- Preheat oven to broil.
- In a shallow bowl, whisk together the olive oil and vinegar. Marinate the tomatoes in the mixture, stirring occasionally.
- Meanwhile, in a small bowl, combine mayonnaise, parsley, oregano, black pepper and 4 teaspoons Parmesan cheese. Spread mixture on each slice of toasted bread. Place marinated tomatoes on 2 slices and sprinkle with remaining Parmesan cheese.
- Place on a baking sheet and broil for 5 minutes, or until cheese turns golden brown. Serve immediately, open faced or closed.

ROASTED TOMATO AND SWISS CHEESE SANDWICH
Super delicious, I was at the gym and really wanted tomatoes and cheese, so I roasted my own tomatoes and threw this together! It is even better if the bread you are using is homemade bread, I like it with the white bread recipe from the Betty Crocker cookbook.

- Slice tomato fairly thin, between a quarter and half an inch. Place on parchment and sheet pan, drizzle with olive oil, sprinkle salt, pepper, oregano and basil and place under maxi broil in middle of the oven (same position that you would use to bake anything else).
- After about 5 minutes, flip tomato slices, drizzle more olive oil and sprinkle more pepper, oregano and basil. Bake about 5 more minutes.
- Toast the bread, spread on mayo, and put 2 or 3 slices of tomato on one slice and swiss cheese on top of tomato. Grind a little more pepper and place under broiler to melt cheese.
- Place other slice of bread on top and enjoy!

- Stir mayonnaise, feta cheese, and lemon zest together in a small bowl until well blended. Spread feta mixture evenly over bread slices.
- Top 2 slices of the bread evenly with tomato slices and sprinkle with salt and pepper. Top tomatoes with remaining bread slices, feta-side down. Brush both sides of the sandwich evenly with olive oil.

TOMATO, CHEESE, AND AVOCADO SANDWICH
This is one of my favorite sandwiches! I usually use a wonderful white horseradish cheddar cheese rather than provolone, but it's kind of hard to find and the provolone is tasty, too. :) I've tried it on a lot of different breads, but I think that Oroweat's Carb Counting Multigrain Bread (when I'm being good) and Poulsbo Bread (when I'm bad) are my favorites for this sandwich.

- If you like your sandwiches toasted, go ahead and toast your bread.
- Mix the mayonnaise, mustard, and balsamic together, then spread it thinly on one side of each slice of bread.
- Place cheese on a mayo/mustard side of a piece of bread; if including proscuitto, place it on the provolone.
- Spread the slices of avocado next, then the tomato, and season to taste with salt and pepper; then top with lettuce and the other slice of bread with the mayo/mustard side facing the lettuce.

- First, grill your onions to your liking in a pan with a small amount of oil. Put aside.
- Wash lettuce and have your sandwich fillings ready for assembly.
- On a hot plate, skillet, etc., place one slice of ham down, followed by swiss cheese, then the other slice of ham (if you use the long slices of ham, they will wrap around the cheese quite nicely). The cheese should be as protected from the pan as much as possible. You want to heat on a medium/high heat and flip this after a minute or two so the top side gets a turn down on the pan. But don't cook this too long as it will make the meat tough and the cheese will melt and leak out all over the place. Just heat until meat is slightly brown on top and bottom and the cheese has mostly melted.
- While meat and cheese are cooking, place 2 slices of bread in toaster. When done, add mayo and/or mustard to toast and place ham/cheese on bottom slice of toast. Top with grilled onions, lettuce, tomato, pickle, and sprinkle with salt and pepper. Add top piece of toast, slice sandwich on the diagonal, throw on a plate with some potato chips and get busy (all the while wondering why you didn't go ahead and make that second one while you were at it!) -- back to the kitchen. These things ARE addictive. You've been warned!
GRILLED SWISS & TOMATO ON RYE
This was a frequently ordered sandwich, even though it was not on the menu, at the grill at Memorial Hospital in Belleville. When working night shift, my husband and I ate our fair share of these tasty sandwiches. I think the secret to this recipe is LOTS of salted butter on the bread prior to grilling! If you like, feel free to add light sprinkle of sea salt and some cracked black pepper on the tomato when you are making the sandwich (as many swiss cheeses are low sodium). Sometimes I add pickles into the sandwich before grilling too :)

- Spread both slices of bread with a light layer of mayo.
- Put slice of cheese on one piece of bread.
- Add tomato slices.
- Sprinkle with salt, pepper& Italian Seasoning.
- Cover tomato slices with other slice of cheese, then cover with other piece of bread.
- In the meantime, heat griddle or pan with butter and garlic power or minced garlic.
- Also spread butter on top of each side of bread.
- Grill until sandwich is brown on both sides and cheese is melted.

This is the sandwich that makes me remember the Happy Baker in Fredericton, New Brunswick. If possible toast the sandwich and make a panini. I love this simple sandwich! If possible, use yellow tomatoes because they're less acidic than the red ones.

- On one of the slices, spray a little olive oil and grind some black pepper on top. Place basil leaves, then roast beef slices, and cheese on that slice.
- On the second slice, lightly spread some wasabi mayonnaise.
