CHEF JOHN'S PARTY CHEESE PUFFS

Chef John's Party Cheese Puffs image

These beautiful cheese puffs, gougeres, are as easy as they are delicious. Usually Gruyere cheese is used but I had some very sharp farmhouse Cheddar cheese in the fridge, so I decided to use that. As long as you are using a very sharp, full-flavored cheese I don't think you can go wrong. I love gougeres with Gruyere, but I think the extra-sharp Cheddar was just as good.

Time 40m

Yield 12

Number Of Ingredients 8

½ cup water
¼ cup butter
1 pinch salt
½ cup flour
2 large eggs

1 teaspoon ground black pepper
½ cup shredded sharp Cheddar cheese, divided

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with a silicone baking mat.
  • Stir water, butter, and salt together in a pot; bring to a simmer. Reduce heat to medium and whisk flour into butter mixture until a paste-like dough forms, 2 to 3 minutes. Transfer dough to a bowl to cool until warm, 5 to 10 minutes.

Stir 3/4 the cheese into dough until combined. Scoop 1-inch balls of dough onto prepared baking sheet. Top each with remaining cheese.
  • Bake in the preheated oven until golden and puffed, 15 to 20 minutes.

SMOKED SALMON PUFFS

Smoked Salmon Puffs image

These little bites look impressive, but they aren't hard or expensive. Because the cream cheese filling is so flavorful, you need only a small amount of smoked salmon. The pastry can be baked ahead (and even frozen for up to a month).

Provided by Food Network Kitchen

Categories     appetizer

Time 1h30m

Yield about 40 puffs (10 to 12 servings)

Number Of Ingredients 10

One 9-ounce sheet frozen puff pastry, thawed
1 large egg, beaten
2 tablespoons white wine vinegar
3 sun-dried tomatoes (not packed in oil)
1 Kirby cucumber or 1/4 English cucumber
8 ounces cream cheese, at room temperature
2 tablespoons finely sliced chives
Kosher salt
2 ounces smoked salmon
1/2 teaspoon black sesame seeds

Steps:

  • Position an oven rack in the center of the oven, and preheat to 400 degrees F. Line a rimmed baking sheet with parchment.
  • Unfold the pastry, and cut out rounds with a 1 1/2-inch round cookie cutter (you should get roughly 40). Space them at least 1 inch apart on the prepared baking sheet. Lightly score the center of each round with a 3/4-inch cookie cutter (don't press all the way through). Lightly brush each round with the egg.
  • Invert another rimmed baking sheet on top of the dough rounds, and bake for 5 minutes. (Covering the rounds helps them puff straight up evenly.) Remove the top baking sheet, and continue to bake until golden, 8 to 10 minutes more. Let the rounds cool completely on the baking sheet, then use the handle of a wooden spoon to gently punch a hole in the middle of each round. (The baked pastry can be stored at room temperature in an airtight container for up to 1 day or frozen for up to 1 month.)
  • Meanwhile, microwave the vinegar and sun-dried tomatoes in a small bowl, covered, for 30 seconds; let cool. Reserve 1 teaspoon of the vinegar, and finely chop the tomatoes. Finely shred the cucumber, and squeeze out all the excess moisture. Mash together the tomatoes, reserved vinegar, shredded cucumber, cream cheese, chives and 1/4 teaspoon salt with a fork in a medium bowl until smooth. Transfer the cream cheese filling to a pastry bag or resealable plastic bag (cut off the tip). (The filling can be refrigerated for up to 1 day.)
  • Tear or cut the salmon into 40 small pieces, and roll each into a rough rosette shape. Pipe some of the filling into each puff. Top each with a piece of salmon, and sprinkle with sesame seeds. (The salmon puffs can be refrigerated for up to 2 hours.)

IRISH BEER CHEESE PUFFS

Irish Beer Cheese Puffs image

While this is by no means an authentic Irish recipe, I do use Irish beer, Irish butter, and sharp Irish Cheddar (along with a French technique!) to make these easy, cheesy puffs that are perfect for entertaining. Delicious to eat alone or with this spring onion and mascarpone spread.

Provided by Chef John

Categories     Appetizers and Snacks

Time 1h30m

Yield 12

Number Of Ingredients 16

4 tablespoons Irish-style butter
½ cup Irish stout beer (such as Guinness® Extra Stout)
½ teaspoon kosher salt
½ teaspoon white sugar
½ cup all-purpose flour
2 large eggs
¾ cup grated sharp Irish Cheddar cheese, plus more to taste
1 pinch cayenne pepper, or to taste
1 tablespoon olive oil
2 cups chopped leeks, washed thoroughly and drained
½ teaspoon kosher salt, or more to taste
2 tablespoons water, or as needed
½ cup sliced green onions
1 tablespoon fresh lemon juice
½ cup mascarpone cheese
freshly ground black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with a silicone liner (such as Silpat®).
  • Combine butter, beer, salt, and sugar in a saucepan over medium-high heat. Let butter melt and bring to a simmer. Add flour all at once and stir with a wooden spoon until it all comes together, about 30 seconds. Continue to cook and stir until the dough dries out a bit and starts sticking to the bottom of the pan, another minute or so. Turn off the heat and continue stirring for another 1 to 2 minutes, scraping as much off the bottom of the pan as you can.
  • Transfer dough into a bowl. Add one egg and whisk it into a bit of the hot dough. Keep whisking in more dough until incorporated. Repeat with remaining egg, cleaning out the whisk as needed, until well combined and dough is sticky.
  • Add ¾ cup Cheddar cheese and cayenne and stir until incorporated.
  • Scoop 12 rounded tablespoons of dough onto the prepared baking sheet. Press a little Cheddar on the tops and sides of each puff.
  • Bake in the center of the preheated oven until nicely puffed and beautifully browned, about 25 minutes. Turn off the oven and crack the door; let cheese puffs cool, undisturbed, for 30 minutes.
  • Meanwhile, make the spread: Heat olive oil in a pan over medium heat. Add leek and ½ teaspoon salt; cook and stir until just barely tender, 7 to 10 minutes, adding a splash of water every few minutes to prevent browning.
  • Stir in green onions and sauté briefly for 1 to 2 minutes. Transfer leek-onion mixture to a bowl and let cool for 5 to 10 minutes.
  • Add lemon juice and mascarpone cheese and mix until well combined. Season with salt and pepper to taste. Refrigerate until cheese puffs have finished cooling.
  • Serve cheese puffs with spread.

SHARP CHEDDAR CHILI CHEESE CRACKERS RECIPE - (4.5/5)

Sharp Cheddar Chili Cheese Crackers Recipe - (4.5/5) image

Provided by á-170995

Number Of Ingredients 10

4 tablespoons unsalted butter, at room temperature, 1/2 stick
1 cup sharp cheddar cheese, finely grated
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper
1 cup all-purpose flour
2 tablespoons cold water
1/2 teaspoon garlic powder
1 teaspoon chili powder
1/2 teaspoon ancho chili powder
1/2 teaspoon smoked paprika

Steps:

  • In the bowl of an electric stand mixer fitted with a paddle attachment, beat together butter, cheese, salt, and pepper. It may seem strange to blend butter and cheese, but it will come together in a softball. With mixer on low-speed, slowly add flour. Mixture will become dry and crumbly. Add 2 tablespoons of water, 1 tablespoon at a time. Beat until mixture just comes together into a ball. The mixture may take an extra teaspoon of water, but don't add too much. The dough should be moist but not wet. Knead the spices into the dough. Leaving streaks of the seasoning is just fine. Wrap each disk of cracker dough in plastic wrap and refrigerate for at least 30 minutes, but an hour is better. The dough can also be frozen for future use. While dough chills, place a rack in the center and upper third of the oven and preheat oven to 375°F. Line 2 baking sheets with parchment paper and set aside. On a lightly floured work surface, roll the dough very thin, about an eighth of an inch thick. Use a round cookie cutter to cut out the crackers. If you like them square, you can just use a knife and cut the dough into squares. Dot center of cracker with a fork so that it cooks evenly. Place crackers on prepared baking sheets. The pieces can be close together as they won't expand much when baking. Bake for 13 to 15 minutes until fragrant, golden brown, and crisp. Allow to cool before serving. The crackers can be stored in an airtight container for 2 or 3 days.
