Good olive oil
1 red bell pepper, seeded and sliced into thin strips
1 yellow bell pepper, seeded and sliced into thin strips
1/2 teaspoon sugar
1 tablespoon capers, drained
2 tablespoons julienned fresh basil leaves
Kosher salt
Freshly ground black pepper
Baguette
3 ounces creamy Gorgonzola or other blue cheese, at room temperature

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat 2 tablespoons of olive oil in a medium saute pan over medium-high heat. Add the peppers and cook until soft, about 12 to 15 minutes. Sprinkle with the sugar and continue cooking for 2 more minutes. Stir in the capers and basil, and season, to taste, with salt and pepper. Set aside.
  • Slice the baguette crosswise into 18 thin round slices. Brush the bread rounds lightly with olive oil on 1 side. Arrange them in rows, oil side up, on a sheet pan lined with parchment paper and toast in the oven until lightly browned, about 7 to 10 minutes.
  • Top each toast round with a teaspoonful of the pepper mixture. Place 2 small pieces of Gorgonzola on top. Return the toast to the oven for 1 to 2 minutes and warm through. Serve immediately.

2 medium sweet red peppers, halved and seeded

1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 French bread baguette (about 12 ounces)

Steps:

  • Remove papery outer skin from garlic bulb (do not peel or separate cloves). Brush with 1 teaspoon oil. Wrap in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool., Broil red peppers 4 in. from the heat until skins blister, about 10 minutes. Immediately place peppers in a bowl; cover with plastic wrap and let stand for 15-20 minutes. , Peel off and discard charred skin. Coarsely chop peppers. Cut top off garlic head, leaving root end intact. Squeeze softened garlic from bulb and finely chop. , In a bowl, combine the parsley, basil, lemon juice, salt, pepper and remaining oil. Add peppers and garlic; mix well. Cut bread into 16 slices, 1/2 in. thick; broil until lightly toasted. Top with pepper mixture. Serve immediately.

2 garlic cloves, minced
1 large garlic clove, peeled

1 loaf rustic Italian bread, cut crosswise into 1-inch thick pieces (Ends removed, choose a bread that measures around 12x5-inches)

1/4 cup fresh basil leaf, sliced

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium-high heat until shimmering.
  • Add the pepper strips and sauté until lightly browned at the edges and beginning to soften, about 5 minutes.
  • Reduce the heat to medium low, stir in the minced garlic, cover and continue cooking until soft, about 8 minutes longer, stirring occasionally. Season with salt and pepper to taste; remove from heat and stir in the vinegar.
  • Grill the bread over a medium heat, turning once, until golden brown on both sides, 1 to 2 minutes.
  • Place the toast slices on a large platter, rub the peeled garlic over the tops, and brush with the remaining olive oil.
  • Place a few slices of mozzarella cheese on each toast. Cover with a portion of the sautéed peppers, the top with a sprinkling of basil.

2 cups fresh tomatoes, finely chopped, seeds and pulp removed
1/2 teaspoon italian seasoning

Steps:

  • Preheat oven to 425 degreesF.
  • Slice French bread or baguette into 1/2-inch slices.

thick slice sourdough bread
1/2 small fennel bulb, herby tops reserved
1/2 small yellow courgette
1 small bunch mint
1/2 orange, skin cut off and thinly sliced into rounds
1/2 lemon, squeeze the juice
extra virgin olive oil
sea salt & freshly ground black pepper
1 garlic clove, cut in half
125 g buffalo mozzarella

Steps:

  • Heat a griddle pan until smoking hot.
  • Toast the bread well on both sides so it has the griddle pan marks on it.
  • While it is toasting. Using a speed peeler - thinly shave the fennel and courgette into a bowl.
  • Pick off some small mint leaves, tear the big ones and add to the bowl.
  • Pick off some of the fennel tops and add to the bowl.
  • Add the thinly sliced orange and the juice of half a lemon.
  • Add some extra virgin olive oil and season with salt and pepper.
  • When the sourdough is ready put it on a plate. Rub with the cut side of a piece of garlic and drizzle over some olive oil.
  • Tear the mozzarella in half and place on the bread.
  • Pile the fennel and courgette salad on top, drizzle a little more extra virgin olive oil, sprinkle over a few more fennel tops and serve.
  • Serve with a glass of chilled Mersault or White Burgundy.
