GRILLED PORTOBELLO AND MONTRACHET SALAD

8 ounces Montrachet goat cheese, cut into 4 equal-sized rounds
4 large outer-leaves radicchio
3 medium-sized Portobello mushroom caps, stems and gills removed
2 tablespoons olive oil, plus more for the cheese
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
2 tablespoons fresh lemon juice
2 tablespoons sherry or red wine vinegar
7 ounces mesclun lettuce mix (about 3 cups)
1/4 cup roasted red pepper strips
1/4 cup shelled walnut halves
1 lemon, cut into wedges

Steps:

  • Preheat an outdoor grill or cast-iron grill pan to medium-high.
  • Working on baking sheet, wrap each round of cheese in a radicchio leaf like an egg roll, and pinch them a little to help it keep their shape. Arrange them on 1 side of the baking sheet.
  • Place the mushroom caps on the other side of the baking sheet; drizzle with the olive oil, and season with salt and pepper. Grill the mushrooms until tender and juicy, turning once, about 6 minutes. Next, lightly drizzle the wrapped goat cheese with oil and grill until slightly charred and warm, turning occasionally, about 1 minute. Immediately remove and slice in half on the diagonal.
  • Slice the grilled mushroom caps into strips and add them to a bowl with the lemon juice and sherry wine vinegar. Toss to combine.
  • In a bowl, toss the lettuce mix with the mushrooms and arrange in 4 bowls. Arrange 2 goat cheese halves in the center of each. Sprinkle each salad with red pepper and walnuts, and serve garnished with lemon wedges.

1/4 cup olive oil
1/3 cup balsamic vinegar
2 tablespoons orange juice
1 tablespoon minced garlic
1/2 teaspoon chili flakes

1/2 teaspoon fresh ground black pepper
1 1/4 pound flank steak, trimmed of all visible fat
4 large portobello mushroom caps (about 3/4 to 1 pound), wiped clean with a paper towel
1 tablespoon water
2 teaspoons Dijon mustard
3/4 pound green beans, trimmed
1 (5-ounce) bag baby spinach leaves (5 cups baby spinach, lightly packed)
4 vine-ripened tomatoes (1 pound), each sliced into 8 wedges
1/2 small red onion, thinly sliced

Steps:

  • Make marinade:
  • Combine 2 tablespoons olive oil, 3 tablespoons balsamic vinegar, orange juice, 2 teaspoons minced garlic, chili flakes, and 1/4 teaspoon each salt and pepper in a bowl and whisk. Place steak and mushrooms in a glass baking dish or sealable plastic bag and pour marinade on top. Marinate in the refrigerator for at least 1 or up to 4 hours.
  • Make dressing:
  • Combine remaining 2 tablespoons olive oil, 3 tablespoons vinegar, 1 teaspoon minced garlic, water, mustard, and remaining 1/4 teaspoon each salt and pepper. Whisk until incorporated.
  • Place green beans in a steamer basket over a few inches of boiling water and steam until tender-crisp, about 3 minutes. Allow to cool in the refrigerator, or to cool quickly, drain and plunge in a bowl of ice water for 2 minutes. Drain and reserve.
  • Spray a grill or grill pan with nonstick cooking spray and heat over medium-high heat. Remove steak and mushrooms from marinade, and discard marinade. Grill steak until medium-rare and mushrooms until cooked through but still juicy, about 4 to 5 minutes per side for both steak and mushrooms. Remove to a cutting board and let rest about 10 minutes. Cut steak across the grain into 1/4-inch slices; cut mushrooms into 1/4-inch slices.
  • To assemble salad, toss steak slices, mushroom slices, spinach leaves, tomatoes, green beans and onions with dressing. Divide among 4 plates.

I found this recipe last summer on Epicourious.com. It was the "hit" recipe of the season! Perfect along side a grilled steak. If you love portobello mushrooms, you will love this salad!

7 large portabella mushrooms, stemmed (about 2 lbs)
2/3 cup olive oil
2 large red bell peppers
1 tablespoon red wine vinegar
1 tablespoon chopped fresh rosemary
1 clove garlic, peeled
1 (5 ounce) package mixed baby greens

Steps:

  • Prepare barbeque (medium heat).
  • Brush both sides of mushrooms with 1/3 cup olive oil.
  • Place whole mushrooms and whole red bell peppers on grill rack.
  • Grill till mushrooms are tender and bell peppers are blackened on all sides, turning occasionally, about 20 minutes for mushrooms and 25 minutes for bell peppers.
  • Transfer mushrooms to a plate.
  • Enclose bell peppers in a paper bag.
  • Let stand for 10 minutes.
  • Peel and seed peppers.
  • Cut mushrooms and bell peppers into 1/2 inch wide strips.
  • Season mushrooms and peppers with salt and pepper to taste.
  • Combine 1 tablespoon red wine vinegar, chopped fresh rosemary and garlic clove in food processor.
  • With machine running, gradually add the remaining 1/3 cup of olive oil and proces until well blended.
  • Season dressing with salt and pepper to taste.
  • Arrange mixed greens on a large platter.
  • Top with mushroom strips, and then red bell pepper strips.
  • Drizzle dressing over all and serve.

(Be sure to consult the grill manufacturer's guide for best results.) If your grill has a thermometer, aim to keep the temperature at about 350 degrees F throughout grilling.Set the flank steak on a cutting board. Starting at the thin, narrow end of the steak, slice it in half horizontally to within 2 inches of the opposite wide end. Open it up like a book so you have 1 long piece. Pound the steak with a mallet to an even thickness of about 1/2 inch. Cover the steak with the curry paste and season with 1 teaspoon salt. ¼ cup coarsely chopped fresh basil
1 clove garlic, minced, or more to taste

1 tablespoon olive oil
salt and ground black pepper to taste
1 (6.5 ounce) bag butter lettuce mix
2 tablespoons balsamic vinegar, or to taste

Steps:

  • Mix tomatoes, mozzarella, basil, 1 clove minced garlic, and 1 tablespoon olive oil in a bowl; toss to coat. Cover bowl and refrigerate.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place steak in a large resealable bag; add 1 clove minced garlic, 1 tablespoon olive oil, salt, and pepper. Seal the bag and distribute the oil mixture over the steak.

1 large onion, halved and thinly sliced
4-1/2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
2 tablespoons balsamic vinegar
HORSERADISH SAUCE:
1/2 cup sour cream
1-1/2 teaspoons prepared horseradish
1/4 teaspoon Worcestershire sauce
SANDWICHES:
12 slices white bread
1/4 cup butter, melted
4 cups spring mix salad greens
2 tablespoons red wine vinaigrette
3/4 cup julienned roasted sweet red peppers

  • In a small bowl, combine 2 tablespoons oil and herbes de Provence. Rub over tenderloin; cover and refrigerate for 2 hours. Place mushrooms in a small bowl; toss with vinegar and remaining oil. Cover and refrigerate until grilling., In a large skillet, cook the onion, sugar, salt and pepper in oil over medium heat for 15-20 minutes or until golden brown, stirring frequently.
