50g butter
25g piece ginger , peeled and finely grated
2 tbsp clear honey

Steps:

  • Bring a large pan of salted water to the boil and add the carrots. Simmer for 5 mins until slightly tender, then drain.
  • In a wide pan, heat the butter until melting, then add the carrots, ginger, honey and orange zest. Cook over a medium heat for 25-30 mins, turning them gently every now and then, until the carrots start to go golden and sticky.
  • Turn the carrots gently in the pan every now and again until all sides are browning. Season well before serving.

This braise-and-glaze technique can be varied at will and can also be used with other roots, like beets, turnips and radishes. Once you have the hang of the technique, changing the flavorings is a snap. Try substituting a mixture of half balsamic vinegar, half water or soy sauce similarly diluted for the orange juice, adding a few cloves of peeled garlic with the carrots. 1 head of garlic, halved crosswise, plus 4 cloves, thinly sliced

8 small shallots, peeled

1 Tbsp. honey

  • Preheat oven to 250°F. Season chicken generously with salt inside and out. Place head of garlic inside cavity; tie legs together if desired. Let sit at least 5 minutes or chill, uncovered, up to 2 days.
  • Combine carrots, shallots, ginger, butter, and honey in a large Dutch oven or other heavy pot; season lightly with salt. Place chicken on top, nestling into vegetables so lid will sit tight. Cover; bake until an instant-read thermometer inserted into the thickest part of breast registers 155°F, about 2 hours. Uncover and let rest 30 minutes.
  • Meanwhile, cook oil and sliced garlic in a small saucepan over medium until garlic is lightly browned, 6-8 minutes. Add red pepper flakes and let cool. Stir in lime juice; season dressing with salt.
  • Increase oven temperature to 450°F. Place chicken on a rimmed baking sheet and roast until skin is browned and crisp, 10-14 minutes.
  • Meanwhile, place pot over medium-high heat; bring juices to a simmer. Cook, reducing heat as needed, until vegetables are glazed, 10-12 minutes. Keep warm over low heat until chicken is done.
  • Serve chicken on top of vegetables with dressing drizzled over.

Bring the liquid to a simmer, cover, then cook over a low heat for 10-12 mins, stirring occasionally. 1 kg small mixed-colour carrots, heirloom if you can get them
50 g unsalted butter
1 tablespoon dripping, (optional)
6 cloves garlic
8 sprigs fresh thyme
2 clementines
2 tablespoons runny honey
2 fresh bay leaves

Steps:

  • 1. Trim and wash the carrots, leaving a little of the green tops on so they look pretty.
  • 2. Melt the butter and the dripping, if you've got it, in a large frying pan over a medium heat. Crush the unpeeled garlic cloves with the flat side of your knife, then add to the pan, turning after 1 minute. 3. Sprinkle in the thyme sprigs (they'll crackle a bit), squeeze in the clementine juice and add the honey, bay and a splash of water. 4. Add the carrots, sprinkle with a good pinch of sea salt and black pepper, then jiggle the pan to coat them in all that flavour. 5. Cover, reduce the heat to medium-low and cook for 10 to 15 minutes, or until the carrots are tender. 6. When the time's up, uncover the pan and, being very vigilant, simply reduce the moisture away until you get a beautiful clementine glaze and the carrots start to catch and caramelize in a lovely way, turning often. 7. Once you think they look great, simply serve straight away, or you can remove them from the heat and crack on with your other jobs, reheating them when needed. Delicious.

1 pound fresh carrots (washed and peeled)
2 tbsp olive oil
2 tbsp agave syrup (maple syrup can also be used)
1/4 tsp cinnamon
salt and pepper to taste
1/4 cup fresh, chopped parsley

Steps:

  • 1. Preheat oven to 400 degrees F.
  • 2. Slice carrots diagonally into approximately 1 - 1.5" size pieces. Try to keep pieces similar in baking size, meaning the small end of the carrot would have larger cut pieces while you'd want to cut the larger end of the carrot thinner.
  • Combine olive oil, agave syrup, cinnamon, salt and pepper and stir well to combine. Transfer to a large zipper top bag. Add carrots, close and shake well to coat thoroughly.
  • Bake for approximately 25-35 minutes, or until desired tenderness has been reached. Start checking carrots with a fork at 25 minutes, testing to see how easily the fork pierces the carrots. When carrots are soft and easily pierced, they are done.
  • Remove from oven, transfer to a serving dish, and sprinkle with fresh chopped parsley. Serve immediately.

20 baby carrots (about 1/2 pound), peeled but with 1-inch green top left on
1 tablespoon butter
1 tablespoon honey
One 3-inch-by-1/2-inch-piece ginger, peeled and cut into 1/4-inch-thick matchsticks
1/2 teaspoon thinly sliced red chili pepper

Steps:

  • Bring a pot of water to a boil. Add carrots; cook until just tender, 3 to 4 minutes. Drain carrots; pat dry with paper towels.
  • Melt butter in a large skillet set over medium-low heat. Add the carrots, honey, and ginger, and cook, turning carrots frequently, until carrots and ginger are browned, about 8 minutes. Add the chili pepper, and continue to cook until chile is softened, about 1 minute more. Remove from heat, and serve.

My recipe differs from the others posted due to the soy sauce and OJ. No honey here but there is brown sugar. I found this smudged recipe card in my box and remember it from long ago! I'm glad to post this and now that I am thinking about it, I think my kids will like it.

1 lb carrot, cut into sticks, about 4 cups
2 tablespoons butter, softened
1/4 cup light brown sugar, firmly packed
1/2 teaspoon ground ginger
1 tablespoon soy sauce
1 tablespoon orange juice

Steps:

  • Cook carrots in boiling salted water for 2 minutes; drain and set aside.
  • In a large skillet, cream the butter with the brown sugar and ginger.
  • Cook over medium heat until mixture melts and begins to bubble slightly.
  • Add drained carrots and stir well.
  • Saute 2 minutes, stirring occasionally.
  • Add soy sauce and orange juice and cook 1-2 minutes over high heat until liquid is almost completely reduced and carrots are glazed.

Steps:

  • Bring brown sugar, butter, broth, water, and salt to a boil in a 10-inch heavy skillet, stirring until sugar is dissolved. Add carrots and simmer, covered, until just tender, 4 to 5 minutes.
  • Transfer carrots with a slotted spoon to a bowl and boil liquid until reduced to a glaze (about 1 1/2 tablespoons). Return carrots to skillet and cook over low heat, stirring, until heated through and coated with glaze. Stir in lemon juice and parsley and season with salt and pepper.

6 to 8 carrots, peeled
2 tablespoons orange juice
2 tablespoons honey
1 tablespoon butter
Salt
1 tablespoon finely chopped parsley

Steps:

  • Heat the oven to 350 degrees.
  • Fill an ovenproof skillet that can fit the carrots with 1 to 2 inches of water. Bring to a boil over high heat. Add the carrots and add more water if needed to cover the carrots. Reduce the heat to simmer the carrots until they're tender but not soft, about 15 minutes.
  • Pour the water out of the skillet, keeping the carrots in the skillet by holding them back with a spatula. Add the juice, honey and butter to the skillet and stir to mix (the butter may not melt all the way). Roll the carrots in the mixture, season them with salt and transfer to the oven.
  • Bake, gently rolling the carrots once, until the carrots are glazed, about 15 minutes. Season to taste with salt and sprinkle with parsley.
