1/2 cup Old El Paso™ salsa (any variety)
1/2 teaspoon chili powder
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 tortillas; 8 inch)
1 cup shredded lettuce
1/2 cup shredded Monterey Jack cheese (2 oz)

Steps:

  • Mix beans, salsa and chili powder in 1-quart saucepan. Heat over medium heat about 5 minutes, stirring occasionally, until warm.
  • Spoon about 1/4 cup of the bean mixture onto center of each tortilla; spread slightly. Top with lettuce and cheese. Fold over sides and ends of tortillas. Serve with additional salsa if desired.

1 lb bacon
1 cup brown sugar
1/2 cup butter
2 tablespoons soy sauce
1/2 teaspoon garlic

Steps:

  • Melt butter, brown sugar, soy sauce and garlic in saucepan.
  • Cut bacon into thirds. Wrap 5 or 6 green beans in bacon.
  • Lay seam side down in 9x13-inch pan.
  • Pour mixture over roll-ups and cover with foil.
  • Bake in 350°F oven for 40-45 minutes.

2 cloves garlic, minced
1/2 tablespoon corn oil
1 (19 ounce) can black beans, including liquid
1/2-1 cup water
1/4 cup chopped fresh cilantro

Steps:

  • Cook garlic in oil in a skillet over moderate heat, stirring, until fragrant, about 1 minute.
  • Add beans with their liquid and mash with a potato masher or the back of a large spoon to make a coarse purée.
  • Continue to cook, stirring occasionally, until mixture is hot.
  • Stir in enough of water to thin to a creamy consistency.
  • Add pepper to taste.
  • Serve warm, sprinkled with cilantro.
  • (Beans can be made 1 day ahead and chilled, covered. Reheat, adding water if necessary.) Makes 4 servings.
