Creamy Hot Turkey Sandwiches are pure delicious comfort food. Our Open Faced Turkey Sandwich quickly transforms leftover turkey into a meal everyone will love.

1/2 cup butter
1/4 cup flour
1½ cup turkey broth (Chicken stock can be substituted)
1/2 tsp salt
1/4 tsp ground pepper
1/2 cup cream
3½ cups turkey (shredded, diced or chopped)

Steps:

  • In a large saucepan, melt the butter and whisk in the flour. Continue whisking until smooth.
  • Whisk in the broth into the flour mixture. When blended whisk in the cream. Season with salt and pepper. Stir to combine. Add the turkey.
  • Serve over bread, potatoes, or dressing.

This uses left-over chopped turkey. We grew up calling these "turkey burgers"- but that was before ground turkey, so I'm calling them "turkey sandwiches" to avoid any confusion. WE LOVE THESE. They were a favorite with my family when I was growing up, and now they are a favorite with my hubby and kids. Something nice and different. The melted cheese and mayo together are just heavenly. I like my cheese cut up in fairly large cubes, not diced. Adjust the onion to your taste. We look forward to thanksgiving left-overs just for this! FOR OAMC: leave out the mayo and freeze remaining ingredients (expect buttered buns) in an airtight bag with all of the air removed. Let thaw in fridge before adding mayo.

1 sweet pickle, diced
2 cups cooked turkey, cubed
1/4 cup chopped onion
1/3-1/2 cup mayonnaise
salt and pepper, to taste
10 hamburger buns
butter

Steps:

  • Mix together 1st 6 ingredients.
  • Butter bun halves, and spread mixture over buns.
  • Wrap each burger in foil, and bake at 350F for 20-30 minutes.

1 1/2 lb leftover turkey meat, sliced
1/2 cup or so of leftover turkey gravy
Stock or water (to thin the gravy if needed)
4 large slices of rustic bread

Steps:

  • Heat gravy in a skillet until bubbly: If the gravy is too thick, thin with a little stock or water.
  • Add pieces of sliced cooked turkey meat to the gravy: Coat with the gravy on all sides and heat until the meat is heated through.
  • Arrange a slice of bread on a plate: Rustic French or Italian loaf would work great. Top with sliced turkey and gravy.

8 kaiser rolls or 8 hamburger buns

This is the best (and most delicious!)way to use up those holiday leftovers. What can be better than a cold turkey sandwich with cracked pepper & mayo??...how about a hot turkey sandwich with all the flavors melded together!!

8 slices crusty French bread or 8 slices wheat grain bread
2 tablespoons butter
left over sliced cooked turkey
left over prepared stuffing
cranberry sauce
gravy (optional)

Steps:

  • Preheat a buttered griddle or pan to medium heat.
  • Form thin "patties" out of the left over stuffing.
  • Once the butter is melted, heat and grill the stuffing patties and the turkey slices throughly.
  • Toast slices of bread either in a toaster or directly on the griddle. Spread both slices with a generous amount of cranberry sauce.
  • Layer on the grilled stuffing and turkey. You may also want to add some brown gravy.
  • ENJOY!

2 slices bread (thick sliced and toasted as you like it)
4 slices turkey breast (pieces sliced thin)
1 1/2 cups prepared stuffing
1 1/2 cups turkey gravy (hot)
3 tablespoons jellied cranberry sauce (or whole berry)

Steps:

  • toast the bread as you prefer it.
  • warm all the ingredients except the cranberry sauce.
  • assemble the open faced sandwich by placing the toast side by side on a plate.
  • layer the sandwich in this order: turkey, stuffing and gravy.
  • place the cranberry sauce on the side, some of my family like it on top.
  • enjoy.
