Making an authentic pozole - the fragrant Mexican hominy stew - has been on my list of things to do for years, but it can be very labor intensive. One recipe by Diana Kennedy, the author of Mexican cookbooks, calls for trimming hominy and boiling a pig's head. Just reading about it causes my enthusiasm to wane. This stew is a compromise; a sort of a pozole-chili hybrid, loaded with ground turkey, bell peppers, hominy and pinto beans. Chile powder adds heat, jalapeño brightness and canned chipotle chile in adobo smokiness and depth. A bottle of beer provides a pleasant bitterness that complements the spice. This recipe makes a very large batch perfect for entertaining or for stocking the freezer, but you can easily half it to feed a family of four.

2 1/2 pounds ground turkey
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
6 garlic cloves, chopped
2 tablespoons chili powder
2 large Spanish onions, chopped
1 red pepper, chopped
1 green pepper, chopped
1 to 2 jalapeño peppers, to taste, seeded and chopped
1 28-ounce can tomato purée
2 15-ounce cans white hominy, drained
2 15-ounce cans pinto beans, drained
1 12-ounce bottle beer
2 to 3 chipotles in adobo sauce, to taste, minced
1 teaspoon dried oregano
2 bay leaves
Sour cream, for serving
5 scallions, white and light green parts, sliced, for serving
1 bunch chopped cilantro, for serving
Lime wedges, for serving

Steps:

  • In a large pot over medium-high heat, warm 1 tablespoon oil. Brown half the ground turkey with 3/4 teaspoon salt and 1/4 teaspoon pepper, stirring occasionally until golden, 6 to 8 minutes. Stir in half the garlic and half the chili powder and sauté for another 30 seconds. Using a slotted spoon, transfer turkey to a bowl. Brown remaining turkey in same manner, transferring it to bowl with rest of turkey.
  • Add remaining 2 tablespoons oil to pot and sauté onions, bell peppers and jalapeño peppers with remaining 1/2 teaspoon salt. Cook, stirring, until onion is translucent, about 10 minutes.
  • Return ground turkey and any liquid in bowl to pot and add tomato purée, hominy, beans, beer, chipotles, oregano and bay leaves with 3 cups water. Simmer chili, partly covered, until it is thick enough for your taste, about 1 hour. Serve hot, garnished with sour cream, scallions, cilantro and lime wedges.

Steps:

  • In a large Dutch oven or other heavy pot, heat oil over medium-high. Add onion; cook until softened, 8 minutes. Add garlic, chiles, rosemary, cumin, oregano, and cayenne and cook until fragrant, 2 minutes; season with salt. Add turkey and cook, breaking up meat with a wooden spoon, until cooked through, 5 minutes. Add broth, beans, and hominy; bring to a boil over high. Partially cover, reduce heat, and simmer until chili is thickened slightly, 25 minutes. Stir in cornmeal and cook 15 minutes. Season to taste with salt.

2 whole store-bought rotisserie roasted chicken, meat picked from bones and pulled into bite size pieces,skin and bones reserved seperately
2 quarts chicken broth
6 tablespoons vegetable oil
1/4 cup ground cumin
4 teaspoons dried oregano
1/2 teaspoon cayenne pepper
2 large onions, cut into medium dice
2 (4 ounce) cans diced mild green chilies
2 (20 ounce) cans hominy or 2 (20 ounce) cans canned white beans, such as cannellini or great northern
6 cloves garlic, minced
2 cups frozen corn, preferably shoepeg
sour cream
cilantro or scallion
lime wedge
green chili sauce

Steps:

  • Bring skin and bones, chicken broth a 1 quart of water to boil over medium-high heat.
  • Reduce heat to low and simmer about 30 minutes.
  • Strain and discard skin and bones.
  • Heat oil over medium-low heat in soup kettle.
  • Add cumin, oregano and cayenne and cook until spices are fragrant, about 1 minute.
  • Add onion; increase heat to medium; saute until soft, 4 to 5 minutes.
  • Stir in chicken and chilies.
  • Add 4 cups hominy or beans and all but 1 cup of the broth and bring to a simmer.
  • Reduce heat to low and simmer, uncovered, stirring occasionally, 25 to 30 minutes.
  • Puree remaining 2 cups hominy or beans and 1 cup broth in blender or food processor until silky smooth; add to soup.
  • Stir garlic and corn into soup.
  • Simmer for a minute or so longer, then cover and let stand for 5 minutes.
  • Ladle into bowls and top with sour cream, cilantro or scallions.
  • Pass separately the lime wedges and green hot pepper sauce.

Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 white or red onion, chopped
2 tablespoons chopped pickled jalapeno peppers, plus more for topping, plus 1 to 2 teaspoons brine from the can
3 cloves garlic, chopped
1 pound ground turkey
1 tablespoon chili powder
1 teaspoon ground cumin
4 plum tomatoes, chopped
1 15-ounce can hominy, drained and rinsed
1/2 cup roughly chopped fresh cilantro

Steps:

  • Bring 1 1/2 cups water to a simmer in a small saucepan. Stir in the rice and a pinch each of salt and pepper. Reduce the heat to low, cover and cook until the water is absorbed and the rice is tender, about 15 minutes; set aside.
  • Meanwhile, heat the olive oil in a large pot over medium-high heat. Add all but 1/4 cup of the chopped onion, the jalapenos and garlic; season with salt and pepper. Cook, stirring, until the onion is tender, about 5 minutes. Add the turkey, chili powder and cumin. Cook, breaking up the meat, until browned, about 5 minutes. Stir in the tomatoes; season with salt. Steps:

  • Heat oil in heavy large pot over medium heat. Add sausage. Sauté to heat through, about 4 minutes. Add chile and oregano. Press in garlic. Stir 2 minutes. Add hominy with juice, salsa verde, 1/2 cup cilantro, and squash. Bring to simmer. Cover, reduce heat to medium-low, and simmer until squash is tender, stirring occasionally, 12 to 15 minutes. 12 mild green chiles, such as poblanos
1 teaspoon salt

1 cup beer (optional)
6 cups broth (chicken or turkey)

3 cups cooked white beans
Optional: chopped cilantro , chopped green onions, sliced avocado, crumbled cotija cheese

Steps:

  • Gather the ingredients.
  • Heat the oil in a large pot over medium-high heat. When the oil is hot, add the poblano peppers, onion, and salt. Cook, stirring, until the mixture softens, about 5 minutes.
  • Add garlic and cook, stirring, until fragrant, about 1 minute.
  • Add the turkey. Cook, stirring often, until the turkey is cooked through and starting to brown a bit, about 5 minutes.
  • If using, add the beer and bring to a boil. Scrape up any bits of turkey that have clung to the bottom of the pot.
  • Pour in the broth and bring to a boil.
  • Add the hominy and the beans. Bring to a simmer. Taste and season with salt and pepper as needed. Let the pot simmer for 20 minutes.
  • Serve in bowls and top with cilantro, scallion, avocado, and cotija cheese.
