FLAKY DELI SLICES
This savory "strudel" takes almost no work to assemble. Flaky pie pastry surrounds ham, pepperoni and cheese.

Steps:
- Heat oven to 450°F. Remove pie crusts from pouches; place crusts flat on work surface. Sprinkle each crust evenly with Parmesan cheese.
- Top each crust with ham, pepperoni and Cheddar cheese to within 1 inch of edge. Loosely roll up each crust; place rolls, seam side down, on ungreased cookie sheet. Fold ends under.
- Bake 12 to 17 minutes or until golden brown. Cool 5 minutes. Cut each roll into 16 slices. Serve warm.

This recipe came from the Grand Rapids Press. We have a recipe section once a week and they always highlight a particular person w/a posted recipe. This is a hit w/my kids. Similar to a wrap only baked. Kinda like pizza too. Feel free to add/delete as needed as you can't mess it up.

Steps:
- Heat oven to 450 degrees.
- Remove crusts from pouches: unfold crusts. Press out fold lines.

FLAKY DELI SLICES
A great twist on the sandwich. This is also an easy to assemble & quick treat to bring to an office gathering, babyshower, or to prepare for brunch. Ham, pepperoni, Parmesan cheese and cheddar wrapped up in a flaky pastry crust and sliced! Yum!

Steps:
- Preheat oven to 450° F and spray a cookie sheet with no stick cooking oil.
- Spread out each crust and press out fold lines.
- Top each crust with parmesan cheese, then follow with ham, and pepperoni.
- Next top with cheddar cheese to within 1 inch of edge.
- Roll each crust up, so it resembles a log and place on cookie sheet seam side down.
- Bake for 12-17 minutes or until golden brown.
- Cut into slices and serve warm.
- Feel free to add more cheese or change meats to your taste.

CHICKPEA SALAD SANDWICH
Sometimes you just want a simple, good sandwich that doesn't involve faux deli slices. I keep a tin of chickpeas on hand for just such occassions, and never make it exactly the same way twice...but this is generally a combo of ingredients and flavours I enjoy. I also like to add in a bit of flax oil, just to get my omegas in. Served on some toasted bread, this is a quick and satisfying lunch.

- Rinse and drain the chickpeas if using tinned.
- In a medium bowl mash the chickpeas with a potato masher, I usually mash about half way so there are still some whole ones left.
- Add in all the other ingredients and mix well.
