TURKEY AND HASH BROWN CASSEROLE

This recipe is easy to prepare, and one that our whole family enjoys!

¼ cup oil for frying
1 pound frozen hash brown potatoes, thawed
1 pound ground turkey breast
1 large onion, cut into chunks
1 (10 ounce) package frozen broccoli, thawed
1 (10.75 ounce) can reduced fat cream of mushroom soup
1 cup reduced fat cream of celery soup
1 cup shredded fat free Cheddar cheese
⅓ cup skim milk
½ teaspoon garlic powder
¼ teaspoon ground black pepper
seasoned salt to taste
1 medium tomato, diced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8x12 inch casserole dish.
  • Heat oil in a skillet over medium heat and cook hash browns until golden. Spread hash browns over bottom and sides of casserole dish to form a crust. In a separate skillet over medium heat, cook turkey until lightly brown. Mix in onion and cook until tender. Place broccoli in a microwave safe bowl and cook in microwave 4 to 5 minutes on High, or until tender. Spread turkey, onion and broccoli over hash browns in the casserole dish.
  • In a bowl, mix cream of mushroom soup, cream of celery soup, Cheddar cheese, milk, garlic powder, pepper and seasoned salt. Pour over casserole.
  • Bake 25 minutes in the preheated oven, until bubbly. Garnish with chopped tomatoes to serve.

4 ounces olive oil
2 red onions, diced
1 red bell pepper, julienne
1 green bell pepper, julienne
2 jalapenos, diced, and seeded
2 pounds ground turkey breast
1 teaspoon salt
2 teaspoons freshly ground black pepper
2 pounds red potatoes, sliced thin
1/2 cup Roma tomatoes, diced
1/2 lime

Steps:

  • In medium saute pan, add 2 ounces olive oil, onions, peppers and saute until translucent. Add turkey and brown on all sides. Season with salt and pepper.
  • In a separate pan, add 2 ounces of oil, and fry potatoes in oil until crispy. On a serving plate layer the turkey mixture on top of the crispy potatoes.
  • Top with diced roma tomatoes and fresh squeezed lime juice.

8 ounces breakfast sausage
1/2 onion, chopped
1/2 jalapeno, minced
1/2 cup red peppers, chopped
1 1/2 cups red bliss potatoes, cubed and cooked
1 1/2 cups cooked black beans
2 cups "Good Eats" Corn Bread Pudding, cubed, recipe above
1 to 2 cups cooked turkey, cubed
Dash cayenne pepper
Salt and pepper, to taste

Steps:

  • Add the sausage to a heavy skillet over medium high heat and cook until the sausage begins to render some of its fat, about 2 to 3 minutes.
  • Add the onions, jalapeno and peppers to the sausage and cook until soft and translucent. Add the potatoes to the skillet and increase the heat to high. Cook until the potatoes have browned lightly.
  • Add the black beans, pudding, and turkey and stir occasionally. Cook until the hash is thoroughly heated. Season with cayenne, salt, and pepper.

2 tablespoons minced fresh flat-leaf parsley
2 tablespoons minced scallions (white and green parts)

Steps:

  • Melt the butter in a large (10 to 12-inch) saute pan. Add the potatoes, onions, salt, and pepper and cook over medium-low heat for 15 to 20 minutes, turning occasionally with a flat spatula, until the potatoes are evenly browned and cooked through. (Allow the potatoes to cook for 5 minutes before turning.) Turn off the heat and add the parsley and scallions. Serve hot.;

3 cups cubed frozen hash browns, defrosted
1/2 cup onion, chopped, divided
2 tablespoons green peppers, finely chopped
1/8 teaspoon white pepper
1 egg, beaten
1 1/2 cups turkey ham, diced
1 cup swiss cheese, grated
1 cup milk
4 eggs
2 teaspoons prepared mustard
1/4 teaspoon white pepper

Steps:

  • Blot hashbrowns between two paper towels to remove excess water.
  • Combine potatoes, 1/4 cup onion, green pepper and white pepper.
  • Fold in beaten egg.
  • Pat potato mixture evenly into greased 10 inch pie plate to form crust, building up sides to rim.
  • Bake at 400 degrees for 25 minutes or until crust just begins to brown. Remove from oven. (Crust may be prepared to this point, cooled, covered and refrigerated until ready to serve. To reheat place in cold oven; set temperature to 350 degrees. Heat for 10 minutes.).
  • Sprinkle turkey ham, remaining onion and cheese in layers evenly over crust. (Crust should be hot when these ingredients are added.) Set aside.
  • In small bowl, combine the milk, eggs, mustard and white pepper; mix well. Pour over crust ingredients.
  • Place in oven. Bake at 350 degrees for 30-35 minutes or until a knife inserted in center comes out clean. Let stand 5 minutes before cutting.

2 carrots, shredded
1 egg
3/4 cup Italian seasoned breadcrumbs
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic powder
1 (16 ounce) package frozen hash browns, thawed
2 tablespoons butter or 2 tablespoons margarine, melted
1 cup shredded cheddar cheese

Steps:

  • Combine turkey, carrots, egg, Worcestershire sauce, garlic powder, and breadcrumbs and mix well.
  • Spread turkey mixture in the botton and up the sides of a 10-inch pie plate to form the shell.
  • Put thawed hash browns evenly into the turkey shell. Drizzle with melted butter or margarine.
  • Bake for 40 minutes at 350 degrees.
  • Top with cheese and bake another 5-10 minutes.
