GRANDMA NEELY'S FRIED PORK CHOP VEGETABLE SOUP

Steps:
- In a large pot over medium heat, melt butter and saute carrots, celery and onion until softened, about 6 minutes. Add the flour to the vegetables and blend well. Cook the flour until it achieves a slight blonde color. Next, stir in the tomato paste and allow to slightly cook, about 1 to 2 minutes. Pour in vegetable broth while stirring and bring soup to a boil. Reduce heat and add the can of diced tomatoes and the potatoes. Simmer until potatoes are cooked through, about 20 minutes.
- Meanwhile, preheat the peanut oil in an electric fryer or large pan fitted with deep-fry thermometer to 325 degrees F. In a large casserole dish, mix together flour, and season with salt and pepper. Dredge chops in flour mixture, patting excess off. Place chops, 2 at time, in fryer and cook until cooked through, about 6 minutes. Cool slightly and remove to a paper towel lined sheet tray.
- Add the cooked chops to soup and simmer another 30 minutes, or until the meat falls off the bone. During the last 10 minutes of cooking, add the corn, peas, and green beans. Ladle soup into individual bowls, top with a pork chop and sprinkle with parsley.
PORK CHOP SOUP
A cheap but tasty, hearty soup that you'll always have seconds of. Serve fresh, with bread if desired.

- Place pork chops, paprika, oregano, garlic powder, salt, pepper, chili powder, bay leaf, chicken broth, water, and soy sauce in a large stock pot. Bring to a boil, uncovered, then reduce heat to medium low and let simmer for 1 hour. Remove the pork chops and set aside to cool.
- Whisk 3/4 cup of the cooking liquid with the flour; set aside. When the pork chops are cool remove and discard any bones or fat. Chop or shred the meat into bite size pieces.
- Add the potato, broccoli, carrot, onion, celery, and cooked pork back to the pot. Bring the mixture to a boil, stir in the flour mixture. Reduce heat and simmer for 1 hour. Remove the bay leaf and gently mash the potatoes before serving.

THE NEELEY'S SMOTHERED PORK CHOPS
Smothered pork chop and chicken recipes are all over the South. This one came from the Neeley's Celebration cookbook. I think the buttermilk is what makes this my favorite. I kind of adapted the original recipe a little bit to fit my family's tastes.

Steps:
- Pat the porkchops dry with a paper towel and season with salt and pepper.
- Combine the flour, onion powder, garlic powder, cayenne and paprika.
- Dredge the chops in flour mixture on both sides until lightly coated.
- Heat a cast iron skillet over medium heat and coat with the peanut oil.
- When oil is hot, slip in chops and fry on each side, about five minutes per side, until golden brown.
- Remove chops from pan and set aside.
- Add onions to pan and saute until fragrant, about a minute.
- Add three tablespoons of the seasoned flour left over from dredging the chops to the skillet and stir with a wooden spoon until it makes a paste.
- Slowly whisk in the chicken broth, making sure there are no lumps.
- Turn up the heat and allow the chicken broth to reduce and thicken occasionally stirring.
- Once the sauce coats the back of your wooden spoon, pour in the buttermilk.
- Add hot sauce and stir to combine.
- Return the chops to the skillet and simmer for 15 more minutes until the chops are cooked through.
GRANNY'S BUTTERMILK FRIED PORK CHOPS
These are the tender, slow cooked, melt in your mouth pork chops that your southern grandma used to make. I cut the fattening factor by using "Enova" oil. This is comfort food at its best. I like to cut out the bone of my cooked pork chop then put it between two slices of plain soft white bread..mmmm.. heaven! This isn't actually my grandma's recipe--her recipes died with her, but this is pretty darned close!

- Sprinkle both sides of pork chops lightly with seasoning salt. I like Garlic & Pepper Seasoning salt, but Lawry's is good, so is Old Bay.
- Place chops into a ziplock bag and pour in the buttermilk. Squeeze air out of the bag before you close it, and mush it around a little to make sure that all chops are coated with the buttermilk. LeT stand in the fridge for several hours.
- In a pie plate, mix together flour, 1/8 tsp black pepper, and 1/2 tsp seasoning salt. more or less to your taste.
- Heat oil in a large heavy frying pan to medium high heat. Oil should reach slightly less than 1/2 inch deep in the pan.
- Dip buttermilk coated chops in flour mixture making sure that it is completely coated. Repeat with all chops.
- When oil is hot, add chops and let cook uncovered for about 2 minutes. Turn down heat to medium low and let cook uncovered until bottoms are browned and red juices start to accumulate over the bones.
- Turn over with tongs, cover pan with a lid, then turn down heat slightly and let cook until browned on the bottoms.
- Transfer to a sheet of crinkled foil. Wrap foil loosely around chops and let rest for about 5 minutes.

GRANDMA'S PAN-FRIED PORK CHOPS
These Asian-style pork chops are coated with flour, seasoned with soy sauce, salt and pepper and then quickly pan-fried. They are crisp golden brown on the outside and juicy on the inside. The chopped jalapeños, garlic and scallions give it its winning flavor.

- Season both sides of each pork chop generously with salt and pepper. Rub soy sauce over each and dust cornstarch over them. Pour the 1/4 cup flour onto a plate and coat pork chops in flour. Set aside.
- Put about 1 Tbsp oil in a large skillet. Fry pork chops over high heat till crisp brown, about 3-4 minutes on each side. You may need to pan-fry them for longer if you have thicker pork chops. Place finished pork chops on a plate and dry off residual oil with a paper towel. Set aside.
- Use some of the leftover oil in the skillet to stir-fry the garlic cloves, spring onion, and sliced jalapeño pepper. Add 1 tsp sesame oil. Return pork chops to the pan and stir-fry all together for about 30 seconds. Let pork chops rest for 5 minutes.
- Plate and serve over rice.
DEEP FRIED PORK CHOP WITH VEGETABLE SOUP

- 1. FOR THE PORK CHOPS PEANUT OIL TO FRY 1 1/2 CUPS ALL-PURPOSE FLOUR 1 TABLESPOON SEASONING SALT 1 TEASPOON GROUND BLACK PEPPER 4 (1-INCH THICK) BONE-INCENTER CUT PORK CHOPS
- 2. IN A LARGE POT OVER MEDIUM HEAT, MELT BUTTER AND SAUTE CARROTS, CELERY AND ONION UNTIL SOFTENED, ABOUT 5 MINUTES.
- 3. ADD THE FLOUR TO THE VEGETABLES AND BLEND WELL. COOK FLOUR UNTIL IT ACHIEVES A SLIGHT BLONDE COLOR.
- 4. NEXT, STIR IN THE TOMATO PASTE AND ALLOW TO SLIGHTLY COOK, ABOUT 1 TO 2 MINUTES. POUR IN VEGETABLE BROTH WHILE STIRRING AND BRING SOUP TO A BOIL.
- 5. REDUCE HEAT AND ADD THE CAN OF DICED TOMATOES AND THE POTATOES. SIMMER UNTIL POTATOES ARE COOKED THROUGH, ABOUT 20 MINUTES.
- 6. MEANWHILE PREHEAT THE PEANUT OIL IN A ELECTRIC FRYER WITH A DEEP-FRYER THERMOMETER TO 325 DEGREES F.
- 7. IN A LARGE CASSEROLE DISH, MIX TOGETHER FLOUR, AND SEASON WITH SALT AND PEPPER. DREDGE CHOPS IN FLOUR MIXTURE, PATTING EXCESS FLOUR OFF.
- 8. PLACE CHOPS, 2 AT A TIME, IN FRYER AND COOK UNTIL COOKED THROUGH, ABOUT 6 MINUTES. COOL SLIGHTLY AND REMOVE TO A PAPER TOWEL LINED SHEET TRAY.
- 9. ADD THE COOKED CHOPS TO SOUP AND SIMMER ANOTHER 30 MINUTES, OR UNTIL THE MEAT FALLS OFF THE BONE. DURING THE LAST 10 MINUTES OF COOKING, ADD THE CORN, PEAS, AND GREEN BEANS. LADLE SOUP INTO INDIVIDUAL BOWLS, TOP WITH A PORK CHOP AND SPRINKLE WITH PARSLEY.
GRANDMA'S PORK CHOPS
Steps:
- 1. Rub both sides of the chops with the dry rub, coating them generously. Place them in a deep baking dish, overlapping if necessary. Stir the citrus juices, vinegar, and garlic together in a bowl until blended. Pour over the chops and massage into them.
- 2. Marinate the chops at room temperature for up to 1 hour or in the refrigerator for up to 1 day.
- 3. Pour enough oil into a large, heavy skillet to film the bottom. (If necessary, work in batches or use two skillets - if you have them and space on the stove to hold them.) Heat the oil over medium heat until rippling. Remove the chops from the marinade and discard the marinade. Add as many chops as will fit in the pan without touching. Cook until the chops are well browned on the underside, about 6 minutes. Turn the chops and cook until they are firm near the bone when you poke them with a finger, about 8 minutes. Keep warm while cooking the second batch, if necessary. Serve immediately.

DEEP-FRIED PORK CHOPS AND QUICK VEGETABLE SOUP
Steps:
- Melt the butter in a large pot over medium heat. Add the leeks, celery, and carrots, and cook, stirring, until softened, 10 to 12 minutes. Sprinkle the flour over the vegetables, and continue to cook, stirring, until the flour reaches a light blond color. Add the tomato paste, and cook for another minute. Add the stock, and bring the mixture to a boil, stirring occasionally. Add the diced tomatoes and the potato, reduce the heat to low, and simmer until the potato is cooked through, about 20 minutes. The soup can be made up to 1 day in advance.
- While the soup is simmering, heat 2 inches of peanut oil in a large Dutch oven to 325°F. Place the flour in a large casserole dish, and season with salt and pepper. Dredge the chops in the flour mixture, patting off the excess. Place the chops, two at a time, in the hot oil, and fry until cooked through, about 6 minutes. Transfer the cooked chops to a paper towel lined baking sheet, and repeat with the remaining chops.
- Add the cooked chops to the soup and simmer over medium-low heat for another 30 minutes, or until the meat from the chops falls off the bone. During the last 10 minutes of cooking, add the lima beans, peas, corn, and green beans. To serve, ladle the soup into wide, shallow bowls, and garnish with the parsley.
