CREAMY HORSERADISH AND GREEN BEAN SALAD



Creamy Horseradish and Green Bean Salad image

3 tablespoons creamy horseradish
2 tablespoons extra-virgin olive oil
1 tablespoon apple cider vinegar
Zest and juice from 1 large lime
Kosher salt and freshly ground black pepper
3/4 pound small to medium green beans, trimmed
6 sprigs fresh basil, stemmed

Steps:

  • Make the dressing: Whisk together the horseradish, olive oil, vinegar and lime zest and juice with a pinch of salt in a large bowl. Taste for seasoning.
  • Cook the green beans: Fill a medium saucepot with water and bring to a boil. Fill a large bowl halfway with ice cubes and add some cold water. Place a colander squarely inside the bowl to make an ice bath. (The colander will keep you from having to pick the beans out from among the ice cubes.) Add salt to the boiling water until it tastes like seawater. Plunge the beans into the boiling water and cook until crisp-tender, 1 to 2 minutes. With a slotted spoon, remove the green beans from the water and transfer to the colander inside the ice bath. Move them around gently so the ice water penetrates the beans and accelerates the cooling process. When fully cooled, drain and arrange in a single layer on a kitchen towel to drain any excess moisture.
  • Make the salad: If the green beans are long, cut in half. Toss the green beans in the dressing and toss to coat. Season with salt and pepper. Refrigerate 30 minutes, then stir to coat with the dressing again and marinate at least another 30 minutes and up to 6 hours. Stir in the basil leaves and serve.

Steps:

  • In a large pot of boiling salted water, cook beans until crisp-tender, 3 minutes. Drain; rinse under cold water. Transfer to a medium bowl and toss with olive oil and mint. Season to taste with lime juice, salt, and pepper. Serve immediately.

ROASTED GREEN BEANS WITH LIME JUICE

Kick up your frozen green beans with some lime juice. These go great with pork or any other tuscan style dish. I recently made this with frozen Italian green beans and it turned out wonderfully.

1 lb green beans (Fresh or Frozen any style)
3 tablespoons butter (Reduce or substitute if you like)
1 tablespoon olive oil
1/2 teaspoon garlic powder
1 teaspoon sea salt
1/2 teaspoon ground pepper
1 -2 tablespoon lime juice (Minimum 1tbsp, this is a key ingredient)

Steps:

  • Heat oven to 380°F.
  • Prepare and grease a baking pan.
  • Melt Butter and combine butter with olive oil and dry ingredients. Toss the green beans in this mixture until evenly coated.
  • Pour coated green beans into greased pan and spread out evenly. A glass baking dish works well here.
  • Cook this for approximately 35 minutes or until the green beans on the top begin to lightly brown on the tips.
  • You may also broil these at the end to help brown and crisp your beans.

2 scallions, white and green parts separated, thinly sliced
Coarse salt and ground pepper
2 cans (19 ounces each) black beans, rinsed and drained
1 teaspoon chili powder
1 tablespoon fresh lime juice

Steps:

  • In a medium saucepan, heat oil over medium. Add white part of scallions, and season with salt and pepper. Cook until softened, about 3 minutes.
  • Add beans, chili powder, and 1/4 cup water. Cook until warmed through, about 5 minutes. Remove from heat, and stir in lime juice; season with salt and pepper. Serve garnished with green part of scallions.

1/3 cup fresh parsley
1 tablespoon fresh rosemary, snipped
2 teaspoons lime zest, shredded
1 tablespoon fresh lime juice
1/2 teaspoon garlic clove, minced (about 1 clove)
2 tablespoons extra virgin olive oil
1/3 cup hazelnuts, toasted and chopped
lime wedge, for serving (optional)

Steps:

  • .Cook beans until tender crisp in a large pot of boiling and salted water, about 3 or 4 minutes; drain and plunge in an ice water bath for at least 3 minutes, then drain again and set aside.
  • In a small bowl, combine parsley, rosemary, lime zest, lime juice, and garlic; set aside.
  • Heat a skillet over medium high heat and add olive oil; add beans and cook, stirring occasionally, for 3 to 4 minutes to heat through.
  • Season with salt and pepper; remove from heat and stir in lime mixture and hazelnuts.
  • Serve with lime wedges, if desired.
  • Note: Toast hazelnuts in the oven at 350 degrees F, for 5 to 10 minutes, stirring once or twice. Papery skins can be removed by rubbing with a clean towel.

1/3 cup raisins
1 tablespoon olive oil
1 tablespoon fresh lime juice
Coarse salt and ground pepper

Steps:

  • Set a steamer basket in a large saucepan. Fill with enough water to come just below basket. Bring to a boil; place green beans in basket, and reduce to a simmer. Cover, and steam until crisp-tender, about 3 minutes. Add raisins, and cover; steam until raisins have plumped, 1 minute more.
  • Transfer green beans and raisins to a medium bowl; add oil and lime juice. Season with salt and pepper, and toss to combine.

1 (1" piece) ginger, peeled, finely grated
1 lemongrass stalk, tough outer layers removed, finely grated on a Microplane
2 garlic cloves, finely grated
1/2 teaspoon ground coriander
Freshly ground black pepper
1/3 cup salted, roasted peanuts
3 makrut lime leaves, finely chopped
1 teaspoon finely grated lime zest
3 tablespoons fresh lime juice
1/4 teaspoon sugar
1/3 cup (packed) cilantro leaves with tender stems, plus more for serving

Steps:

  • Working in batches by type, cook beans in a large pot of boiling salted water until crisp-tender, 1-4 minutes. Transfer with a slotted spoon to a large bowl of ice water; let cool. Drain and pat dry.
  • Heat 1 tablespoon oil in a small skillet over medium and cook shallot, stirring occasionally, until tender, about 3 minutes. Add ginger, lemongrass, garlic, and coriander and cook, stirring, until very fragrant, about 1 minute. Transfer to a large bowl; season with salt and pepper.
  • Heat 1 tablespoon oil in same skillet over medium-high. Cook peanuts, tossing often, until golden brown and fragrant, about 2 minutes. Transfer to paper towels; let cool, then coarsely chop. Set aside 1 tablespoon peanuts for serving.
  • Whisk makrut lime leaves, lime zest, lime juice, sugar, 1/2 teaspoon salt, and remaining 3 tablespoons oil into shallot mixture. Add beans, remaining peanuts, and 1/3 cup cilantro and toss to coat; season with salt and pepper. Serve topped with more cilantro and reserved peanuts.

2 lbs green beans, trimmed
1 onion, peeled, cut into 8 wedges
6 sprigs fresh marjoram
2 tablespoons extra virgin olive oil
coarse kosher salt
1 tablespoon fresh lime juice
1 teaspoon packed finely grated lime peel
1/2 cup coarsely chopped marcona almonds or 1/2 cup roasted regular almonds

Steps:

  • Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 450°F.
  • Spray 2 large rimmed baking sheets with nonstick spray. Combine green beans, onion wedges, and marjoram in large bowl. Drizzle with oil, then sprinkle with coarse kosher salt and pepper. Toss; divide between prepared sheets.
  • Roast vegetables 15 minutes. Reverse sheets. Continue to roast until beans are tender and beginning to brown in spots, about 10 minutes longer.
  • Transfer vegetables to bowl. Add lime juice, grated lime peel, and half of chopped almonds. Toss to coat; season with salt and pepper. Sprinkle with remaining almonds.
