This Hungarian creamed green bean soup can be served hot or cold. It's a great use of the fresh vegetable in the summertime!

1 pound fresh trimmed green beans (cut into 2-inch pieces)
1 teaspoon salt (or to taste)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/4 teaspoon black pepper
1/2 teaspoon sweet or hot Hungarian paprika
1/4 cup water
1 cup sour cream

Steps:

  • Gather the ingredients.
  • In a large skillet, place the green beans and cover with water; add 1 teaspoon salt and bring to a boil. Reduce heat to simmer and cook until crisp-tender, about 5 minutes.
  • Remove green beans to a colander, reserving cooking liquid.
  • Meanwhile in a medium skillet, make a roux (known as rantas in Hungarian) by melting the butter, adding the flour, and cooking, stirring constantly, until it is a light amber color.
  • Add pepper, paprika, and 1/4 cup water to the skillet, stirring until smooth.
  • Temper the sour cream with a few ladles of the hot green bean cooking liquid.
  • Add the sour cream mixture to the pan along with green beans; whisk the mixture until smooth. Simmer until the broth thickens, 5 to 8 minutes, but do not let it boil.
  • Serve hot or chilled.

1/2 lb dried navy beans (or use quick soak method below) or 1/2 lb pinto beans, soaked in cold water overnight (or use quick soak method below)
1 teaspoon salt
1/4 teaspoon pepper
1 carrot, sliced
1 leeks or 1/2 onion, very finely chopped
2 garlic cloves, pressed
1/2 lb smoked bacon or 1/2 lb smoked ham hock
4 cups smoked ham stock or 4 cups water
2 tablespoons cooking oil or 2 tablespoons lard
2 tablespoons onions, chopped
1 teaspoon Hungarian paprika
3 tablespoons flour
1 tablespoon parsley, chopped
1/4 cup sour cream
1 teaspoon vinegar

Steps:

  • Quick soak method - Boil beans for 5 minutes in enough water to cover them completely, then cover pan and let soak for 1 hour.
  • Drain and rinse the beans and put them in a large pot.
  • Add the salt, pepper, carrot, leek, garlic, and meat.
  • Add stock plus enough water to cover 2" above the beans and meat; bring to a simmer.
  • Simmer, partially covered, until the beans are tender (2 1/2 - 3 hours), adding water as needed to keep the beans covered; then remove meat to a separate plate.
  • In a heavy saucepan, melt fat or warm oil and sauté onions until they wilt.
  • Mix in the paprika and then the flour.
  • Gently fry, stirring constantly until flour turns golden beige (2-3 minutes) (be careful not to scorch the flour and not to get any on you).
  • Add the parsley.
  • Thin roux with 1/2 cup to a cup of the broth from the soup; mix well, then slowly pour back into the soup.
  • Let simmer for 10 minutes (then if soup is too thin simmer for 5-10 more minutes; if too thick slowly add hot water and simmer for 2-3 more minutes).
  • Remove from heat and let cool.
  • Blend some soup into the sour cream to keep it from curdling when you add it, then add it to the soup.
  • Mix in the vinegar and taste soup for seasonings.
  • Cut the meat into bite sized pieces and return them to the soup.
  • Reheat soup before serving.

1/2 lb dried navy beans or 1/2 lb dried white bean
water
1 lb ham hock
3 tablespoons flour
1 cup sour cream
2 1/2-3 cups milk
1/4 cup vinegar

Steps:

  • Cover beans with water by 2 inches and bring to a boil. Let stand 1 hour, then drain. Cover with about 2 quarts water, add ham hocks, and bring to a boil. Cook until beans are very tender, about 1 hour.
  • In a medium bowl, mix flour with enough water to form a smooth, thin paste. Stir in sour cream, then milk and mix well. Add the mixture to the beans. Add the vinegar. Bring soup to a simmer. Season with salt and pepper.

As a warm yet light dish, this creamy Hungarian green bean soup - or tejfölös zöldbableves - is sure to please. With its signature orange color, the soup is made from crisp green beans, sour cream, and Hungarian paprika.

1 large onion
1 pound green beans (cut into 1 inch pieces)
1/2 cup sour cream
1/2 cup milk
1 tablespoon corn starch
1 tablespoon oil
1 tablespoon sweet Hungarian paprika (more or less to taste)
2 cups vegetable broth

Steps:

  • Chop the onion into small cubes and set aside.
  • Wash the green beans, trim off the ends and cut the beans into 1 inch long pieces. Set aside.
  • Heat oil in a large pot and add the onions. Sauté the onions on medium heat until they become translucent.
  • Add the green beans to the pot, then add 2 cups of broth. The mixture of onions and beans should just be covered.
  • Add the paprika, reduce the heat, and let everything simmer for around 30 minutes (or until the beans are tender - but not mushy).
  • Add the sour cream, milk, and corn starch together in a bowl and whisk well.
  • Add the corn starch mixture to the pot and mix everything well.
  • Bring the soup back to a boil for around 2 minutes or until it has reached the desired thickness. Stir frequently.
  • Serve and enjoy!

  • In a soup pot, heat about 50 ml of vegetable oil in which we put two tablespoons of wheat flour. Stir continuously so that the flour does not burn and add a tablespoon of Hungarian sweet paprika powder. Mix and slowly pour one cup of water which we adapt to the boiling temperature, thus obtaining a thickening for the soup.
  • Add the frozen green beans, directly into the pot over the thickener. Pour two more cups of water, stir and let the beans thaw a little, few minutes. Add the rest of the water, season with sea salt, and when it starts to boil add the canned chopped tomatoes. Let the soup boil until the beans are done, it took me about 30 minutes.
  • In the end, taste and season with the vegetable mix for soups and the sugar to balance the flavours. If you want, you can add some chopped parsley.
