Time 1h40m

Yield 6 servings

Number Of Ingredients 11

4 pounds assorted apples, such as McIntosh, Honeycrisp, Braeburn and/or Golden Delicious
1/4 cup bourbon
2 tablespoons fresh lemon juice
4 tablespoons unsalted butter
2/3 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
One 14.1-ounce package refrigerated pie dough
All-purpose flour, for rolling
1 large egg, lightly beaten
1 tablespoon coarse sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • Make the filling: Peel the apples and slice about 1/4 inch thick. Toss with the bourbon and lemon juice in a medium bowl.
  • Melt 2 tablespoons of the butter in a large skillet over medium-high heat. Add half of the apples and sprinkle with half of the granulated sugar. Cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Reduce the heat to medium and cook until the apples soften, about 7 minutes. Transfer to a bowl. Add the remaining 2 tablespoons butter to the skillet and repeat with the remaining apples and sugar. Add to the bowl and toss with the cinnamon and ginger. Let cool completely.
  • Roll one of the dough rounds on a lightly floured surface into a 12-inch disk (reserve the other dough round for another use). Transfer the dough to a baking sheet. Starting 2 inches from the edge, spoon the apple filling in a circle in the center of the dough. Fold and pleat the dough over the edge of the filling. Brush the crust with the beaten egg and sprinkle with the coarse sugar.
  • Bake until the crust is brown and the apples are tender and caramelized, about 55 minutes. Cool the galette briefly on a wire rack. Cut into wedges and serve.

Time 4h

Yield 8 servings

Number Of Ingredients 17

3 cups all-purpose flour, plus more for dusting
2 tablespoons granulated sugar
1/8 teaspoon baking powder
Pinch of salt
1/4 cup cold vegetable shortening
2 sticks cold unsalted butter, cut into small pieces
1 tablespoon bourbon
8 to 10 tablespoons ice water
1 large egg, lightly beaten
Coarse sugar, for sprinkling
4 pounds assorted apples (such as McIntosh, Honeycrisp, Braeburn, Granny Smith and/or Golden Delicious)
2 tablespoons fresh lemon juice
1/4 cup plus 1 tablespoon bourbon
5 tablespoons unsalted butter
2/3 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger

Steps:

  • Make the crust: Pulse the flour, granulated sugar, baking powder and salt in a food processor to combine. Add the shortening and pulse until the mixture looks like coarse meal. Add the butter and pulse until it is in pea-size pieces. Add the bourbon and pulse until just incorporated. Pulse in the ice water, 1 tablespoon at a time, until the dough holds together when pinched. Turn out the dough onto a large piece of plastic wrap and gather together, using the plastic wrap to help you. Divide into 2 pieces and gently pat each into a disk; wrap tightly in plastic wrap and refrigerate until firm, at least 1 hour and up to 24 hours.
  • Make the filling: Peel the apples and slice about ¼ inch thick. Toss with the lemon juice and ¼ cup bourbon. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add 2 more tablespoons butter to the skillet and repeat with the remaining apples and sugar. Add to the bowl and toss with the cinnamon and ginger. Let cool completely.
  • Roll out 1 disk of dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Roll out the remaining disk of dough into a 12-inch round on a lightly floured surface. Transfer to a baking sheet, cover with plastic wrap and refrigerate until ready to use.
  • Spoon the apple filling into the prepared pie crust. Drizzle with the remaining 1 tablespoon bourbon and dot with the remaining 1 tablespoon butter. Lay the dough round over the filling. Pinch the overhanging dough together and fold under itself; crimp the edge with your fingers. Cut a few slits in the top crust to allow steam to escape. Brush the crust with the beaten egg and sprinkle with coarse sugar. Refrigerate 1 hour.
  • Put a baking sheet on the lowest oven rack; preheat to 400 degrees F. Bake the pie on the hot baking sheet until the crust is golden, 60 to 70 minutes. Transfer to a rack and let cool at least 2 hours.

APPLE-BACON GALETTE

Apple-Bacon Galette image

Provided by Food Network Kitchen

Categories     dessert

Time 2h40m

Yield 8 servings

Number Of Ingredients 10

6 slices bacon
1 1/2 cups plus 1 tablespoon all-purpose flour, plus more for dusting
1/2 cup sugar
5 tablespoons cold unsalted butter, cut into pieces
4 assorted apples (such as McIntosh and Granny Smith)
4 assorted apples (such as McIntosh and Granny Smith)
1 tablespoon fresh lemon juice
1/4 teaspoon ground cinnamon
1 large egg, beaten
Maple syrup, for brushing

Steps:

  • Make the crust: Cook the bacon in a large skillet over medium heat, turning occasionally, until golden but still soft, about 6 minutes; remove to paper towels. Reserve 1 tablespoon of the drippings in a small bowl; refrigerate until cold, about 15 minutes.
  • Pulse 2 slices of the bacon in a food processor until finely ground. Add 1 1/2 cups flour and 2 tablespoons sugar and pulse to combine. Add the chilled bacon drippings and pulse to combine. Add the butter and pulse until the mixture looks like coarse meal with some pea-size pieces. Drizzle in 4 tablespoons cold water and pulse until the dough just comes together. Turn out onto a piece of plastic wrap; use the plastic to help form the dough into a disk. Wrap and chill until firm, at least 1 hour.
  • Line a baking sheet with parchment paper. Roll out the dough into a 13-inch round between 2 sheets of lightly floured parchment. Peel off the top sheet of parchment, then invert the dough onto the prepared baking sheet. Peel off the sheet of parchment. Refrigerate the dough until ready to use.
  • Preheat the oven to 375 degrees F. Make the filling: Peel the apples and slice 1/4 inch thick. Toss with the lemon juice, cinnamon, 3 tablespoons sugar and the remaining 1 tablespoon flour in a large bowl. Arrange the apples in the center of the dough, leaving a 2-inch border. Fold the edge of the dough over the filling, pleating as needed. Cut the remaining 4 slices bacon into bite-size pieces and sprinkle over the filling.
  • Brush the crust with the egg and sprinkle the remaining 3 tablespoons sugar over the whole galette. Bake until the apples are tender and the crust is golden brown, about 50 minutes. (Tent loosely with foil if the filling gets too brown.) Remove from the oven and brush the filling with maple syrup while still hot. Transfer to a rack to cool slightly before serving.

  • In a bowl, mix flour and salt then add butter pieces. Coat the butter with the flour, using your hands to really break the pieces of butter into the flour. Slowly add the ice water and mix just until the dough comes together. Wrap the dough in plastic wrap and chill for 30 minutes.
  • In a saucepan, cook sugar and water over medium-high heat until the sugar becomes an amber color. Keep an eye on this - sugar can turn from amber to burnt in seconds. Remove from heat and immediately whisk in heavy cream and bourbon. Transfer to a small mason jar and let cool. Set aside.
  • In a bowl, add the apple slices, lemon juice, brown sugar, cinnamon and salt. Gently toss together and set it aside.
  • Preheat the oven to 400° F. Line a baking sheet with parchment paper. On a lightly floured surface, roll out the dough into a circle 1/4 inch thick. Transfer the dough to the prepared baking sheet.

  • To make the dough, mix together flour, sugar and salt. Using your hands, mix in half of the butter, squeezing the cubes between your fingers, until the mixture resembles a coarse meal. Add in the remaining butter, squeezing the cubes between your fingers once again, until the largest pieces of butter are approximately the size of a pea. Drizzle water over the dough and bring together, kneading 3 to 4 times. Note: you may not need to use all the water depending on where you live so use a little at a time until it comes together.

  • Make the dough: Mix the flour, sugar and salt in a medium bowl. Add the butter and cut it in with two forks or a pastry cutter until ½ cm crumbs appear. You can also use the food processor, just pulse a few times. Add the water and stir until the crust comes together. If the dough is too dry, add 1 tbsp water. Gently knead the dough a couple of times on a lightly floured surface. Shape the crust into a disc, cover it with plastic wrap and place it in the refrigerator for at least 1 hour and up to 3 days.
  • Make the filling as the dough chills: Mix the brown sugar, flour, lemon juice, cinnamon, nutmeg and apple slices in a large bowl. Cover tightly with plastic wrap and let sit in the refrigerator until the crust is ready.
  • Make the bourbon caramel sauce: Bring the heavy cream and unsalted butter to room temperature. Gently stir the sugar and water in a small saucepan. Place over a medium-high heat and don't stir or touch the pan until the sugar has caramelised. The color of the mixture will change gradually. It will start transparent, then a golden color and lastly a dark amber. When it starts changing colors, it will darken quickly. It will take about 10 minutes. Turn off the heat and remove the saucepan from the heat. Right away, slowly and carefully pour heavy cream into the sugar mixture, whisking vigorously to incorporate the cream. The mixture will bubble up. Lastly, mix in the butter until combined. Add vanilla extract, salt and bourbon and whisk until combined.
