AMISH APPLE PIE RECIPE
This traditional, double-crusted, Amish apple pie is delicious and very easy to make. Its aroma will make your house smell heavenly.

Steps:
- Preheat oven to 400°.
- Peel, core, and chop apples.
- Mix sugars, cinnamon, salt, cornstarch, and lemon juice. Add to apples and stir to coat.
- Pour the apple mixture into the crust. Dot with thin slices of butter.
- Wet the edge of the crust with cold water, and put your second crust on the top. Lightly press the edges to seal. Using a knife, trim off the extra crust (you can use this to make a tiny personal pie crust). Crimp the edges.
- Cut a few slits into the top crust to allow steam to escape.
- Brush cream or egg yolk on the top crust and sprinkle it with sugar for an extra shine and beautiful browning.
- Bake in the middle of the oven for 10 minutes at 400°. reduce the temperature to 350°, and continue baking for another 50 minutes.

My mother made this one Thanksgiving and I ended up snatching most of it. One of the best tasting pies out there, in my opinion. The crust was taught to me by my Amish grandmother and easy to make.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Combine oil and milk in a liquid measuring cup; stir to combine.
- Combine flour, sugar, and salt in a medium bowl; mix together with a fork. Add oil mixture and mix until well combined. Press a little more than 1/2 of the crust mixture into the bottom and sides of a pie plate, using a spatula if necessary, as mixture will crumble easily.
- Combine cranberries and apples in a large mixing bowl. Add sugar, flour, and lemon juice; mix until fruit is evenly coated. Pour filling into the pie plate and crumble remaining crust mixture over the top.
- Bake in the preheated oven until filling is bubbly and crumb topping is golden brown, 40 to 50 minutes.

- Place apples in pastry shell. Combine the sugar, flour and cream until smooth; pour over apples. Sprinkle with cinnamon. , Bake at 400° for 10 minutes. Reduce heat to 375°; bake 35-40 minutes longer or until center is almost set. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Cool on a wire rack. Serve warm or cold.

- Beat sour cream and egg together.
- Add flour, sugar, salt and vanilla.
- Mix until smooth.
- Stir in apples.
- Bake at 400 degrees for 25 minutes.
- Mix the crumb topping ingredients until crumbly.
- Remove pie from oven and spread with crumb topping.
- Bake 20 more minutes.

- In a large saucepan, combine the cranberries, sugar, tapioca, water and orange zest; let stand for 15 minutes. Bring to a boil, stirring occasionally. Remove from heat and stir in apples. Set saucepan in a pan of cold water for 10 minutes, stirring occasionally. , Meanwhile, line a 9-in. pie plate with bottom pastry. Pour filling into crust. Top with remaining pastry or a lattice crust. If using a full top crust, cut a few slits in it. , Beat egg white and water until foamy; brush over top pastry. Sprinkle with sugar. - Add lard, butter, or shortening, whichever you decide to use; and blend in with your hands or pastry blender until crumbly. It doesn't matter if there's still little pebbles, you just don't want them any larger than pea size.
- Gradually add ice cold water, and form into ball. If it looks like it will be too dry, just add a bit more water. You want it wet enough that it will stick together. But do not over mix.
- Divide into 3 balls. Dust your counter top with flour and place your ball of dough onto flour. You can spread a bit with your hands, then dust the top with flour as well. Using rolling pin, roll into a round disc, just a couple inches larger than your pie plate. You'll want to start in the center and roll outward, just applying a little pressure as you roll. And rotate around in a circle to get it nice and round.
