1/2 cup mayonnaise
1/2 cup plain yogurt
1 1/4 cup shredded sharp cheddar cheese
1/3 cup blue cheese dressing
2 eggs
1/2 teaspoon salt
1 1/2 teaspoon fresh ground black pepper
Flavor Pack from Ramen
6 cups broccoli, peeled stems and heads, chopped and blanched in salted water
12 ounces sliced mushrooms, Sauteed in 1 tablespoon butter
1 package chicken flavored Ramen noodles, broken up

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl combine mayonnaise, yogurt, cheddar cheese, blue cheese dressing, eggs, salt, pepper, and flavor pack from noodles. In a separate bowl combine broccoli, mushrooms, and broken noodles then toss together wet mixture and vegetables to evenly coat. Place in an 8 by 8-inch baking dish that has been sprayed with non- stick cooking spray and cook for 45 minutes covered. Then remove cover and bake for additional 15 minutes to brown. Cool for 15 minutes before serving.

1 cans campbell
1 cans cheese sauce
1 cups miracle whip
3 cups cornbread stuffing mix
3 cups cheddar cheese

Steps:

  • Defrost broccoli. Mix in large bowl cream of mushroom soup, cheese sauce, and Miracle Whip.
  • Mix broccoli, 1/2 cup stuffing mix, and shredded cheese; then mix cream mixture with broccoli mixture. Pack in large casserole dish. Top with 1/2 cup stuffing mix.
  • Then cook at 350 degrees F for 1 hour covered. Casserole should be bubbling and golden brown.

Creamy Broccoli and Cheese Casserole with ritz cracker topping is a family-favorite! Its so easy that you'll want to add it to your dinner rotations.

2 lbs Broccoli (cut into florets)
water (to steam broccoli)
8 oz Cream Cheese
¼ cup heavy cream
⅓ cup parmesan cheese (grated)
1 tbsp dijon mustard
1 tbsp ranch seasoning
1 tbsp minced garlic (or 1 teaspoon garlic powder)
1 tbsp italian seasoning
1 large egg (at room temperature)
½ cup mozzarella cheese (divided)
½ cup mayonnaise
pepper (as per taste)
1 sleeve ritz cracker (crushed)

Steps:

  • Preheat oven to 350 degrees F and liberally grease a 9x13 inch baking dish with cooking spray. Set aside.
  • In a bowl place broccoli cut into bite-sized florets. Pour water and cover it with a lid. Cook in the microwave on High Power for 2-3 minutes. Drain the water and place it on a serving dish.
  • In an another medium-sized mixing bowl, add all other ingredients except ritz cracker. Mix well until light and creamy.
  • Pour the creamy cheese sauce in a 9x13 inch baking dish. Save 2-3 tablespoons of sauce for topping. Spread it out evenly.
  • Place steamed broccoli florets on the cheese sauce and distribute it evenly.
  • Top with remaining cheese sauce and sprinkle crushed ritz cracker.
  • Add remaining Mozzarella Cheese on top and bake in a preheated oven at 350 degrees F for 20-minutes or until the cheese turns bubbly and light brown on top.

3 cups finely chopped broccoli
8 ounces cream of mushroom soup
1 cup mayonnaise
1/4 cup onion, chopped
1 cup shredded cheddar cheese
2 eggs, beaten

Steps:

  • Mix in a bowl, can of mushroom soup, mayonnaise, onion, cheddar and the 2 eggs beaten.
  • Fold mixture together.
  • Add the chopped broccoli ( I just chop up the bunch, into small pieces, maybe you will get 2-3 cups) fold that into the mixture.
  • Put into a greased casserole, sprinkle with bread crumbs.
  • Cook uncovered for 45 minutes at 350 degrees.

4 cups fresh broccoli florets
24 large eggs
5 tablespoons butter, divided
1-3/4 cups sliced fresh mushrooms
1 cup cubed fully cooked ham
2 green onions, chopped
2 tablespoons all-purpose flour
2 cups 2% milk
1 cup shredded cheddar cheese
3/4 teaspoon salt
1/2 teaspoon pepper
TOPPING:
2-1/4 cups soft bread crumbs
1/4 cup butter, melted

Steps:

  • In a large saucepan, place steamer basket over 1 in. of water. Place broccoli in basket. Bring water to a boil. Reduce heat to maintain a simmer; steam, covered, 4-6 minutes or until crisp-tender., In a large bowl, whisk eggs until blended; set aside. In a large skillet, heat 3 tablespoons butter over medium heat. Add mushrooms, ham and green onions; cook and stir 4-6 minutes or until vegetables are tender. Pour in eggs; cook and stir until eggs are thickened and no liquid egg remains., Meanwhile, in a small saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 3-4 minutes or until thickened. Stir in cheese, salt and pepper until cheese is melted., Add cheese sauce to egg mixture; gently stir in broccoli. Transfer to a greased 13x9-in. baking dish. Refrigerate, covered, overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. In a small bowl, mix bread crumbs and melted butter; sprinkle over casserole. Bake, uncovered, 35-40 minutes or until golden brown. Let stand 5-10 minutes before serving.

1 dash Tabasco sauce (optional)

1/4-1/2 cup butter or 1/4-1/2 cup margarine, melted
1 1/2 cups herbed breadcrumbs

Steps:

  • Combine first 6 ingredients.
  • Sprinkle cheddar cheese on top of broccoli mixture.
  • Combine crumbs and melted butter and sprinkle on top of cheese.
  • Bake 35 minutes in a pre-heated 350 degree oven.

This is down home comfort food at it's finest. It was the only way my grams or mom could get me to eat my broccoli while growing up. These days I use brown rice for a lower carb, healthier version. Sometimes I also use chicken thigh instead of breast because it's so much more tender. I hope you love it was much as I do.

1 (16 ounce) package frozen broccoli
4 cups cooked rice
1 (10 3/4 ounce) can cream of mushroom soup
10 3/4 ounces milk
1 lb chicken breast
6 ounces Cheese Whiz
1/2 cup onion
1/2 cup green pepper
1/2 cup celery
2 tablespoons vegetable oil
2 ounces flour
1 dash salt

Steps:

  • Chop onions, green peppers, and celery into small pieces.
  • Fry chopped vegetables in half of the vegetable oil.
  • Cube chicken.
  • Flour and salt the chicken cubes and brown in remaining oil--add more if needed.
  • Add mushroom soup and milk and stir until mixed.
  • Butter a large baking dish
  • Add chicken mixture, cooked rice, broccoli, and remaining vegetables.
  • Stir, cover, and cook 45min in 350 degree oven.
  • Uncover, top with Cheese Whiz, return to over for 5 to 10 minutes--until cheese is completely melted.
