APPLE CINNAMON ROLLS

Apple Cinnamon Rolls image

This came from the Yankton, South Dakota Press and Dakotan newspaper. My DD does not like cinnamon rolls (my child?) so I thought this might be more like a caramel apple and less like cinnamon. It is very caramel-like and the apples are soft and fragrant. Worth the time to make the filling. If you have a kitchen aid mixer, follow your manufacturer directions to make the dough with the mixer!

GIANT APPLE CINNAMON ROLL

Giant Apple Cinnamon Roll image

This party-sized cinnamon roll is super gooey and comforting -- and sure to wow guests at your next brunch.

Provided by Food Network Kitchen

Categories     dessert

Time 3h45m

Yield 8 to 10 servings

Number Of Ingredients 16

1/2 cup whole milk
One 1/4-ounce packet active dry yeast (about 2 1/4 teaspoons)
1/4 cup granulated sugar
3/4 teaspoon kosher salt
2 3/4 to 3 cups all-purpose flour, plus more for dusting (see Cook's Note)
4 tablespoons (1/2 stick) unsalted butter, melted and cooled, plus more for greasing the pan
1 1/2 teaspoons pure vanilla extract
1 large egg yolk
Nonstick cooking spray, for spraying the bowl
8 tablespoons (1 stick) unsalted butter
2 Granny Smith apples, peeled, cored and cut into small dice
1 cup apple butter
1/2 cup granulated sugar
4 ounces cream cheese
3/4 cup confectioners' sugar
2 tablespoons whole milk

Steps:

  • For the dough: Warm the milk and 1/2 cup of water in a small saucepan over low heat until a thermometer registers 100 to 110 degrees F. Remove from the heat and sprinkle the yeast and a pinch of granulated sugar over top. Set aside undisturbed until foamy, about 5 minutes.
  • Whisk together the salt, 2 3/4 cups flour and remaining granulated sugar in a large bowl. Generously butter a 10-inch springform pan.
  • Combine the melted butter, vanilla and egg yolk in the bowl of an electric mixer fitted with a paddle attachment and mix on low until combined. Add the yeast mixture and continue to mix on low until combined. Add the flour mixture and mix on low until a thick and slightly sticky dough forms. Once the dough comes together, switch to the dough hook and knead on medium speed, adding up to 1/4 cup more flour if needed, to make a soft, smooth ball that sticks to the hook, 3 to 4 minutes.
  • Coat a large bowl generously with cooking spray. Add the dough, turning to coat. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour.
  • For the filling: Meanwhile, heat a large skillet over medium-high heat. Add the butter and cook, swirling, until melted. Add the diced apples and cook, stirring occasionally, until tender, about 8 minutes. Turn off the heat and stir in the apple butter. Transfer to a medium bowl to cool completely.
  • When the dough is ready, punch it down and turn out onto a lightly floured surface. Knead a few times, then roll into a rectangle 12 inches by 18 inches, keeping the longer side closest to you. Spread the cooled apple filling evenly all over the dough. Sprinkle with the granulated sugar. Use a pizza cutter to cut the dough crosswise into 1-inch strips. Starting on the left side, roll 1 strip up jelly roll style. When you get to the end, press another strip to the first one and continue rolling. Repeat this with 2 more strips. Carefully transfer the rolled dough to the center of the prepared pan. The spiral should be facing up. Continue coiling the remaining strips of dough filling-side in around the middle roll until the pan is filled. This might get messy, but that's part of the fun. Loosely cover the pan with plastic wrap and let rise until doubled in size, about 30 minutes.
  • Position an oven rack in the center of the oven and preheat to 350 degrees F. Bake until the cinnamon roll is puffed and golden brown, about 50 minutes. Let cool on a rack for 10 minutes.
  • For the glaze: Meanwhile, microwave the cream cheese in a microwave-safe bowl until softened, 10 to 15 seconds. Add the confectioners' sugar and milk and whisk until smooth.
  • Remove the outer ring from the springform pan. Pour the glaze on top of the cinnamon roll, then use a spatula to spread it all over. Cut into 8 to 10 wedges.

APPLE-CINNAMON STRUDEL

Apple-Cinnamon Strudel image

Busy times call for easy desserts that have a sweet simplicity, like these flaky apple-cinnamon pastries. For our streamlined strudel, we folded convenient store-bought puff pastry around a four-ingredient filling of sauteed fruit.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Vegetarian Recipes

Time 1h10m

Number Of Ingredients 6

All-purpose flour, for rolling
1 sheet puff pastry (from a 17.3-ounce package), thawed
3 tablespoons unsalted butter
3 pounds Gala or Fuji apples (about 6), peeled, cored, and thinly sliced
1/2 cup plus 2 tablespoons sugar
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 400 degrees; line a baking sheet with parchment paper or foil. On a lightly floured work surface, unfold pastry; roll out to a 12-by-14-inch rectangle. Place on sheet; refrigerate.
  • In a large skillet, melt butter over medium; reserve 1 tablespoon in a small bowl. To skillet, add apples, 1/2 cup sugar, and cinnamon. Increase heat to medium-high; cook, tossing occasionally, until apples are tender and liquid has evaporated, about 15 minutes. Spread filling on a second rimmed baking sheet; let cool completely.
  • With one short side of dough facing you, mound filling horizontally in a strip across the center, leaving a 1-inch border on both long sides. Fold top part, then bottom part of dough over filling. Turn pastry over, seam side down.
  • Brush pastry with reserved melted butter; sprinkle with remaining 2 tablespoons sugar. Using a paring knife, cut steam vents in center of pastry. Bake until golden brown, 35 to 40 minutes. Let rest 10 minutes before serving.

APPLE-RAISIN CINNAMON BUN PIE

Apple-Raisin Cinnamon Bun Pie image

There's more than meets the eye in this tricky pie. At first glance, it looks like a pan full of cinnamon buns, but cut into it and there's apple pie filling underneath! Big and little kids can help with measuring ingredients and even rolling out the dough (though parents should be nearby in case they need help).

Provided by Food Network Kitchen

Categories     dessert

Time 3h35m

Yield 6 to 8 servings

Number Of Ingredients 15

One 14-ounce package refrigerated rolled pie dough
3 tablespoons all-purpose flour, plus more for dusting
6 tablespoons unsalted butter, at room temperature
3/4 cup granulated sugar
1 1/2 teaspoons ground cinnamon
1/3 cup dark raisins
1/3 cup golden raisins
4 pounds mixed apples, such as Granny Smith, Golden Delicious and McIntosh
4 pounds mixed apples, such as Granny Smith, Golden Delicious and McIntosh
Juice of 1 lemon
1/2 teaspoon freshly grated nutmeg
Pinch kosher salt
1 large egg, lightly beaten
2/3 cup confectioners' sugar, optional
2 tablespoons milk, plus more if needed, optional

Steps:

  • Line a 9-inch pie plate with 1 piece of dough, and refrigerate until ready to assemble the pie.
  • Make the cinnamon-roll crust: Lay the remaining piece of dough on a lightly floured surface, and spread 2 tablespoons of the butter evenly on top. Combine 1/4 cup of the granulated sugar and 1 teaspoon of the cinnamon in a small bowl, and sprinkle evenly over the butter; gently press with your fingers to help the mixture adhere. Roll the dough up into a tight log. Trim and discard about 1 1/2 inches from each end, and cut the remaining log crosswise into 1/2-inch-thick pieces. Arrange the pieces, cut-side down, in a snug circle on floured parchment paper. Lightly dust the pieces with flour, then gently roll out into a 10-inch round. Slide the parchment onto a baking sheet, and refrigerate until ready to assemble the pie.
  • Put the dark and golden raisins in a medium bowl with hot water to cover. Let them soak until tender, about 5 minutes, then strain.
  • Make the filling: Peel and core the apples, cut them into 1/2-inch-thick slices and toss with the remaining 1/2 cup sugar and the lemon juice in a large bowl. Melt the remaining 4 tablespoons butter in a large skillet over medium-high heat. Add the apples, and cook, stirring occasionally, until the firmer apples soften but hold their shape, 15 to 18 minutes. (The softer apples, like McIntosh, will get very soft and saucy.) Add the flour, the remaining 1/2 teaspoon cinnamon, and the nutmeg and salt, and stir until the juices thicken, about 2 minutes. Remove the skillet from the heat, stir in the raisins and let the filling cool completely. (The filling can be refrigerated, covered, for up to 2 days.)
  • Fill the dough-lined pie plate with the filling in an even layer. Invert the cinnamon-roll crust on top, and peel off the parchment. (It's OK if the individual rounds separate a bit in the process.) Pinch the crusts together. Fold the overhanging dough under itself, and crimp as desired. Brush with the egg, and refrigerate for 30 minutes.
  • Bake the pie: Place a baking sheet in the oven, and preheat to 400 degrees F. Set the pie on the hot baking sheet, and bake until the crust is golden brown and the filling is bubbling, about 50 minutes. (Tent loosely with foil if the top browns too quickly.) Transfer to a rack to cool slightly.
  • If using a glaze, whisk together the confectioners' sugar and milk in a bowl until smooth. (Add more milk if the glaze is too thick.) Drizzle over the pie.

CINNAMON APPLE FLIP

Cinnamon Apple Flip image

Totally versatile! I've made it with blueberries, apples, orange zest, plain. It's just good stuff. Normally I halve it and make it in a nine-inch cake pan. I actually found the recipe in an ancient southern cookbook called "Charleston Receipts" while I was down in SC. The only real change I make is to sub yogurt for milk as I find it gives it a moister, more coffeecake-like consistency.

Provided by SJay93

Categories     Breads

Time 40m

Yield 16 serving(s)

Number Of Ingredients 14

1 cup white sugar (the original recipe says "heaping" but that's not necessary-unless you're Paula Deen.)
4 tablespoons butter, room temperature
1 1/4 cups low-fat vanilla yogurt (or if you use milk, only one cup)
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 teaspoons baking powder
1 pinch salt
1 1/2 cups all-purpose flour
2 apples, peeled, cored, and sliced thinly
2 teaspoons cinnamon
1/2 cup brown sugar
1 tablespoon cinnamon (or more)
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°F.
  • Cream sugar and butter in medium bowl with spoon (no mixer required) and add yogurt, eggs, milk, and extracts, mixing well. In smaller bowl, mix flour, salt, and baking powder till totally combined, and fold into wet ingredients, until well mixed. [At this point you should sample the batter because it's AMAZING.] Toss the thinly sliced apples with the cinnamon, set aside.
  • Spray a 9 by 13 baking pan (or two 9 inch round cakes pans) with cooking spray. Spoon about half of the batter into the pan, spreading evenly with a spatula. It may seem like a thin layer but it will rise. Top with the apple slices (make sure they're evenly placed) and then pour the remaining batter on top, spreading again with spatula. Sprinkle with brown sugar and cinnamon, drizzle with melted butter, and bake for about 30 minutes.
