1/2 tablespoon olive oil
1 bunch green beans
Kosher salt
3 tablespoons soy sauce
3 tablespoons tahini
2 tablespoons honey
1 tablespoon sesame oil
Pinch crushed red pepper
2 cloves garlic, smashed

Steps:

  • Add olive oil to a large saucepan over medium heat. Add green beans and saute, until just tender, about 3 minutes. Season lightly with salt to taste and remove from heat.
  • Add soy sauce, tahini, honey, sesame oil, red pepper and garlic to a small bowl and mix until thoroughly combined. Drizzle mixture over beans and lightly toss to combine. Plate and serve.

1/4 teaspoon black pepper
2 tablespoons sesame seeds, toasted

Steps:

  • Cook beans in a 6- to 8-quart pot of boiling salted water , uncovered, until crisp-tender, 4 to 5 minutes. Drain in a colander and immediately transfer to a bowl of ice and cold water to stop cooking. When beans are cool, drain and pat dry.
  • Whisk together oils, vinegar, mustard, salt, and pepper in a large bowl until combined well, then add beans and sesame seeds and toss to coat.

I discovered this dish at my mother-in-law's house during a family holiday buffet. Her being Japanese, she had many friends who brought wonderful Japanese dishes, and this was and has remained one of my favorites. It's light and fresh any time of the year.

1 tablespoon canola oil
1 ½ teaspoons sesame oil
1 pound fresh green beans, washed
1 tablespoon soy sauce
1 tablespoon toasted sesame seeds

Steps:

  • Warm a large skillet or wok over medium heat. When the skillet is hot, pour in canola and sesame oils, then place whole green beans into the skillet. Stir the beans to coat with oil. Cook until the beans are bright green and slightly browned in spots, about 10 minutes. Remove from heat, and stir in soy sauce; cover, and let sit about 5 minutes. Transfer to a serving platter, and sprinkle with toasted sesame seeds.

2 cups green beans, cut into 2 inch pieces (fresh or frozen)
2 cups broccoli florets (fresh or frozen)
1/4 cup water
2 tablespoons low sodium soy sauce
1 teaspoon rice wine vinegar
1/2 teaspoon sesame oil
1 teaspoon honey
1/2 teaspoon fresh ginger, grated (or 1/4 tsp ground ginger)

Steps:

  • Whisk dressing ingredients together and set aside.
  • If using frozen green beans and/or broccoli, follow microwave directions on packaging.
  • Microwave fresh green beans with water in covered bowl on HIGH for 2 to 3 minutes.
  • Stir the green beans and add the fresh broccoli.
  • Cover and microwave together on HIGH for 2 minutes.
  • Drain green beans and broccoli.
  • Mix in dressing while vegetables are still warm.
  • Let vegetables chill in refrigerator until ready to serve, or at least 5 to 10 minutes.

Easy and very tasty Japanese vegetable dish. Serve as a side dish or if you are like me, eat a bowl of it with freshly cooked short grain rice! This dressing can be used for other veggies, such as broccolies and asparagus.

500 g fresh green beans
3 tablespoons sesame seeds
3 tablespoons soy sauce
2 tablespoons yellow sugar
1 pinch salt

Steps:

  • For the dressing, dry roast sesame seeds in a frying pan for about a couple of minutes, gently jiggling the pan. Careful not to burn them.
  • With a pestle and a mortar, partially grind the sesame seeds.
  • In a large bowl, mix together ground sesame seeds, soy sauce, sugar, and a pinch of salt.
  • Cut the green beans if they are too long. Cook the green beans by boiling until desired tenderness is reached. Drain and briefly run them under running water so that the beans stay green.
  • While the green beans still warm, toss them in the sesame dressing.
  • The dressing looks more like a paste than dressing but that's exactly how you want it to be, otherwise when mixed with the green beans, the dressing gets too runny and the green beans won't taste as nice.

1 tablespoon sesame seeds
1 pound fresh green beans, cut into 2 inch pieces
¼ cup chicken broth
¼ teaspoon salt
freshly ground black pepper to taste

Steps:

  • Heat oil in a large skillet or wok over medium heat. Add sesame seeds. When seeds start to darken, stir in green beans. Cook, stirring, until the beans turn bright green.
  • Pour in chicken broth, salt and pepper. Cover and cook until beans are tender-crisp, about 10 minutes. Uncover and cook until liquid evaporates.

1 teaspoon dark sesame oil, several drops or a drizzle
1/2 teaspoon crushed red pepper flakes
2 tablespoons toasted sesame seeds (a handful)
Coarse salt

Steps:

  • Steam green beans covered in 1/2-inch boiling water for 2 minutes. Transfer beans to a colander and run under cold water. Drain well.
  • Heat a wok shaped skillet or large nonstick frying pan over high heat. Go once-around-the-pan with wok or vegetable oil, add several drops sesame oil, and crushed pepper flakes. The pan will smoke. Add beans and stir-fry for 2 minutes. Add sesame seeds and coarse salt and toss to coat beans evenly.
