4-6 thick-cut boneless pork chops
salt and pepper
1 cup ketchup
⅔ cup brown sugar (packed)
3 tablespoons worcestershire sauce
3 tablespoons apple cider vinegar
2 tablespoons dijon mustard
1 teaspoon mesquite seasoning (see note)
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon cracked black pepper (if using ground pepper, reduce to 1/8 teaspoon)

Steps:

  • In a medium sauce pan over medium heat, combine all ingredients for the bbq sauce. Bring to a boil, reduce to low and simmer for 5 minutes, stirring throughout. Reduce from heat and set aside.
  • Preheat grill to medium and oil the grates.
  • Season pork chops generously with salt and pepper on both sides.
  • Place pork chops on the grill, cook for 2-3 minutes, then turn over and brush bbq sauce all over the tops and sides of the pork chops. Cook another 5-7 minutes, then turn and brush bbq sauce all over the tops and sides again.
  • Cook 5-7 minutes longer until internal temperature reaches 140 degrees F or there is no longer any pink in the center. Allow to rest on a plate or cutting board - covered - for at least 5 minutes before serving - this is KEY to keeping the pork chops nice and juicy.
  • Serve with remaining bbq sauce. Enjoy!

1 cup grated onion
2 cups ketchup
1 cup canned pumpkin puree
3/4 cup chicken broth
1/4 cup packed dark brown sugar
1/4 cup molasses or maple syrup
1/4 cup apple cider vinegar
1 tablespoon chili powder
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon pumpkin pie spice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Four 1-inch-thick bone-in pork chops
Kosher salt and freshly ground black pepper
Vegetable oil, for brushing

Steps:

  • For the pumpkin bbq sauce: Heat the olive oil in a medium saucepan over medium heat. Add the onions and cook until tender and transluscent, 4 to 5 minutes. Add the ketchup, pumpkin puree, broth, sugar, syrup, vinegar, chili powder, Worcestershire, garlic powder, smoked paprika, pumpkin pie spice, salt and pepper and whisk well to combine. Bring to a low simmer. Reduce the heat to low and let cook until thickened, 20 to 30 minutes. If it begins to look too thick, add a few tablespoons of water or broth.
  • For the pork chops: Preheat a grill or grill pan for cooking over medium-high heat. Sprinkle the pork chops generously on both sides with salt and pepper. Brush the chops on each side with vegetable oil and grill, 4 minutes per side. Baste the pork chops on each side with the sauce and grill an additional minute per side to allow the sauce to caramelize. Serve the chops with extra sauce.

Steps:

  • In a bowl, combine your spices (paprika, cayenne pepper, garlic powder, black pepper, and salt).
  • Rub the pork chops in the spices generously.
  • Heat olive oil in an oven-safe skillet over medium/high heat. When the oil is hot, add the pork chops. Cook for about 3-5 minutes on each side or until they have a nice caramelized brownness to them. Once you feel that they are looking browned, add a Tablespoon of brown sugar to each pork chop. 2 tablespoons dark brown sugar, or to taste
1 cup ketchup
1 cup mayonnaise
½ cup prepared yellow mustard
¼ cup Worcestershire sauce
1 teaspoon chili powder
⅛ teaspoon ground cayenne pepper
6 (3/4 inch thick) pork chops

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Place the brown sugar, ketchup, mayonnaise, yellow mustard, Worcestershire sauce, chili powder, and cayenne pepper into a bowl, and stir until blended.
  • Place the pork chops on the preheated grill, and cook the chops until the surface is seared but the meat is just barely pink in the middle, about 5 minutes.   • Preheat a grill pan to medium-high.
  • In a plastic resealable bag, big enough to fit the chops, mix together the sugar, honey, oil, lime juice, and red pepper flakes. Add the pork chops and let marinate for at least 20 minutes.

1 tablespoon chili garlic sauce, such as Sriracha
1 tablespoon toasted sesame oil
1 tablespoon light brown sugar
1 tablespoon rice vinegar

1 clove garlic, grated
1/2 cup hoisin sauce
4 bone-in pork chops (about 3 pounds)
Kosher salt and freshly ground black pepper
1 red onion, cut into 1/2-inch-thick slices
4 to 6 baby bok choy, halved lengthwise (about 1 pound)

Steps:

  • Preheat a grill to medium-high heat. Stir together the soy sauce, chili sauce, sesame oil, brown sugar, vinegar, grated ginger and grated garlic in a small bowl. Reserve 2 tablespoons for the vegetables and then stir in the hoisin sauce. Set half aside for serving with the cooked pork chops and stir in 1 to 2 tablespoons water.
  • Sprinkle the pork chops on both sides with 1/2 teaspoon each salt and pepper for all 4 chops. Place the pork chops and onions on a lightly oiled grill. Grill until the pork chops are just slightly pink near the bone, 6 minutes on the first side and 4 to 5 minutes on the second side. Grill the onions until they are soft. Start brushing both the pork and the onions with the hoisin sauce mixture about halfway through grilling. Transfer the pork chops to a cutting board to rest for about 5 minutes and the onions to a bowl.
  • Put the bok choy in a large bowl and cover with plastic wrap. Microwave until the center core has softened and can easily be pierced with the tip of a sharp knife, 3 to 5 minutes. Season the bok choy with 1/4 teaspoon each salt and pepper and grill until charred, 2 to 3 minutes per side. Add to the bowl with the onions and gently toss with the reserved 2 tablespoons ginger sauce. Serve the pork chops with the grilled vegetables and the reserved hoisin sauce mixture on the side.

2 cups diced onions
1 cup apple cider vinegar
3/4 cup packed dark brown sugar
1 1/2 cups ketchup
1 1/4 cups apple juice
1 cup maple syrup

1/2 cup prunes

1/4 teaspoon cayenne pepper

Steps:

  • Prepare the pork: Mix 2 tablespoons salt, the black pepper, brown sugar and paprika in a bowl, then rub all over the chops. Wrap in plastic wrap and refrigerate 2 to 4 hours.
  • Meanwhile, make the sauce: Melt the butter in a saucepan over medium heat, then add the onions and cook until translucent, about 4 minutes. Stir in the vinegar and brown sugar until dissolved. Add the ketchup, apple juice, syrup, bourbon, prunes, Worcestershire sauce, cayenne, 1 tablespoon salt and 1 1/2 teaspoons black pepper and bring to a boil. Reduce to a simmer and cook until thickened, about 30 minutes. Puree with an immersion blender or in a regular blender.
  • Preheat a grill to medium. Brush the grates with vegetable oil, then place the chops directly over the flame and grill until marked and cooked halfway through, about 15 minutes. Turn the chops and place on a cooler area of the grill (such as the edges); cover and cook until a thermometer inserted into the thickest part registers 140 degrees F to 145 degrees F, 15 to 20 minutes. Uncover and brush the chops on all sides with the prepared sauce, then cover and cook until glazed, about 5 more minutes. Transfer to a cutting board and brush with more sauce. Tent with foil and let rest 10 minutes. Serve with more sauce and Smoky Corn on the Cob.
  • Peel back the husks from the corn and remove the silk. Butter the kernels and sprinkle with salt and smoked paprika. Fold the husks back over the corn and grill over low heat until cooked through, turning occasionally, 12 to 15 minutes.

  • BRINE PORK CHOPS: Combine brine ingredients in a container large enough to let pork chops submerge in brine solution completely. Swirl around to let salt dissolve. Submerge the pork chops. Cover and let them sit in fridge for 30 minutes to 2 hours. Note 1. Remove the pork chops. Discard the brine. Rinse and pat the pork chops dry with a paper towel (very important!).
  • GRILL METHOD: Heat BBQ grill to medium-high (about 450F). Coat pork chops with a bit of olive oil and mustard on both sides. Sprinkle with salt lightly (use more if brining period was short and none if brining period was longer than 2 hours). Sprinkle with pepper and dried rosemary. Grill pork chops for about 2 - 4 minutes depending on the thickness. Turn, then brush with marmalade. Sear the pork chops in a large skillet (preferably cast iron) on medium-high heat for about 2-3 minutes depending on the thickness, on each side until golden brown. Transfer the chops to a foil-lined pan. Smear some mustard on both sides. Coat the top of the chops with marmalade and sprinkle with rosemary. Put them in the oven for about 5-6 minutes until they reach 140F (temp will rise to 145F with resting). Pork should still have a bit of softness when pressed with a finger. Remove from oven and let stand, tented with foil, for 5-10 minutes.
