6 shallots, peeled and thinly sliced
5 large cloves garlic, thinly sliced
¼ cup sliced almonds
2 tablespoons olive oil, or more as needed
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Place green beans in a large bowl. Mix in shallots, garlic, and almonds. Drizzle olive oil over the top; sprinkle salt and pepper evenly on top. Toss until everything is evenly coated with oil. Spread in a single layer on the prepared baking sheet.
  • Roast in the preheated oven until beans are slightly shriveled and shallots are lightly browned, 10 to 15 minutes.

1/4 cup hazelnuts, toasted and coarsely chopped
1 tablespoon finely chopped lemon zest
2 tablespoons chopped fresh parsley leaves

Steps:

  • Preheat oven to 425 degrees F.
  • Toss the green beans in a large baking dish with the oil and shallots and season with salt and pepper. Roast until just cooked through and golden brown, about 15 to 18 minutes. Combine the hazelnuts, zest, and parsley in a small bowl. Transfer green beans to a platter and sprinkle with the hazelnut mixture.

2 tablespoons extra virgin olive oil
3 cloves garlic, peeled and sliced into quarters
1¼ teaspoons kosher salt
½ teaspoon ground black pepper

1 teaspoon lemon zest, from one lemon
2 teaspoons lemon juice, from one lemon
½ cup dried cranberries
½ cup walnuts

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Line a rimmed baking sheet with heavy-duty aluminum foil. Place the walnuts on the prepared baking sheet and bake until until fragrant, 5 to 10 minutes. Keep a close eye on the nuts so they don't burn. When cool enough to handle, transfer the nuts to a cutting board and coarsely chop. Place the foil back on the baking sheet (you'll use it for the green beans) and increase the oven temperature to 450°F.
  • Place the cranberries in a small heatproof bowl. Cover the cranberries with boiling water and set aside.
  • Directly on the foil-lined baking sheet, use a rubber spatula to toss the green beans with the olive oil, garlic, salt, pepper, and sugar. Roast the green beans for 15 minutes, then stir with a spatula to promote even cooking. Continue roasting until the beans are tender, slightly browned and just starting to shrivel, about 10 minutes more.
  • Drain the cranberries.
  • Add the lemon zest, lemon juice, drained cranberries, and toasted walnuts to the green beans. Toss well, then taste and adjust seasoning if necessary.

2 1/2 pounds fresh green beans (washed & ends trimmed)
1/2 pound bacon (roughly chopped)
1 small yellow onion (finely chopped)
3 garlic cloves (minced)
1/2 cup pine nuts
Juice of 1/2 a lemon
Salt & freshly ground pepper (to taste)

Steps:

  • Prepare a large bowl of ice water for an ice bath. Set aside.
  • Fill a large pot with salted water and bring it to a boil over high heat. Add the washed and trimmed green beans to the salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and then shock them by dumping them in the bowl of ice water to stop the beans from cooking any more. Drain the beans again and pat dry.
  • Cook the bacon in a large, heavy pan over medium-high heat until crisp. I prefer chopping my bacon first and then stirring it around in the pan to cook it for this dish, rather than frying the bacon in strips and chopping it up afterwards. Remove the cooked bacon pieces to a plate lined with paper towels using a slotted spoon, then pour out all but 2 tablespoons of the excess bacon grease
  • Add the onion to the pan with the reserved bacon grease and sauté until soft, about 4 to 5 minutes. Add the garlic and sauté just until fragrant, about 1 more minute.
  • Add the green beans and the pine nuts to the onion and garlic and toss to combine. Cook until heated through and pine nuts are toasty, about 5 to 6 minutes more, tossing frequently so the pine nuts don't burn. Return the bacon to the pan, add the lemon juice and toss everything to combine. Season with salt and pepper to taste.

1 lb green beans
4 -5 garlic cloves, coarsely chopped
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup fresh parsley, finely chopped
1/4 cup coarsely chopped pine nuts or 1/4 cup hazelnuts
1 teaspoon finely grated lemon zest

Steps:

  • Preheat oven to 450°F.
  • Slice the shallots length-wise into ¼ inch slices.
  • Put shallots, green beans and garlic in a large bowl, toss with the olive oil and the salt and pepper.
  • Transfer to a 10x15 glass or ceramic dish and roast until the vegetables are tender and very lightly browned, stirring once, 18 to 20 minutes.
  • In the meantime combine the parsley, nuts and lemon zest in a small bowl.

  • Cook green beans in boiling salted water until tender, then drain and cool under running water. Set aside.
  • Put olive oil, shallots, garlic cloves and some salt in a frying pan, then cook gently for about 8 mins until soft but not brown. Tip in the beans and a grind of pepper, toss well, then warm through. Finish with a squeeze of lemon and toasted flaked almonds.

1/4 to 1/2 teaspoon salt, plus more to taste
2 tablespoons ghee (or three tablespoons unsalted butter)
2 medium (95 g) shallots, thinly sliced
1 clove (5 g) garlic, grated
1/4 cup (35 g) slivered almonds
1 tablespoon coconut sugar (or other sugar)
1.25 pounds (525 g) green beans, ends snapped off and bruised bits removed
1/4 cup (15 g) grated Pecorino cheese
1/4 cup (35 g) dried cranberries

Steps:

  • Fill a 3.5-quart or larger stockpot with water and add 1/4 to 1/2 teaspoon salt. Turn heat to medium-high, and while water comes to a boil, start the shallot mixture: In a large sauté pan, melt ghee.
  • Once pan is warm, add sliced shallots, garlic, and almonds. Let cook over medium heat for about 10 minutes, until wilted and dark throughout. Then, lower heat to its lowest possible setting, stir in sugar, and leave mixture alone.
  • Meanwhile, once the water has boiled, add trimmed green beans and cook for 4 to 10 minutes, until soft but still crunchy. The beans only need 3 to 5 minutes to cook, but we tend to like our blanched beans a little softer than most people, so we let ours cook even longer; just taste to measure crispness along the way, and stop cooking when the beans are the doneness you like.
  • Once beans are cooked, remove with a slotted spoon to the pan of shallots, garlic, and almonds. Toss right in the skillet, and add Pecorino and cranberries, mixing everything to coat.
  • Serve warm or at room temperature.

3 cups onions, 2 large Chopped
1 cup celery, 2-3 stalks Chopped
1 garlic clove, minced
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
2 cups bulgur, rinsed
3 cups reduced-sodium chicken broth
1 bay leaf
1/4 teaspoon salt (to taste)
2/3 cup dried cranberries
1/4 cup orange juice
2/3 cup hazelnuts, toasted Chopped (2 ounces)
1/2 cup fresh flat-leaf parsley, Chopped
fresh ground pepper

Steps:

  • Over medium heat, in a dutch oven, heat oil.
  • Add onions and celery and cook, stirring often, for approximately 5 to 8 minutes or until softened.
  • To softened mixture, add garlic, cinnamon, and allspice and cook for 1 minute, stirring often.
  • Add bulgur, stir for a few minutes to combine, than add broth, bay leaf, and salt.
  • Bring to a simmer.
  • Reduce heat to low, cover dutch oven and simmer until all liquid is gone and bulgur is tender, approximately 15 to 20 minutes.
  • In a small microwave-safe bowl, combine dried cranberries and orange juice.
  • Cover with plastic wrap and add a few slits in the plastic wrap for vents.
  • Microwave on high for approximately 2 minutes.
  • This step can also be done on the stove top.
  • In a small saucepan, bring dried cranberries and orange juice to a simmer.
  • Remove from microwave or heat and set aside to let cranberries plump.
  • In large mixing bowl, add bulgur and discard the bay leaf.
  • Add cranberries, toasted hazelnuts, parsley, and pepper to bulgur.
  • Fluff mixture with a fork and serve.
  • NOTE: If making the stuffing ahead of time and reheating; place bowl of stuffing in a baking dish with 1/2 cup water added.
  • Cover stuffing and microwave on high for 10 to 15 minutes or until heated through.
  • The stuffing can also be baked at 350F degrees for 25 to 30 minutes or also until heated through.
  • If using to stuff a turkey, prepare as stated above.
  • Let cool completely and place about 5 cups of stuffing loosely into the turkey cavities.
  • Heat remainder separately.

3 tablespoons fresh tarragon leaves, coarsely chopped
1 1/2 teaspoons grated lemon zest

Steps:

  • Preheat oven to 350°F. Spread hazelnuts on a baking sheet and toast in the oven, tossing halfway through, until skins are splitting and nuts are fragrant, about 15 minutes. Transfer to a bowl to steam and cool, then rub the nuts with a kitchen towel to remove their skins. Roughly chop the hazelnuts and set aside.
  • In a large sauté pan over medium-high heat, melt 1 tablespoon butter. Add shallots and cook, tossing, until lightly golden and softened, 3 to 4 minutes. Remove and set aside.
  • Reduce heat to medium, and add 1/2 cup water, remaining 2 tablespoons butter, salt, and pepper to the same pan. Add the haricots verts and toss to coat. Cover pan and cook, tossing occasionally, until bright green and crisp-tender, about 3 minutes. Remove cover, raise heat to high and cook until the water evaporates and the beans are glazed, about 3 minutes more. Toss green beans with tarragon, lemon zest, hazelnuts, and sautéed shallots. Serve immediately.
