My dad came up with this recipe years ago. Over the years, everyone I have shared this with always reacts the same way. First, they tell me 'that sounds awful!' After they eat it their story changes to 'that was amazing!' I know the idea of mayo and mustard on a scrambled egg disk sounds odd, but trust me; you'll love it. I know the cooking method for the eggs may be sacrilege for some folks; I just ask that you try it before changing it up.

2 eggs, beaten
1 tablespoon milk
1 pinch salt
2 tablespoons mayonnaise
2 slices bread, toasted
1 teaspoon prepared yellow mustard

Steps:

  • Beat eggs, milk, and salt together in a bowl.
  • Heat a small nonstick skillet over medium heat. Cook eggs in hot skillet without stirring until set on the bottom, about 1 1/2 minutes. Flip eggs and cook without stirring until set on the other side, about 1 minute more. Remove from heat.
  • Spread 1 tablespoon of mayonnaise on each piece of toast. Spread mustard over mayonnaise onto each piece of toast. Place eggs on one piece of toast and top with remaining toast.

FRIED SCRAPPLE AND EGG SANDWICH

Four 1/4-inch-thick slabs scrapple
1 cup instant flour, such as Wondra
Salt and freshly cracked black pepper
3 tablespoons butter, plus more for frying
4 slices American cheese
4 hen eggs
8 slices soft white bread
Freshly squeezed OJ, for serving

Steps:

  • Dredge the scrapple in the instant flour and sprinkle lightly with salt and pepper. Heat the butter in a saute pan or skillet over medium heat and gently brown the scrapple on each side, about 3 minutes. Remove the scrapple from the pan and place on a paper-towel-lined tray. Top with the American cheese and allow to slowly melt on top for about 2 minutes. Discard the butter and wipe the pan. Fry the eggs sunny side up in fresh butter and sprinkle with salt and pepper. Arrange the eggs over the slices of scrapple and cheese. Layer the scrapple, egg and cheese between 2 pieces of soft white bread, making 4 sandwiches total. Enjoy paired with freshly squeezed OJ. This is just a simple breakfast sandwich that my family loves. This sandwich can be eaten as is, or doctored any way you choose to suit your taste. Some like to add lettuce and tomato....some like to add cheese.....some prefer wheat bread...others prefer white.....just feel free to adjust any way you like!!!

2 slices bread, toasted
1 tablespoon mayonnaise
1 egg
1/2 teaspoon water
salt and pepper
2 slices bacon

Steps:

  • Slice the 2 slices bacon in half and cook to a crisp.
  • Drain on paper towel, and pour drippings out of pan.
  • Whip egg with water, add salt and pepper and scramble eggs in same pan in which the bacon was cooked.
  • Remove egg to cool.
  • After bread has toasted, spread with mayo and layer on eggs and bacon.
  • Slice and serve with favorite breakfast beverage.
