover with a cloth and place in a warm area for 25 minutes to rise until the dough doubles in size (about 25 minutes) *see notes*
  • Preheat your oven to 375ºF
  • Divide your dough into two loaves (or more if you want to make hoagie's or rolls)
  • Let your loaves rest for 5 minutes
  • Brush your loaves with egg wash to promote a nice golden brown color
  • Use a sharp knife to make three slashes at a 30º angle in the top of the loaf, about 1/4" deep. These slashes make the loaves look nice and also keeps the crust from tearing while it bakes in the oven.
  • Bake your loaves for about 25-30 minutes or until golden brown. You can also use a thermometer to check the center of your bread. If the temperature reads 190º - 200º your bread is done.

  • Spread the batter into a well-greased bread pan.
  • Pour the melted butter over the batter.

You can't beat freshly baked bread - crack this super simple bread recipe and conquer any loaf!

1 kg strong bread flour
625 ml tepid water
X3 7 g sachets of dried yeast, or 30g fresh yeast
2 tablespoons sugar
1 level tablespoon fine sea salt
flour, for dusting

Steps:

  • Stage 1: making a well Pile the flour on to a clean surface and make a large well in the centre. Pour half your water into the well, then add your yeast, sugar and salt and stir with a fork.
  • Stage 2: getting it together Slowly, but confidently, bring in the flour from the inside of the well. (You don't want to break the walls of the well, or the water will go everywhere.) Continue to bring the flour in to the centre until you get a stodgy, porridgey consistency - then add the remaining water. Continue to mix until it's stodgy again, then you can be more aggressive, bringing in all the flour, making the mix less sticky. Flour your hands and pat and push the dough together with all the remaining flour. (Certain flours need a little more or less water, so feel free to adjust.)
  • Stage 3: kneading! This is where you get stuck in. With a bit of elbow grease, simply push, fold, slap and roll the dough around, over and over, for 4 or 5 minutes until you have a silky and elastic dough.
  • Stage 4: first prove Flour the top of your dough. Put it in a bowl, cover with cling film, and allow it to prove for about half an hour until doubled in size - ideally in a warm, moist, draught-free place. This will improve the flavour and texture of your dough and it's always exciting to know that the old yeast has kicked into action.
  • Stage 5: second prove, flavouring and shaping Once the dough has doubled in size, knock the air out for 30 seconds by bashing it and squashing it. You can now shape it or flavour it as required - folded, filled, tray-baked, whatever - and leave it to prove for a second time for 30 minutes to an hour until it has doubled in size once more. This is the most important part, as the second prove will give it the air that finally ends up being cooked into your bread, giving you the really light, soft texture that we all love in fresh bread. So remember - don't fiddle with it, just let it do its thing.
  • Stage 6: cooking your bread Preheat the oven to 180°C/350°F/gas 4. Very gently place your bread dough on to a flour-dusted baking tray and into the preheated oven. Don't slam the door or you'll lose the air that you need. Bake for 25-30 minutes or until cooked and golden brown. You can tell if it's cooked by tapping its bottom - if it sounds hollow it's done, if it doesn't then pop it back in for a little longer. Once cooked, place on a rack and allow it to cool for at least 30 minutes - fandabidozi. Feel free to freeze any leftover bread.

I had used different bread recipes over the years, and finally came up with my own. I use this recipe for everything... bread, buns, pizza, cinnamon buns, you name it. It turns out every time, and tastes great. My husband loves when I make dinner rolls with these sprinkled with quick oats or poppy seeds! This is my first time posting a recipe- I really hope someone else likes this easy home-made bread recipe as much as I do!

2 1/2 cups warm water
1 1/2 tablespoons instant yeast
1 tablespoon salt
1/4 cup sugar
1/2 cup powdered milk
1 egg
1/3 cup butter (or oil) or 1/3 cup margarine (or oil)
6 cups white flour (I dont measure the flour, this is just an estimate- it could be more, it could be less!)
1 cup whole wheat flour

Steps:

  • Combine water, yeast, salt, sugar, milk powder, egg, and butter in a large mixing bowl- stir with wooden spoon until well mixed.
  • Slowly add the flour while still mixing- you don't have to add whole wheat flour, but I usually add about a cup just to give it some whole wheat flavor; then the rest can be white flour- you can do half and half also, or just all white- you are the cook, mix it up.
  • Continue to add the flour to the dough (you will have to use your hands to mix it now)
  • Once the dough becomes more of a ball and not so runny, pour the dough out of the bowl onto a floured countertop; knead dough with your hands for 10-15 minutes, adding more flour if needed. Keep adding flour until the dough is JUST sticky when you hold it- but not too sticky- you don't want it stuck to your fingers. Also, if you add too much flour, your bread will become heavy- so watch how much flour you add to your mixture!
  • Shape dough into ball, place in a large bowl lightly rubbed with oil; cover with a light towel- let rise until doubled in size.
  • Separate dough in half; shape into dough roll and place in lightly oiled bread pans. Brush with a beaten egg to give it that nice golden look when it comes out of the oven or brush lightly with water and sprinkle lightly with quick oats or poppy seeds- the possibilities are endless!
  • Let loaves rise for 15-20 minutes- this is a personal choice, some people do not like big loaves of bread, while others do- so keep an eye on how big your loaves get, it is a personal choice of course.
  • Place in a 350 degree oven for 20-30 minutes, or until done.(cooking time varies, depending on oven).
  • Let sit in pans for 5 minutes then take the loaves out and set on wire rack to cool.
  • Its great for toast, sandwiches, or still hot out of the oven as a snack!

QUICK YEAST BREAD

If you don't have a bread machine, this is the easiest yeast dough recipe by far. There is no overbearing yeast flavour and it is a good dense bread. Please note: time to make includes rising time.

1/4 cup cooking oil

  • Put 4 cups of the flour, yeast, sugar and salt into large bowl.
  • Pour in hot water and oil and mix until combined- it will be sticky.
  • Add the remaining flour in increments until dough is no longer sticky.
  • Knead for about 5 minutes until dough is elastic and smooth.
  • Place dough back into bowl and cover with a damp teatowel and let it rise until double its size- about 1/2 hour.
  • Punch it down and divide dough into two pieces.
  • Roll pieces long enough to fill two well oiled loaf pans and leave to rise until dough has reached the rim of the pan.
  • Bake at 400F for 40 minutes.
  • Rub hot breads with water and wrap in a teatowel to'sweat' to soften the crust.

1 package (1/4 ounce) active dry yeast
3 tablespoons sugar plus 1/2 teaspoon sugar
2-1/4 cups warm water (110° to 115°)

6-1/4 to 6-3/4 cups bread flour

  • In a large bowl, dissolve yeast and 1/2 teaspoon sugar in warm water; let stand until bubbles form on surface. Whisk together remaining 3 tablespoons sugar, salt and 3 cups flour. 1 1/2 tablespoons sugar
1 tablespoon vegetable shortening
1/2 cup milk
3 cups all-purpose flour (approximately)

Steps:

  • Gather the ingredients.
  • Pour the warm water into a large bowl.
  • Slowly stir in the yeast until it is dissolved.
  • Add the salt, sugar, and milk to the bowl. Stir until everything is thoroughly combined.
  • Mix in the shortening and the first 2 cups of flour. The shortening will continue to integrate into the dough while kneading, so it may be small lumps at this stage.
  • If needed, begin adding more flour, 1 tablespoon at a time, until the dough chases the spoon around the bowl.
  • Turn the dough out onto a floured board and knead for about 10 minutes. Add small spoonfuls of flour as necessary, until the dough is soft and smooth (not sticky to the touch). You may not need all of the flour, or you may need a little more. Keep the surface floured to prevent the dough from sticking to the board and your hands.
  • Put the dough in a greased or buttered bowl and turn the dough over so the other side is also greased.
  • Cover and let the dough rise in a warm, draft-free spot, such as an oven with the light on, for about 1 hour, or until doubled.
  • Punch down the dough.
  • Turn the dough out onto a floured board and knead for 5 minutes.
  • Form the dough into a loaf (here are some helpful tips) and set it gently into a greased bread pan .
  • Cover and let rise for about 30 minutes, or until doubled. If your kitchen is chilly or drafty, place the pan in a cool oven with the light on for this step, or you may not get a proper rise. Preheat the oven to 375 F.
  • Score the risen dough by cutting three slashes across the top with a sharp knife. While not essential, this step controls the direction in which the bread expands as it bakes. (If you forget to do it, the bread will taste the same.)
  • Place the bread in the oven and bake for about 35 to 45 minutes or until golden brown.
  • Turn out the loaf of bread and let it cool completely on a rack or clean dish towel before slicing.
  • Serve and enjoy.

BREAD MAKING TIME!! MMMMMMMM
1 1/4 c water, warm
3 Tbsp oil
1/2 c potato flakes
4 Tbsp sugar
3 c flour
1 pkg active dry yeast
1 tsp salt
1 tsp sugar (for yeast)

Steps:

  • 1. Start by activating the yeast with the warm water and 1 tsp of sugar, quick stir and set aside.
  • 2. Put flour, sugar, salt and potato flakes in a mixing bowl. Give it a quick stir to mix ingredients together.
  • 3. This is what my yeast looked like after about 15-18 minutes, I had to leave it for a several minutes, to my surprise it had grown!
  • 4. Add the activated yeast mixture and oil to the flour and stir by hand using a spoon, I used a plastic one shaped just like a wooden spoon.
  • 5. Once it comes together put out on a lightly floured surface and knead for about 2 minutes till dough is nice and smooth.
  • 6. Place dough in a very lightly oiled bowl and let rise about 1 - 2 hours, doubles or more in size.
  • 7. Once its nice and puffy give it a punch down and cut it into pieces and stretch three pieces to long fat strips and braid them. The rest of dough just stretch to a nice long loaf, like mine. I also sprinkled Lawry's seasoning salt & garlic powder on the braided bread and the other is plain.
  • 8. Let sit for another 20 minutes or so and brush with egg whites and bake for 24 minutes on 375 degrees
  • 9. Take bread out of oven it should be golden brown, if not let it go back in and watch it closely! I put mine on a cooling rack to cool down.

Ditch the yeast and the eggs for this fast and simple 5-ingredient recipe for Easy Homemade Bread, including four flavor variations.

2 cups all-purpose flour, plus more for kneading
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup buttermilk or buttermilk substitute (See Kelly's Notes)
3 Tablespoons unsalted butter, melted and divided

Steps:

  • Preheat the oven to 375°F.
  • In a large bowl, whisk together the flour, baking soda and salt.
  • Add the buttermilk and 2 tablespoons melted butter and mix just until combined.
  • Generously flour your work surface. Scrape the dough onto your work surface then sprinkle the top of it with additional flour. With very light pressure, turn the dough so that it is coated on all sides with flour then knead it a maximum of eight times. Shape it into a 6-inch domed round.
  • Transfer the dough to a nonstick baking sheet or a baking sheet lined with parchment paper.
  • Using a sharp knife, cut a large "X" across the top then brush the top with the remaining 1 tablespoon melted butter.
  • Bake the bread for about 35 minutes or until it is no longer doughy in the center. Remove it from the oven and set it aside to cool before slicing and serving.

500 g plain flour (regular cake or all purpose flour not bread or wholewheat / wholegrain)
2 tsp baking powder
1 tsp salt
310 ml milk (or water with a spoon of oil or melted butter)

Steps:

  • Test the baking powder is still good by putting a teaspoon in a small dish and pouring boiling water over. It should immediately bubble and fizz vigorously.
  • Heat the oven to 190°C Fan (210°C regular) / 375°F / GM 6. Place a baking stone or heavy baking sheet in the oven to heat.
  • Mix the dry ingredients. Stir in the milk, and stir the ingredients until the milk is mixed with with flour and forms a dough. It's easiest to do this with your hands rather than a wooden spoon.
  • Turn the dough out onto your work surface and knead briefly until the dough has a uniform consistency.
  • Shape the dough into a round disc, about an inch to an inch and a half (about 3 cm) thick. Score the top deeply with an X. This is important! Don't make a round ball of dough as it won't cook in the middle.
  • Bake on the hot stone or baking sheet for about 35 minutes until pale brown. (This loaf won't turn a deep gold so don't wait too long to check it.) When ready, it should sound hollow when tapped on the bottom.

⅛ teaspoon cayenne pepper
¼ cup cold butter
1 cup sharp cheddar (shredded)
2 tablespoons parmesan cheese (shredded)
1 green onion (finely chopped)
2 eggs
1 cup milk
3 tablespoons sugar

Steps:

  • Preheat oven to 350°F. Grease an 8" x 4" loaf pan.
  • Whisk dry ingredients in a medium bowl.
  • Using a pastry cutter or a fork, cut in butter. Stir in cheeses and green onion.
  • In a separate bowl, whisk eggs until foamy. Add milk and sugar.
  • Add wet ingredients to the dry mixture and stir just until moistened, do not overmix.
  • Pour into prepared pan and bake 50 minutes or until a toothpick comes out clean.
