Yield Makes 4 servings

Number Of Ingredients 14

2 tablespoons unsalted butter
2 large Golden Delicious apples (about 1 pound), peeled and sliced
1/4 cup packed light brown sugar
1 tablespoon fresh lemon juice
1 1/4 teaspoons ground cinnamon
1/2 teaspoon table salt
1 1/2 teaspoons vanilla extract
3/4 cup unbleached all purpose flour
1/4 cup granulated sugar
1 1/2 tablespoons ground ginger
1/2 teaspoon baking powder
1 large egg
3 tablespoons molasses
3 tablespoons vegetable oil, plus more for cooking the pancakes

Steps:

  • 1. Preheat the oven to 200°F. Melt the butter in a large skillet over medium heat. Add the apples and cook, stirring occasionally, until tender, about 10 minutes. Stir in the brown sugar, 2 tablespoons water, the lemon juice, 1/4 teaspoon cinnamon, and 1/4 teaspoon salt. Cook until the mixture bubbles. Remove from the heat and stir in the vanilla; transfer to a serving dish and set aside.
  • 2. Meanwhile, in a small bowl stir together the flour, granulated sugar, ginger, remaining 1 teaspoon cinnamon, the baking powder, and remaining 1/4 teaspoon salt in a small bowl. Combine 1/4 cup water, the egg, molasses, and 3 tablespoons oil in a glass measuring cup; add to the flour mixture and stir with a fork until the mixture is just combined but not smooth. Add additional water if necessary to reach the consistency of pancake batter.
  • 3. Brush a nonstick skillet with a little oil; heat over medium-low heat. Add the gingerbread mixture to the skillet a generous tablespoonful at a time and spread to make a 2 1/2-inch round; cook until lightly browned, about 3 minutes. Turn and brown on the other side, 3 to 4 minutes. Repeat until all the batter has been used. Keep the pancakes warm in the oven until all have been cooked.
  • 4. To serve, divide the pancakes among dessert plates and top each serving with some of the apples.

GINGERBREAD PANCAKES

Gingerbread Pancakes image

Soft, fluffy Gingerbread Pancakes with Maple Cream Cheese Topping. Tastes just like a gingerbread cookie! Easy recipe that's perfect for holiday mornings.

Provided by Erin Clarke / Well Plated

Categories     Breakfast

Time 30m

Number Of Ingredients 18

2 large eggs
3 tablespoons dark brown sugar (or light brown)
1 cup low fat buttermilk
1/4 cup brewed coffee (cooled to room temperature)
1 2/3 cup white whole wheat flour ( or whole wheat pastry flour)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
2 tablespoons unsalted butter (melted and cooled)
6 ounces reduced-fat cream cheese (softened to room temperature)
3 tablespoons nonfat plain Greek yogurt (or vanilla Greek yogurt)
3 tablespoons maple syrup (plus additional to taste)
1/2 teaspoon pure vanilla extract
2-4 tablespoons skim milk

Steps:

  • In a large bowl, whisk together the eggs and brown sugar until well combined. Stir in the buttermilk and coffee.
  • In a separate large bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Make a well in the center of the dry ingredients. Add the liquid ingredients to the dry ingredients and stir gently, just until combined. You will have some lumps remaining. Stir in the melted butter.
  • If you'd like to keep different batches of pancakes warm, preheat the oven to 200 degrees F. Heat a griddle or sturdy skillet over medium-low heat. Coat the skillet with butter or cooking spray to prevent sticking, then ladle 1/2 cup batter (for large pancakes) or 1/4 cup batter (for smaller pancakes) into the pan and begin cooking. Because these pancakes are whole wheat, they cook more slowly. Flip when the edges of the pancake are no longer shiny and some bubbling forms on top, about 4-5 minutes for large pancakes or 2-3 for smaller ones. Continue cooking on the other side for 1 to 2 minutes more. Serve the cooked pancakes immediately or keep warm in the oven. Repeat with remaining pancakes.
  • For the maple cream cheese topping: In a mixing bowl, beat together the cream cheese and Greek yogurt on medium speed until well combined, about 2 minutes. Add the Greek yogurt, maple syrup, and vanilla and mix again. Add 2 tablespoons milk to thin the batter. Taste and add additional maple syrup if you desire a sweeter topping. If you desire a thinner consistency, continue adding milk 1 tablespoon at a time, until the topping is as thick as you like. Serve with warm pancakes.

GINGERBREAD PANCAKES WITH ICING

Gingerbread Pancakes with Icing image

Provided by Katie Lee Biegel

Categories     main-dish

Time 55m

Yield 18 to 20 pancakes

Number Of Ingredients 18

2 cups all-purpose flour
1 tablespoon ground cinnamon
1 1/2 teaspoons baking powder
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1/4 teaspoon grated nutmeg
1/8 teaspoon ground cloves
2 cups milk
4 tablespoons (1/4 cup) unsalted butter, melted, plus more for the griddle
1/4 cup molasses
2 tablespoons dark brown sugar
1 tablespoon orange zest
1 large egg
1 cup confectioners' sugar
2 tablespoons milk
Red and green sprinkles, for garnish, optional
Whipped cream, for serving, optional

Steps:

  • For the pancakes: In a medium mixing bowl, whisk together the flour, cinnamon, baking powder, ginger, baking soda, salt, nutmeg and cloves. In another medium bowl, whisk together the milk, melted butter, molasses, brown sugar, orange zest and egg. Slowly add the milk mixture to the flour mixture and stir until just combined. It is ok if the batter is a little lumpy. Do not overmix or you will have tough pancakes. (Let the batter sit for at least 5 minutes and up to 30 minutes for fluffier pancakes.)
  • For the icing: In a small bowl, combine the confectioners' sugar and milk. Set aside.
  • Grease a griddle or nonstick skillet with butter and heat to medium high. Pour 1/4 to 1/3 cup batter per pancake onto the griddle. When small bubbles begin to form on the tops of the pancakes, after 2 to 3 minutes, flip the pancakes and cook on the other side for 2 to 3 minutes. Serve the pancakes immediately with the icing and garnish with sprinkles and whipped cream if desired.
