1 pound French string beans (haricots verts), ends removed
Kosher salt
2 tablespoons unsalted butter
1 tablespoon good olive oil
3 large shallots, large-diced
1/2 teaspoon freshly ground black pepper

Steps:

  • Blanch the string beans in a large pot of boiling salted water for 1 1/2 minutes only. Drain immediately and immerse in a bowl of ice water.
  • Heat the butter and oil in a very large saute pan (12-inch diameter) or large pot and saute the shallots on medium heat for 5 to 10 minutes, tossing occasionally, until lightly browned. Drain the string beans and add to the shallots with 1/2 teaspoon salt and the pepper, tossing well. Heat only until the beans are hot.
  • If you're using regular string beans, blanch them for about 3 minutes, until they're crisp-tender.

Steps:

  • Add to boiling water with a teaspoon of salt. Blanch the beans for about 4 minutes until tender-crisp. Drain beans and plunge into an ice water right away to stop cooking any further. Let cool completely and drain again. Cook bacon until crispy. Reserve 1 tablespoon of bacon drippings if desired. Chop bacon into small pieces. Heat a large nonstick skillet over high heat, add 1 tablespoon of bacon drippings, or vegetable oil, or butter. Stir in the mushrooms and shallots. Sauté until mushrooms are golden brown, about 5 minutes. Stir in green beans and bacon bits and stir until mix well. Cook until heated through. Season with salt and freshly ground black to taste. Serve warm along with any main course.

3 Tbsp unsalted butter
2/3 c shallot, finely chopped (about 4 large)

Steps:

  • 1. Cook beans in large pot of boiling salted water until crisp-tender, about 4 minutes.

1 cup chicken stock

Steps:

  • Prepare an ice bath
  • In a deep skillet, bring a few inches of water to a boil
  • Salt the water, add the green beans, and cook until crisp-tender, 3 to 4 minutes
  • Using a slotted spoon, transfer the green beans to the ice bath to cool
  • Drain the green beans
  • Pour the water out of the skillet
  • Add the butter to the skillet
  • Heat over medium-low until the butter melts
  • Add the shallots and cook, stirring occasionally, until very tender and lightly caramelized, about 15 minutes

1 pound fresh green beans
1 large shallot
1 to 2 tablespoons extra-virgin olive oil
Freshly ground black pepper

Steps:

  • Bring a medium pot of cold water to a boil over high heat and salt it generously. Trim the stem end off the green beans. Peel and finely chop the shallot.
  • Drop the green beans into the boiling water and cook, uncovered, until crisp-tender, about 4 minutes. Drain in a colander set in the sink and rinse with very cold water until cool. Drain well and pat dry with paper towels. (The vegetables can be prepared up to this point, up to 4 hours ahead.)

24 ounces green beans, washed and ends trimmed
10 ounces bacon, chopped
2 Tablespoons bacon grease, reserved from cooking the bacon
1 cup shallots (2-3 large bulbs), thinly sliced
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 teaspoons apple cider vinegar

Steps:

  • Fill a large pot with water and bring to a rolling boil over high heat. Once boiling add the green beans, cover, and cook for 3-4 minutes. Remove the green beans from the boiling water and put into a bowl of ice water to stop the cooking process. Remove the beans from the ice water and set aside. Heat a large saute pan over medium high heat and cook the chopped bacon until crispy (around 8-10 min). Put the cooked bacon on a paper towel-lined plate. Set aside. Remove most of the bacon grease from the saute pan, leaving around 2 Tablespoons of grease (enough to coat the bottom of the pan). Put the pan over medium low heat, then add the shallots and garlic to the pan and cook, stirring and cooking for 3-4 minutes, until they start to caramelize. Add the green beans, raise heat to medium high. Add the salt, pepper, and apple cider vinegar. Stir everything together, cooking for 3-4 minutes. Put the green beans into a serving dish. 1 tbsp whole grain Dijon mustard 15 mL

  • Bring a large pot of salted water to a boil. Add beans and cook just until water returns to a boil, about 2 min. Strain beans and immerse in a large bowl of ice water until beans are completely cold. Drain and set aside.
