1 tablespoon butter
1 cup chopped pecans
2 tablespoons maple syrup
1/8 teaspoon salt
BEANS:
1/4 cup finely chopped shallots
2 tablespoons butter
2 teaspoons all-purpose flour
1/2 teaspoon grated orange zest
Dash cayenne pepper
1-1/2 pounds fresh green beans, trimmed
2/3 cup reduced-sodium chicken broth
1/3 cup orange juice
1 teaspoon fresh sage or 1/4 teaspoon dried sage leaves
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small heavy skillet, melt butter. Add pecans; cook over medium heat until toasted, about 4 minutes. Add syrup and salt; cook and stir for 2-3 minutes or until pecans are glossy. Spread on foil to cool., Meanwhile, in a large skillet, saute shallots in butter until tender; stir in the flour, orange zest and cayenne. Add the remaining ingredients; cover and cook for 5 minutes. Uncover; cook and stir 4-5 minutes longer or until beans are crisp-tender. Transfer to a serving bowl. Sprinkle with pecans.

1/2 cup pecans, coarsely chopped
3/4 pound green beans, stem ends removed
1 tablespoon olive oil
Coarse salt and ground pepper

Steps:

  • Preheat oven to 350 degrees. Place pecans on a rimmed baking sheet; toast until fragrant, 6 to 7 minutes.
  • Meanwhile, set a steamer basket in a large saucepan. Fill with enough water to come just below basket; bring to a simmer. Place green beans in basket; cover, and steam until crisp-tender, 5 to 7 minutes.
  • Transfer green beans to a serving platter; drizzle with oil, and season with salt and pepper. Serve topped with pecans.

  • Cook green beans 5 minutes in 1-inch boiling water, covered. Drain beans and return pan to heat.
  • Add oil and butter pat to the pan. Toss beans in oil and melted butter. Season beans with a little salt and transfer to a serving plate.

3/4 c pecans, chopped coarse
3 Tbsp unsalted butter
2 Tbsp maple syrup
salt and pepper
2 shallots, minced
2/3 tsp grated orange zest
pinch of cayenne pepper
2 tsp all purpose flour
1 1/2 lb green beans, trimmed
2/3 c low-sodium chicken broth
1/3 c orange juice
1 tsp minced fresh sage

Steps:

  • 1. Toast pecans in 12-inch nonstick skillet over medium-high heat, stirring occasionally, until fragrant, about 3 minutes.
  • 2. Off heat, stir in 1 tablespoon butter, maple syrup and 1/8 teaspoon salt. Return skillet to medium heat and cook, stirring constantly, until nuts are dry and glossy, about 45 seconds;transfer to plate and set aside.
  • 3. Wipe out skillet. melt remaining 2 tablespoons butter in skillet over medium heat.
  • 4. Add shallots, orange zest and cayenne, and cook, stirring occasionally, until shallots are softened, about 2 minutes
  • 5. Stir in flour until combined, then add green beans.
  • 6. Add chicken broth, orange juice and sage. Increase heat to medium-high, cover and cook until beans are crisp-tender, about 4 minutes
  • 7. Uncover and cook, stirring occasionally, until beans are tender and sauce has thickened slightly, about 4 minutes. Off heat, season with salt and pepper to taste. Transfer to serving dish, sprinkle with pecans and serve.

1 1/2 lbs fresh green beans, trimmed and cut in 1 inch pieces
2/3 cup olive oil
1 teaspoon dried dill
1/3 cup white wine vinegar
1/2 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 cup coarsely chopped pecans, toasted
1/2 red onion, diced
1 cup feta cheese, crumbled

Steps:

  • Cook beans in boiling water 4 minutes.
  • Drain and plunge into ice water.
  • Drain again and pat dry.
  • In separate bowl, combine next six ingredients.
  • Whisk to emulsify.
  • Place beans in a shallow serving bowl.
  • Sprinkle with pecans, onion, and feta.
  • Just before serving, pour dressing over all and toss.

I served these at Thanksgiving and they were a hit!

1 pound(s) fresh green beans (or frozen)
1 cup(s) chopped pecans
1/4 stick(s) butter
1 teaspoon(s) minced garlic (or less, to your liking)

Steps:

  • If using fresh green beans, remove tips and cut beans in half.
  • Bring a pot of water to boil and add green beans (fresh or frozen) and cook until done. Drain.
  • While green beans are cooking, toast pecans. Spread them on a cookie sheet and toast them in a 350 degree oven for about 5 minutes.
  • Melt butter in a skillet and add minced garlic and saute for about 1 minute. Add green beans and toasted pecans and toss gently until beans are coated with melted butter. Transfer to a serving dish and enjoy!

1/2 cup pecan halves and pieces (2 ounces)
2 1/2 pounds green beans, trimmed
5 tablespoons unsalted butter
1/3 cup shallot, finely chopped (about 2 medium)
3 tablespoons packed light brown sugar
1 teaspoon kosher salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste

Steps:

  • Heat oven to 350°F with rack in middle.
  • Spread out pecans on a rimmed sheet pan and bake in oven until pale golden on inside, about 6 to 8 minutes. Cool and coarsely chop.
  • Have ready a colander submerged in a large bowl of ice water. Cook beans in a 6- to 8-quart pot of well-salted boiling water, uncovered, until just tender, 5 to 8 minutes. Using a large slotted spoon and/or tongs, transfer beans to colander in ice water to stop cooking, then drain well and dry on towels.
  • Heat butter in a 12- to 14-inch deep heavy skillet (preferably straight-sided) over moderately high heat until foam subsides, then add shallot and cook, stirring until pale golden, 2 to 3 minutes.
  • Reduce heat to medium and stir in sugar until almost dissolved, then cook pecans, stirring, 1 minute.
  • Add green beans, kosher salt, and pepper, and sauté beans, turning them with tongs, until heated through, 2 to 4 minutes. Transfer to a platter and serve.

  • Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain. Transfer to bowl of ice water and cool. Drain and pat dry. (Can be prepared 1 day ahead. Cover and refrigerate.)

Steps:

  • Toast pecans in 12" non-stick skillet over medium-high heat, stirring occasionally, about 3 minutes or until fragrant. Stir in maple syrup, 1 tbsp butter, and 1/8 tsp salt. Stir constantly until nuts are dry and glossy, then transfer to plate and set aside.
  • Wipe out skillet. Melt remaining 2 tbsp butter in skillet over medium heat. Add shallots, orange zest, and pinch of cayenne pepper. Cook, stirring occasionally, 2 minutes or until shallots are softened. Stir in flour until combined, then add green beans. Add chicken broth, orange juice, and sage. Increase heat to medium-high, cover, and cook until beans are crisp-tender (about 4 minutes).
  • Uncover and cook about 4 minutes, until beans are tender and sauce has slightly thickened. Remove from heat. Season with salt and pepper to taste. Transfer to serving dish, sprinkle with pecans, and serve.
