Number Of Ingredients 26

3 cups julienne green Papayas
1 cup julienne carrot
1 English cucumber, julienne
1 cup mung bean sprouts
1 cup julienne diakon radish
1/2 cup julienne scallions, 2-inch pieces
1/4 cup chiffonade fresh mint leaves
1/4 cup rice vinegar
3 tablespoons mirin
1/2 teaspoon sesame oil
1 tablespoon soy sauce
2 tablespoons fish sauce
1 teaspoon chili sauce
1/4 cup olive oil
1 cup diced lemongrass
3 tablespoons minced fresh ginger
1 tablespoon minced garlic
1/2 cup white wine
3 tablespoons fish sauce
2 tablespoons soy sauce
2 tablespoons lemon juice
6 chicken thighs, cut into strips
Bamboo skewers, soaked in water for 20 minutes
1/2 lemon
Chopped peanuts, for garnish
Chopped scallions, for garnish

Steps:

  • For the Papaya Salad:
  • Mix all ingredients, toss with vinaigrette, chill and serve in 30 minutes

GREEN PAPAYA SLAW

Yield Serves 4

Number Of Ingredients 0

Steps:

  • Whisk together 2 tablespoons Asian fish sauce such as nam pla, 1 tablespoon plus 1 1/2 teaspoons peanut oil, 1/4 cup fresh lime juice, 1 tablespoon plus 1 teaspoon palm sugar, and 2 tablespoons tiny dried shrimp in a large bowl. Add 1 peeled and very thinly sliced shallot and 1 fresh Thai chile, thinly sliced crosswise, and let stand for 15 minutes, then add 1/2 green papaya, peeled, seeded, and julienned, and 1 peeled and julienned medium carrot and let stand for 15 minutes to 30 minutes longer. Tear 2 tablespoons fresh mint leaves and 1/4 cup cilantro leaves; crush 1/4 cup peanuts. Stir herbs and nuts into salad. Taste and adjust seasoning with additional fish sauce, lime juice, sugar, and chile so there is a proper balance of hot, sour, salty, and sweet. Serve immediately.
  • Green papaya can be found in most Asian markets. The flesh should be pale green and the seeds should be white. If the flesh is not green and the seeds are gray or black, the papaya is too ripe and will be too sweet. As a substitute, try a combination of julienned carrot, jícama, and Belgian endive.
  • Palm sugar, from the Palmyra palm or the date palm, is golden brown in color and sold in many guises (most often in blocks or tins or as a paste in tubes). It is available at Asian markets. Light brown sugar can be substituted.
  • Dried shrimp are used in Asian and Latin American cooking. Look for them in Asian markets.

Basil Fried Rice with Quail Eggs, Green Papaya Slaw and Thai Sausage image

Provided by Food Network

Time P1DT1h15m

Yield 6 servings

Number Of Ingredients 29

1 3/4 cups (12-ounces) Thai jasmine rice
1 stalk lemongrass, smashed and cut in large pieces
1 shallot, peeled
1 kaffir lime leaf
1 clove garlic, peeled
2 tablespoons vegetable oil
2 teaspoons finely grated fresh ginger
1 tablespoon finely chopped shallot
2 tablespoons soy sauce
1 tablespoon Thai fish sauce
4 Thai basil leaves, torn
3 fresh mint leaves, torn
3 sprigs fresh cilantro, roughly chopped
Juice of 1 lime
Green Papaya Slaw, recipe follows
To serve
Olive oil, for frying
12 links Thai sausage
6 quail eggs
Harissa sauce, for garnish
1/3 cup salted peanuts, chopped
1/2 tablespoon sugar
1 clove garlic, finely minced
Juice of 2 limes
1 tablespoon fish sauce
1 green papaya, peeled and julienned
3 fresh scallions, thinly sliced
5 sprigs fresh cilantro, leaves picked and sliced
1/2 tablespoon minced mild red or green chile

Steps:

  • Cook the rice in a 4-quart saucepan of boiling salted water with the lemongrass, shallot, kaffir lime leaf, and garlic, stirring occasionally, until tender, about 10 to 15 minutes. Drain the rice and discard the lemongrass, shallot, lime leaf, and garlic.
  • Heat the vegetable oil in a large skillet over medium high heat. Add the ginger and shallot. Cook, stirring frequently, until the mixture is translucent. Add the cooked rice, soy sauce, fish sauce, Thai basil, mint leaves, and cilantro and toss until well combined. Add the lime juice and adjust the seasoning, if necessary.
  • In a large skillet or on a plancha (griddle) on high heat, sear the sausage in olive oil on all sides until cooked through.
  • Heat a nonstick skillet over high heat and add enough oil to thinly coat the bottom of the pan. Cook the quail eggs sunny side up.
  • For each serving, spoon basil fried rice onto the bottom of 6 warm plates and slide a quail egg on top. Place a spoonful of green papaya slaw on the side and arrange two sausages on top. Garnish the plate with a few drops of harissa sauce and a sprinkle of peanuts, and serve hot.
  • In a small pot, combine the sugar, garlic, lime juice, and fish sauce and simmer until the sugar is dissolved. Let the mixture cool completely.
  • In a nonreactive bowl, combine the papaya, scallion, cilantro, chile, and lime juice mixture. Toss to combine the ingredients and refrigerate, covered, for at least one day before serving.

GREEN PAPAYA SALAD WITH LIME AND PEPITAS

Green Papaya Salad with Lime and Pepitas image

Provided by Guy Fieri

Categories     side-dish

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 23

1/4 cup olive oil
2 tablespoons mirin
2 tablespoons fish sauce
2 tablespoons seasoned rice vinegar
1 tablespoon low-sodium soy sauce
2 teaspoons sugar
Zest and juice of 2 limes
Kosher salt and freshly ground black pepper
3 tablespoons jasmine rice
1/2 teaspoon toasted sesame oil
2 cups green beans, trimmed
1 cup cherry tomatoes
1 cup mung bean sprouts
1/4 cup julienned red onion
4 scallions, julienned
2 green papayas, julienned
1 Thai bird red chile, finely sliced
1 small red bell pepper, julienned
1/2 hothouse seedless cucumber, julienned
1/4 cup chopped fresh Thai basil
1/4 cup chopped fresh mint
1/4 cup pepitas, toasted
Kosher salt and freshly ground black pepper

Steps:

  • For the lime vinaigrette: In a medium bowl, whisk the olive oil, mirin, fish sauce, rice vinegar, soy sauce, sugar, lime zest and juice, and salt and pepper to taste.
  • For the salad: Add the rice to a dry cast-iron skillet set over medium heat and toast, stirring frequently, until nutty and fragrant, 10 to 12 minutes. Transfer to a bowl to cool. Place the rice in a spice grinder and pulse until finely ground (the size of kosher salt). Set aside.
  • Heat the sesame oil in a saute pan over high heat. Add the green beans and cook until well charred on the outside, about 2 minutes. Transfer to a plate and set aside. (The beans should still be almost raw in the middle so they remain crunchy.) Place the cherry tomatoes in the same pan and lightly char; transfer to the plate with the beans and let cool. Cut the tomatoes in half (it's okay if they get a little smashed), and cut the beans into 2-inch-long pieces.
  • In a large bowl, combine the green beans, tomatoes, mung beans, red onions, scallions, papayas, Thai bird chiles, red peppers, cucumbers, basil, mint, pepitas, 1/2 teaspoon salt and pinch of pepper. Drizzle with the lime vinaigrette and mix well. Transfer the salad to a large serving platter and garnish with the toasted ground rice (for fragrance and a crunchy texture).

GREEN PAPAYA SALAD

Green Papaya Salad image

This tangy, piquant salad is a version of the classic Vietnamese dish, which can be served as a first course, or a fiery side dish next to simple grilled meats or fish. It comes from Chris Shepherd, a Houston chef who is trying to tell the story of his city's food, among the most diverse in the country. If Thai chiles are too hot to bear (or not available), substitute other, milder peppers like serrano or jalapeño. Just don't use regular papaya even if it seems unripe; it won't have the right flavor and texture as a true green papaya. And if you can't get green papaya, you can make this with green mango, seeded cucumber, cabbage or kohlrabi. The intense, funky dressing will work with any practically any cooling, crunchy vegetable you've got.

Time 20m

Yield 4 servings

Number Of Ingredients 9

1 tablespoon chopped dried shrimp
1/4 cup fish sauce
1/4 cup sugar
4 garlic cloves, finely grated or minced
1 lime, quartered
1 to 2 Thai chiles, preferably red, stemmed and thinly sliced (or more, if you'd like more heat)
4 cups peeled, shredded green papaya (from 1 medium green papaya)
10 cherry tomatoes, halved
2 tablespoons roasted unsalted peanuts, roughly chopped

Steps:

  • In a large metal or wooden bowl (not glass), stir together dried shrimp, fish sauce, sugar, garlic, lime and chiles. Using a wooden muddler or pestle (or a wooden spoon), lightly pound the ingredients to bruise and release their flavors.
  • Mix shredded papaya and tomatoes into fish sauce mixture, tossing until well combined. Refrigerate until ready to serve, then top with chopped peanuts.

  • Using a vegetable peeler, peel the outer skin of the papaya. If you have a julienne peeler, peel off julienned strips from all around the papaya. If not, cut the papaya in half and scrape out the seeds. Using a mandolin or sharp knife, julienne the papaya. Transfer to a bowl of ice water for 15 minutes to firm up the papaya strips and make them crunchier.
  • Meanwhile, chop the garlic, bird chilies, and peanuts together on a board until finely minced. Add to a mixing bowl along with the salt, sugar, lime juice, and fish sauce. If you have a mortar and pestle, you can also pound these ingredients together to make the dressing, which is more traditional.
  • Crush the long bean pieces with the flat side of your knife until bruised (or with the mortar and pestle, if you have that). Add to the bowl with the dressing, along with the tomatoes.
  • Drain the papaya well and add it to the salad. Toss everything together well, and garnish with more chopped peanuts. Serve.

  • Drain the soaked papaya well and place in a bowl lined with 2 layers of paper towel to absorb excess water. You want to have as little water on the papaya as possible so as to not dilute the dressing.
  • In a large mortar and pestle, pound garlic and chilies until there are no more big chunks (pieces of chili skin are fine).
  • Add palm sugar and mash with the pestle until it turns into a wet paste and all the chunks are dissolved.
