SOUTHERN BUTTERMILK BISCUITS
My Grandmother taught me how to make these Southern buttermilk biscuits way before I was even a teenager. This is the only recipe I have ever used and they are always a hit.

Steps:
- 1. Cut lard into flour using a pastry blender or two forks, and add the pinch of sugar. Add enough buttermilk to make a soft dough and knead until smooth (do not over knead as this will lend a tough biscuit).
- 2. With floured hands pinch off a bit of the dough and roll into a ball, lightly flatten in a greased iron skillet or pan. Bake in a preheated 425 degree oven for 15-18 minutes. Brush with melted butter when removed from the oven.

- In a large bowl combine flour, baking soda, salt and baking powder.
- In a separate bowl combine eggs, Amish Starter and oil.
- Mix well.
- Add starter to dry ingredients and mix until dough pulls away from sides of bowl.
- Transfer to a lightly floured surface and roll until 1/2 inch thick.
- Using a 3 inch circle cutter or floured glass cut out biscuits and place on a lightly grease cookie sheet. Brush top of biscuits with melted butter.
- Cover and let rise 30 minutes.
- Bake in a preheated 350 degree oven for 15 - 20 minutes.
AMISH FLUFFY HOMEMADE BISCUITS
These biscuits are easy to make and so soft and fluffy. A great biscuit to go with your sausage gravy or to serve with any meal. They are so much better than anything you'll buy at the store.

- Mix dry ingredients in large bowl.
- Slice butter into chunks and cut in until crumbly.
- Add buttermilk.
- Gently mix until everything is moistened and combined. Do not overmix.
- Place dough onto a floured surface, and roll or pat into a circle about 1 inch thick.
- Cut circles with biscuit cutter or cup.
- Place on greased cookie sheet with the sides touching.
- Bake at 450° for 11 - 13 minutes.

- Preheat the oven to 450 degrees F (230 degrees C). Line a cookie sheet with parchment paper and spray with nonstick cooking spray. Set aside.
- Mix flour, baking powder, baking soda, salt, and sugar in a large bowl. Cut in cold butter. Add buttermilk and stir until just combined. Do not overmix.
- Place on a floured surface and pat into a circle about 1-inch thick. Cut biscuits using a 3.5-inch biscuit cutter. Arrange 6 biscuits in a circle, 1 in the center, edges touching.
- Bake in the preheated oven until bottoms are browned and tops are starting to brown, 11 to 14 minutes.

- In a large bowl, combine the first six ingredients. Cut in shortening until mixture resembles coarse crumbs. In a small bowl, combine sour cream and egg; add to dry ingredients just until moistened. Turn onto a lightly floured surface; knead 8-10 times., Pat or roll out to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on a greased baking sheet. Brush with butter. Bake at 425° for 8-12 minutes or until golden brown. Serve warm.
